2 large pomegranates
4 teaspoons orange flower water
2 tablespoons granulated sugar

Steps:

  • How to Remove Seeds from a Pomegranate:.
  • Fill a large bowl with water. Hold the pomegranate in the water and slice the crown off. Lightly score the fruit into quarters, from crown to stem end. Keeping the fruit under water carefully break it apart. Then gently separate the arils (seeds) from the outer skin and white pith.
  • The seeds will drop to the bottom of the bowl and the pith will float to the surface. Discard the pith then pour the seeds into a colander. Rinse and pat dry. The seeds can be frozen in an airtight container or sealable bag for up to 3 months.
  • Divide the seeds among four glass serving bowls. Sprinkle the fruit in each bowl with 1 tsp of orange flower water & 1 1/2 tsp of sugar. Let stand for 1 hour before serving.

8 large navel oranges (preferably Cara Cara), all peel and white pith cut away, oranges sliced into thin rounds
1/4 cup floral honey (such as tupelo or orange blossom)
3 tablespoons pomegranate molasses*
1/2 teaspoon ground cinnamon
1/4 teaspoon fine sea salt
8 large Medjool dates, pitted, chopped

Steps:

  • Arrange orange slices, overlapping slightly, on large rimmed platter. Whisk honey, pomegranate molasses, ground cinnamon, and sea salt in small bowl to blend; drizzle evenly over oranges. 1 quart pure pomegranate juice
1/2 pound demerara or other good raw sugar
1 tablespoon rose water (see Note)
1 tablespoon orange-flower water (see Note)

Steps:

  • Pour roughly half of the pomegranate juice into a saucepan. Heat over medium, taking care to remove from the flame before it boils. Stir in the sugar until dissolved, then add the other half-quart of juice, the rose water and orange flower water. Mix well and decant into a clean bottle to refrigerate. Adding 2 ounces or so of high-proof vodka or Everclear will allow it to keep longer.

16 blood oranges
3/4 cup pomegranate molasses
1/2 cup honey
1 tablespoon orange-blossom water
16 dates, pitted and chopped
Seeds from 1 pomegranate
1/2 cup unsalted pistachio nuts, chopped
1/4 cup chopped mint

Steps:

  • Cut the skin and pith from each orange; then slice each into thirds. Remove and discard the seeds. In a small bowl, whisk together the pomegranate molasses, honey and orange-blossom water.
  • Lay orange slices on a large white platter. Sprinkle with dates, pomegranate seeds and pistachios. Pour the molasses mixture over top, sprinkle with mint and serve.
