Feta 'n' Chive Muffins image

This is a "spring" variation on the savory muffins my husband has made for years. It has a light texture almost like a popover and tastes best eaten hot right from the oven. -Angela Buchanan, Boulder, Colorado

Yield 1 dozen.

Number Of Ingredients 8

1-1/2 cups all-purpose flour
3 teaspoons baking powder
1/4 teaspoon salt
2 large eggs, room temperature
1 cup fat-free milk
2 tablespoons butter, melted
1/2 cup crumbled feta cheese
3 tablespoons minced chives

Steps:

  • In a large bowl, combine the flour, baking powder and salt. In another bowl, combine the eggs, milk and butter; stir into dry ingredients just until moistened. Fold in the feta cheese and chives. , Fill 12 greased or paper-lined muffin cups two-thirds full. Bake at 400° for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Refrigerate leftovers.

Delicious bursts of pomegranate seeds hidden in a muffin, enhanced with Grand Marnier and orange zest.

Number Of Ingredients 10

2 cups flour
1 tablespoon baking powder
1 teaspoon salt
1/2 cup soy margarine (melted)
1/3 cup sugar
3 teaspoons vegan egg replacer powder
1 tablespoon water
5 tablespoons Grand Marnier
2 pomegranates (just the seeds!)
2 tablespoons orange zest (or zest of one orange)

Steps:

  • Mix wet and dry ingredients separately.
  • De-seed pomegranates in a bowl of water to help prevent seeds from popping.
  • Combine ingredients, folding in the pomegranate seeds last. Mix as lightly as possible.
  • Bake at 400°F for about 20 minutes, depending on size of muffins and your oven.
  • Remove and place on cold, wet towel to make taking the muffins out easier. Wait until the muffins have cooled before removing them from the tin.

Pomegranate-Orange Muffins image

Number Of Ingredients 11

3 cups all-purpose flour
1 1/2 cups granulated sugar
1 1/2 teaspoons baking soda
1 teaspoon aluminum-free baking powder (see Cook's Note)
1/2 teaspoon salt
3 clementines
1 cup whole milk, at room temperature
2 large eggs
2 sticks unsalted butter, melted and cooled slightly
1/2 cup pomegranate seeds
1/2 cup confectioners' sugar

Steps:

  • Preheat the oven to 400 degrees F. Line 18 muffin cups with paper liners. Whisk the flour, granulated sugar, baking soda, baking powder and salt in a large bowl; make a well in the center.
  • Wash 2 clementines and cut into 8 pieces each (peel and all); transfer to a blender. Add the milk; blend until smooth. Add the eggs and blend until combined. Pour into the well in the flour mixture, add the melted butter and stir until just combined. The batter will be lumpy.
  • Divide the batter among the muffin cups, filling them three-quarters of the way. Top evenly with the pomegranate seeds. Bake until the muffins are golden and a toothpick inserted into the center comes out clean, about 20 minutes. Let the muffins cool 5 minutes in the pans, then remove to a rack to cool completely.
  • Put the confectioners' sugar in a small bowl and squeeze in the juice from half of the remaining clementine. Stir to make a thick glaze, adding the juice from the remaining clementine half as needed. Drizzle the glaze over the muffins and let set 10 minutes.

Number Of Ingredients 13

1 package (8 ounces) cream cheese, softened
1 large egg
1 tablespoon sugar
MUFFIN:
2-1/4 cups all-purpose flour
3 teaspoons pumpkin pie spice
1 teaspoon baking soda
1/2 teaspoon salt
2 large eggs, room temperature, lightly beaten
2 cups sugar
1 cup canned pumpkin
1/2 cup canola oil
24 pecan halves, optional

Steps:

  • For the filling, in a small bowl, beat the cream cheese, egg and sugar until smooth; set aside. In a large bowl, combine the flour, pumpkin pie spice, baking soda and salt. Beat the eggs, sugar, pumpkin and oil; stir into dry ingredients just until moistened., Divide half of the batter among 24 greased or paper-lined muffin cups. Drop filling by teaspoonfuls over batter. Top with remaining batter. Place a pecan on each muffin if desired., Bake at 350° for 20-22 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.
