Number Of Ingredients 21

Crust:
1 3/4 cups graham cracker crumbs (about 12 whole graham crackers)
1 1/4 cups walnuts (about 5 ounces)
6 tablespoons sugar
1/2 teaspoon salt
1/4 teaspoon ground cloves
1/2 cup (1 stick) unsalted butter, melted
Filling:
5 (8-ounce) packages cream cheese, room temperature
1 2/3 cups sugar
3 tablespoons all purpose flour
2 tablespoons grated orange peel
2 teaspoons orange-flower water*
5 large eggs
2 large egg yolks
Sauce:
4 cups pomegranate juice
2 (12-ounce) bags frozen unsweetened raspberries (unthawed)
1/4 cup sugar
1/2 cup honey
*A flavoring extract; available at some supermarkets, liquor stores, and Middle Eastern markets.

Steps:

  • For crust:
  • Wrap foil around outside of 9-inch-diameter springform pan with 3-inch-high sides. Butter pan. Blend first 5 ingredients in processor until nuts are ground. Using on/off turns, blend in butter until crumbs are moist. Press onto bottom and 2 inches up sides of pan.
  • For filling:
  • Preheat oven to 500°F. Using electric mixer, blend first 5 ingredients in large bowl. Blend in eggs and yolks 1 at a time. Pour into crust.
  • Bake cheesecake until slightly puffed and beginning to brown in spots, about 12 minutes. Reduce oven temperature to 200°F and continue baking until gently set in center (edges may crack), about 1 hour. Transfer to rack and cool 5 minutes. Run knife around pan sides to loosen. Cool completely. Cover and refrigerate overnight. Do ahead: Can be made 2 days ahead; keep refrigerated.
  • For sauce:
  • Bring juice to boil in heavy large saucepan. Reduce heat; simmer until reduced to 1 cup, about 35 minutes. Mix in raspberries and sugar. Simmer until reduced to 3 cups, stirring frequently, about 20 minutes. Mix in honey; bring to simmer. Cool slightly. Cover; chill until cold. Do ahead Can be made 1 day ahead; keep refrigerated.
  • Release pan sides. Cut cheesecake into wedges and transfer to plates. Spoon sauce over cheesecake; serve.

5 tablespoons unsalted butter, melted and cooled, plus more for buttering the pan
12 graham crackers
1/4 cup granulated sugar
1/4 teaspoon salt
Four 8-ounce packages cream cheese, at room temperature
1 1/4 cups granulated sugar
1/2 teaspoon vanilla extract
4 large eggs
1/2 cup sour cream
2 cups pomegranate juice
1/4 cup granulated sugar
1/2 cup fresh pomegranate seeds

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Wrap 3 layers of foil around the outside of a 9-inch-diameter springform pan with 3-inch-high sides. Butter the pan.
  • Combine the graham crackers, sugar and salt in a food processor and pulse until crumbly. Add the butter and pulse until moistened. Press the crumb mixture evenly onto the bottom and 1 1/2 inches up the sides of the prepared pan. Bake just until golden brown, about 15 minutes. Let cool completely.
  • Reduce the oven temperature to 325 degrees F.
  • For the filling: In an electric mixer fitted with the paddle attachment, beat the cream cheese on medium speed until fluffy. Add the sugar and vanilla and beat until combined. Add the eggs 1 at a time, mixing well after each addition. Add the sour cream and mix until smooth, about 35 seconds. Pour the filling into the cooled crust.
  • Set the cheesecake in a large baking pan. Add enough hot water to the baking pan to come 1 inch up the sides of the cheesecake pan. Bake until almost set (the center will move slightly when the pan is gently shaken) but not puffed, about 1 hour. Let cool at room temperature for 2 hours. Cover loosely with plastic wrap and refrigerate until completely cooled, preferably overnight or for at least 6 hours.
  • For the pomegranate sauce: Combine the pomegranate juice and sugar in a saucepan and cook over high heat until reduced to 1/2 cup, about 15 minutes. Let cool. Add the pomegranate seeds and mix to combine.
  • Pour the pomegranate sauce on top of the cooled cheesecake and serve.

Steps:

  • Heat oven to 325°F.
  • Combine cookie crumbs, butter and 2 Tbsp. sugar; press onto bottoms of 24 paper-lined muffin pan cups.
  • Beat cream cheese, vanilla and 1 cup of the remaining sugar in large bowl with mixer until blended. Add eggs, 1 at a time, mixing on low speed after each just until blended. Spoon over crust.
  • Bake 20 to 22 min. or until centers are almost set. Cool completely. Refrigerate 2 hours.
  • Meanwhile, bring pomegranate juice and remaining sugar to boil in saucepan; simmer on medium-low heat 14 to 16 min. or until thickened, stirring frequently. Cool completely, then refrigerate until ready to use.

Almond milk can be made by blending 1 cup of almonds with 3 cups of water, and straining through a nut milk bag or sieve.

  • Prep: 50 minutes.
  • Bake: 1 hour, 25 minutes.
  • Cool: 2 hours.

  • Prepare Pomegranate Sauce.
  • Preheat oven to 350°F In a mixing bowl beat butter on medium to high speed for 30 seconds. Add brown sugar. Beat until combined. Add 1 egg; beat well. Beat in 1 1/4 cups flour until combined. Divide dough in half. Cover and refrigerate one portion.

  • Pour filling into crust-lined pan. Place on baking sheet. Bake for 65 minutes or until edges are puffed and center jiggles slightly when gently shaken. Remove from oven.
  • Stir together remaining sour cream, sugar, and vanilla. Spread sour cream mixture over top of baked cheesecake. Return to oven; bake for 10 minutes more. Remove from oven. 250g digestive biscuit
100g butter , melted
600g full-fat cream cheese
zest 3 oranges - cut out the segments for the decoration
3 tbsp milk
100g icing sugar
150ml double cream
seeds 1 pomegranate , or 110g tub pomegranate seeds

Steps:

  • Crush the biscuits roughly - either put them in a plastic food bag and crush with a rolling pin, or whizz them in a food processor to chunky crumbs. Transfer to a bowl, mix in the melted butter and tip into a 23cm springform tin. Using your fingers or the back of a spoon, press the biscuit mixture evenly to form the base. Chill until set, about 30 mins.
  • Put the soft cheese, zest, milk and icing sugar into a bowl and blend using an electric mixer until smooth. Add the cream and whisk until the mixture is the consistency of thick custard. Pour the filling over the biscuit base and spread evenly. Return to the fridge and chill until set, at least 4 hrs or overnight.
  • To serve, top with the orange segments and scatter over the pomegranate seeds.

FOR THE CRUST
1 stick unsalted butter
1 3/4 c gingersnap cookie crumbs
3 Tbsp brown sugar
FOR THE CAKE
20 oz cream cheese, softened
1/2 c heavy cream
3/4 c sugar
2 tsp vanilla
5 eggs
3 Tbsp dark rum
2 Tbsp cognac
1 tsp nutmeg
1 tsp cinnamon
FOR GLAZE
1/2 c sugar
1 Tbsp cornstarch
3/4 c pomegranate seeds
1/2 c pom wonderful or any other brand

Steps:

  • 1. Preheat the oven to 400. Prepare a 9-inch spring-form pan. For the Crust: Prepare the crust by melting the butter and combining it with the gingersnap crumbs and brown sugar in a large bowl. Make sure all of the ingredients are moistened evenly. Press them into the bottom of pan and bake for 10 minutes or until the crust is nicely toasted. Set aside to cool.
  • 2. For the Cake Batter: In a mixer, cream the cream cheese until it is softened and smooth. Then add the heavy cream and sugar, mix until everything is fully combined. Then, add the eggs one at a time until they are all incorporated and the mixture is glossy. Last, add the vanilla, dark rum, cognac, nutmeg and cinnamon. Mix to combine.
  • 3. Pour the cheesecake batter on top of the cooled gingersnap crust. Then, wrap the pan very tightly with aluminum foil so that it can be placed in a hot water bath. (You are not going for looks here - wrap the aluminum foil as tightly as possible - you don't want the batter ruined by water seeping in!!) Then, fill a deep baking or roasting pan with water until it is at least halfway up the side of the springform pan. Bake cheesecake for 60-70 minutes. Or, until it is set and the top is light brown.   • 4. For the Glaze: Add sugar, cornstarch, pomegranate seeds and pomegranate juice to a small saucepan. Simmer until the liquid is reduced by half and starts to get syrupy. Allow to cool to room temperature before drizzling over cool cheesecake to serve.

1-1/2 cups finely crushed chocolate wafer cookies
3 Tbsp. butter, melted
1-1/4 cups plus 2 Tbsp. sugar, divided
4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 Tbsp. vanilla
4 eggs
3/4 cup pomegranate juice
1/3 cup pomegranate seeds, patted dry

Steps:

  • Heat oven to 325°F.
  • Combine cookie crumbs, butter and 2 Tbsp. sugar; press onto bottom of 9-inch springform pan. Bake 10 min.
  • Beat cream cheese, vanilla and 1 cup of the remaining sugar in large bowl with mixer until blended. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.
  • Bake 55 min. to 1 hour or until center is almost set. Run knife around rim of pan to loosen cake; cool before removing rim. Refrigerate cheesecake 4 hours.
  • Meanwhile, bring pomegranate juice and remaining sugar to boil in saucepan; simmer on medium-low heat 14 to 16 min. or until thickened, stirring frequently. Cool completely, then refrigerate until ready to use.
  • Pour pomegranate sauce over cheesecake just before serving; sprinkle with pomegranate seeds.

2 (5 1/3 ounce) packages walker's original shortbread
1/4 cup sliced almonds
1/2 teaspoon ground cardamom
6 tablespoons butter, melted
3 lbs cream cheese, softened and at room temperature
1 1/2 cups sugar
2 teaspoons vanilla bean paste (I like the paste better) or 2 teaspoons extract (I like the paste better)
3 large eggs
2 large egg yolks
3 tablespoons pomegranate juice, concentrate (or, you can use 2 tablespoons pomegranate molasses)
1/3 cup pomegranate juice, concentrate
2 tablespoons pomegranates, spread (Baktat brand) or 2 tablespoons pomegranate molasses
1 large pomegranate, seeds of

Steps:

  • Preheat oven to 375 degrees F.
  • Using a food processor, grind up the shortbread, almonds and ground cardamom into fine crumbs.
  • Pour into a bowl, drizzle with melted butter and toss together with a fork until they are evenly blended.
  • Press this mixture firmly into the bottom and partly up the sides of a ten inch springform pan, and bake on the bottom rack of the oven for fifteen minutes. (Bake for ten minutes if you have a convection oven.).
  • Remove from oven and cool completely.
  • Turn oven down to 300 degrees, and place a roasting pan or baking pan full of water into the bottom rack. (This creates a moist environment in the oven and helps keep the top of the cheesecake from drying out and cracking or becoming rubbery.).
  • Beat together the cheese, sugar and vanilla until well blended and light and fluffy on high speed. Beat for two minutes. Scrape down bowl and beat for another thirty seconds.
  • Whisk together eggs and egg yolks and add to mixture with the pomegranate juice concentrate or pomegranate molasses. Beat on medium speed for about one minute to combine thoroughly. Scrape down bowl and beat for thirty more seconds.
  • Pour filling into pan, and place on the center oven rack. Bake for one hour and fifteen minutes (50 minutes if you have a convection oven) until the cake appears golden and set. A tester inserted into the center should come out looking dry.
  • Cool the cake in the pan on a wire rack until it comes to room temperature, then cover and refrigerate for eight hours.
  • To serve, remove from refrigerator and wipe down the outside of the springform pan with a towel dampened with very hot water. Dip a table knife or icing spatula in hot water, wipe it dry and run it around the interior edge of the pan, loosening the sides of the cake. Unlock the spring, and remove the side of the pan.
  • Blend together the juice concentrate and pomegranate spread with a whisk. Pour over the top of the cake, making certain to drizzle some of it artfully over the sides in decorative rivulets.
  • Sprinkle the top of the cake thickly with pomegranate seeds, until it resembles a geode encrusted with garnet crystals.
  • Serve on plates upon which pools of the pomegranate syrup have been poured, if desired.
