Number Of Ingredients 6

2 cups heavy whipping cream
1/4 cup sugar
2 teaspoons vanilla extract
2-1/2 cups pomegranate seeds (about 2 pomegranates)
2 medium apples, peeled and cubed
1 cup chopped pecans, toasted

Steps:

  • In a large bowl, beat cream until it begins to thicken. Add sugar and vanilla; beat until stiff peaks form. Fold in pomegranate seeds and apples. Sprinkle with pecans. Serve immediately.

A nice fruit salad for potlucks or outdoor events - my grandmother always made it on the Fourth of July. Bananas, pineapple, and cream cheese in a tangy homemade sauce. Salad can be refrigerated or served immediately.

½ cup pineapple juice
½ cup white sugar
2 tablespoons lemon juice
2 teaspoons cornstarch
1 egg, well-beaten
6 large bananas, sliced
1 (8 ounce) package cream cheese, softened
1 (8 ounce) can pineapple tidbits, drained

Steps:

  • Combine pineapple juice, sugar, lemon juice, and cornstarch in a saucepan over medium heat; cook and stir until sugar dissolves and sauce is smooth, about 5 minutes.
  • Stir about 1 tablespoon sauce into the bowl with the egg until egg is slightly warmed. Slowly pour egg mixture into sauce, whisking until sauce is smooth and thickened. Remove saucepan from heat and freeze sauce, stirring occasionally, until completely chilled, about 15 minutes.
  • Mix bananas, cream cheese, and pineapple together in a bowl. Add sauce and mix until evenly coated.

1/3 cup pomegranate juice
1/4 cup sugar
1 teaspoon grated tangerine zest
4 tangerines, peeled and sectioned
2 medium kiwifruit, peeled, halved and sliced
1 medium apple, peeled and cut into 1/2-inch slices
1 large ripe banana, sliced
1 large pear, cut into 1/2-inch slices
1-1/2 cups cubed fresh pineapple
1/2 cup pomegranate seeds

Steps:

  • In a small saucepan, combine pomegranate juice and sugar. Bring to a boil; cook until liquid is reduced by half. Stir in tangerine zest; cool to room temperature., In a large bowl, combine the remaining ingredients. Pour pomegranate mixture over fruit; toss gently to coat. Serve immediately with a slotted spoon.

1/2 cup banana (firm)
1 tablespoon sugar
1/4 cup bell pepper (red)
1/4 cup bell pepper (green)
1/4 cup sweet onion (vadalia)
2 tablespoons vinegar (white)
6 tablespoons olive oil
2 teaspoons pomegranate molasses
salt (to taste)

Steps:

  • Dice bananas, peppers and onions.
  • Toss bananas, peppers, onions, pomegranate seeds and sugar together.
  • In a separate bowl whisk together oil, vinegar, and pomegranate molasses.
  • Drizzle over salad mixture and gently toss.
  • Chill for 2 hours.
