POLVORONES (MEXICAN WEDDING COOKIES)

Marcela Valladolid's crumbly and buttery cookies will melt in your mouth. They're easy to prepare and are perfect for dipping in a cup of hot cocoa.

1 1/2 cups walnuts
Pinch fine salt
2 sticks (16 tablespoons) unsalted butter, at room temperature
1/2 cup granulated sugar
2 cups all-purpose flour
1/2 cup confectioners' sugar, plus more for serving
Ground cinnamon, for garnish (optional)

Steps:

  • Put 1/2 cup of the walnuts and the salt in a food processor and pulse until finely ground. Roughly chop the remaining 1 cup walnuts.
  • Position two oven racks in the upper and lower thirds of the oven and preheat to 325 degrees F.
  • Beat the butter in a large bowl with an electric mixer on medium-high speed until smooth, 2 to 3 minutes. Add the granulated sugar and beat until light and fluffy, about 2 minutes. Scrape down the sides of the bowl. Beat in the flour, then the ground and chopped walnuts. Divide the dough in half, forming each half into a ball. Wrap separately in plastic and chill until cold, about 30 minutes.
  • Put the confectioners' sugar in a large bowl.
  • Working with half of the chilled dough at a time and keeping the rest in the fridge, roll the dough by 2 teaspoonfuls between your palms into balls. Arrange the balls on a large baking sheet, spacing them 1/2 inch apart.
  • Bake the cookies until golden brown on the bottom and just pale golden on top, about 18 minutes. Cool the cookies for 5 minutes on the baking sheet. Toss the warm cookies in the powdered sugar. Transfer the sugar-coated cookies to a rack to cool completely. The cookies can be prepared up to 2 days ahead. Once cooled, store them in an airtight container. You need to make sure they are cooled before storing them, otherwise they will get soggy. Sift additional powdered sugar and cinnamon over the cookies if desired before serving.

½ cup unsalted butter, softened
1 cup white sugar
1 large egg
1 large egg yolk
1 tablespoon vanilla extract
1 teaspoon almond extract

1 (21 ounce) package guava paste, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a cookie sheet.
  • Combine shortening and butter in a large bowl; beat with an electric mixer until smooth and creamy. Add sugar and beat until fluffy. Mix in egg, egg yolk, vanilla, and almond extract.
  • Add flour, 1 cup at a time, until completely mixed; the dough should be stiff and able to hold its shape when formed into a ball. If this consistency is not achieved, add a little more flour.
  • Make 1-inch balls of dough and place 1 inch apart on the prepared cookie sheet. Use your finger to make small indentations in the middle of each cookie and fill it with a cube of guava paste.
  • Bake in the preheated oven until light golden on the bottom, about 15 minutes; do not overcook. Cool on the baking sheet for 1 minute before removing to a wire rack to cool completely. Repeat with remaining batter.

3 1/2 cups unbleached all-purpose flour, plus more for dusting
1/2 teaspoon kosher salt
3 1/2 teaspoons ground cinnamon, preferably Mexican
2 cups (4 sticks) unsalted butter, room temperature
2 cups confectioners' sugar
2 teaspoons pure vanilla extract

Steps:

  • In a medium bowl, whisk together flour, salt, and 1 1/2 teaspoons cinnamon.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat together butter and 1 cup confectioners' sugar on medium speed until smooth. Beat in vanilla. Reduce speed to low and gradually mix in flour mixture until incorporated. Shape dough into a square and wrap in plastic; refrigerate 1 hour.
  • On a lightly floured surface, roll out dough 1/2 inch thick. Using a 2 1/2-inch round cutter, cut out cookies. (Scraps can be rerolled once.) Divide evenly between two parchment-lined baking sheets. Using a 3/4-inch round cutter, cut out a hole in the center of each cookie. Refrigerate until firm, about 30 minutes.
  • Meanwhile, preheat oven to 350 degrees. Bake, rotating halfway through, until edges begin to brown, about 20 minutes. Let cool on sheets 5 minutes, then transfer to a wire rack and let cool completely.
  • In a small bowl, stir together remaining 2 teaspoons cinnamon and 1 cup confectioners' sugar. Working with one cookie at a time, toss in cinnamon sugar until thoroughly coated. Cookies can be stored in an airtight container at room temperature up to 3 days.

These melt-in-your-mouth Mexican wedding cookies are very easy to prepare and are the perfect accompaniment for a warm cup of after-dinner coffee, or for dipping in hot chocolate as I did when I was a child.

1/2 cup sugar

2 sticks (8 ounces) unsalted butter, at room temperature
1/2 cup granulated sugar
2 cups all-purpose flour
1 cup chopped walnuts
1/2 cup ground walnuts
1/2 cup powdered sugar, plus more for serving

Steps:

  • With an electric mixer or in the bowl of a stand mixer using the paddle attachment, beat the butter until light and fluffy. Add the granulated sugar and beat until well blended. Beat in the flour, and then the chopped and ground walnuts. Remove the dough from the bowl and form into a large disc. Wrap the dough in plastic and chill in the refrigerator for 30 minutes.
  • Preheat the oven to 325 degrees F. Line two baking sheets with parchment paper.
  • Remove the chilled dough from the refrigerator. Cut the dough into quarters, and then cut each quarter into sixths for a total of 24 equal pieces. Roll each piece of dough between your palms into 2-inch balls. Arrange the 24 balls onto the prepared baking sheets (12 cookies on each sheet), spacing them 1 inch apart.   • Cool the cookies for 5 minutes on the baking sheet. Toss the warm cookies in the confectioners' sugar. Transfer the sugarcoated cookies to a rack to cool completely. 1/2 c confectioners' sugar
1/2 tsp ground cinnamon
1/4 tsp salt
1 tsp pure vanilla extract
1 1/2 c all-purpose flour
1 c confectioners' sugar

  • 1. Preheat oven to 350 degrees. Grease cookie sheets or spray with Pam or Crisco baking spray.
  • 2. In a medium bowl, cream together 1/2 cup confectioners' sugar and butter until smooth. Stir in vanilla. In a separate bowl Combine flour, salt and 1/2 tsp of cinnamon; stir into the creamed butter and sugar mixture to form a stiff dough. Shape dough into 1 inch balls. Mix together 1 cup confectioners' sugar and 1 teaspoon cinnamon; roll balls in cinnamon mixture.

8 ounces unsalted butter, at room temperature
3/4 cup confectioners' sugar, sifted, plus extra for dusting
1 teaspoon vanilla extract
Zest from one small orange (about 1 1/4 teaspoons)
1 1/2 cups unbleached, all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves
1/4 teaspoon kosher salt
1 cup almond meal

Steps:

  • In an electric mixer fitted with the paddle attachment, beat the butter at medium speed for about 1 minute. Gradually add the confectioners' sugar and increase the speed to medium-high. Occasionally stopping to scrape down the sides with a rubber spatula, continue to beat until it is pale and fluffy, an additional 4 to 5 minutes. Add the vanilla extract and orange zest.
  • Sift together the flour, spices and salt, then blend with the almond meal. Add this to the creamed butter all at once, then stir with a wooden spoon or spatula for a couple of turns. Return the bowl to the stand and mix on the lowest speed until the flour is just incorporated without over-mixing. Turn out the dough onto a large piece of plastic wrap, push together to form a large flat disc, and wrap well. Refrigerate until very firm, at least 2 hours or overnight.
  • Preheat the oven to 375 degrees F. Line a large baking sheet with parchment paper or nonstick liner.
  • Scoop out the dough in tablespoons, roll into a ball and place on the cookie sheets, about 2 inches apart. Using a small spoon dipped in flour, press down on each ball so it forms a round disc about 1/2-inch thick. The dough will be fragile but if it cracks or the dough falls apart it can be gently pressed together or reshaped. Repeat with remaining dough.

I found this recipe in a Mexican cooking magazine called "Panaderia Mexicana Tradicional". The recipe was originally written in Spanish and the measurements were in grams. I translated the recipe into English and converted the measurements to accomodate the American kitchen. Living in Texas, we have a lot of Mexican bakeries! I love going into the panaderia by the farmer's market. I love Mexican pastries because they are not too sweet. This cookie is one of my favorites!

2 1/4 cups all-purpose flour, plus
1 tablespoon all-purpose flour
2 1/4 cups powdered sugar, plus

1 1/4 cups vegetable shortening, plus

2 tablespoons cocoa
2 teaspoons baking powder
1 teaspoon pure vanilla extract

  • Combine all ingredients in a mixing bowl.
  • Blend well.
  • Cover dough and refrigerate for 30 minutes.
  • Preheat oven to 350°F.
  • Scoop about two tablespoons of dough, roll into a large ball, then roll in granulated sugar.

  • Flatten ball with the palm of your hand to about 1/4-inch thick.
  • Sprinkle a little extra sugar on top.
  • Repeat process with the rest of the dough, placing them 2-inches apart once flattened.

  • Make sure you not over bake!
  • Remove cookies from oven and leave on cookie sheet for 5 minutes, before transfering to a wire rack to cool completely.

1/2 cup unsalted butter, at room temperature
1/2 cup vegetable shortening
2 1/2 cups sifted sifted confectioners' sugar (icing, very important that it is sifted)
1 teaspoon finely grated orange zest (next time I'll add 1/4 tsp. more)
1 tablespoon orange juice
2 cups unbleached all-purpose flour
2/3 cup ground walnuts
1/4 teaspoon sea salt

Steps:

  • In a bowl, using an electric mixer on medium speed, beat together the butter and shortening until creamy. Add 1 1/2 cups of the confectioners' sugar, the orange zest, and the orange juice and beat until blended.
  • In another bowl, stir together the flour, nuts, and sea salt. Add the flour mixture 1 tablespoon at a time to the butter mixture, beating until thoroughly incorporated. The dough will be crumbly. Transfer the dough to a large sheet of plastic wrap and press the dough into a ball. Wrap and then refrigerate for 1 - 2 hours.
  • Position a rack in the upper third of the oven and preheat the oven to 325°F Line a baking sheet with parchment (baking) paper or with a silicone baking mat.
  • Using your hands, roll or squeeze small pieces of the dough into 3/4-inch (2cm) balls. Place the balls on the prepared baking sheet, spacing them about 1 inch (2.5 cm) apart and gently pressing them to flatten slightly.
  • Bake the cookies until the eges turn pale gold, 10-15 minutes (my oven takes slightly longer).
  • Meanwhile, place the remaining 1 cup confectioners' sugar in a shallow bowl. When the cookies are ready, remove the baking sheet from the oven. While they are still hot, using a spatula, remove the cookies one at a time and carefully roll them in the sugar. Set aside on a rack and let cool completely, then roll them again in the sugar, shaking off any excess.

  • In a large bowl, beat shortening and butter until fluffy.

1/2 cup pumpkin purée
1/2 cup fine cane sugar
1 teaspoon vanilla
1 1/2 teaspoon ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon ground allspice
1/2 teaspoon salt
1 slightly heaping cup raw pecans or raw pecan pieces
2 cups whole wheat pastry flour
1/2 cup powdered suga

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Line a cookie sheet with parchment paper. Lightly toast the pecans in a skillet over medium-low heat, stirring frequently, under they are nice and fragrant. Remove from heat. You can either use a food processor to finely chop the pecans (about 10 pulses should do it, don't blend so well that you end up with pecan butter) or finely chop the pecans with a chef's knife on a cutting board (you might want to let the pecans cool a little before chopping). In a large bowl, beat the coconut oil or butter, pumpkin purée, cane sugar, vanilla, cinnamon, ginger, allspice and salt with an electric mixer on medium speed until light and fluffy. Since I used melted coconut oil, it didn't get light and fluffy but it did blend well (I wonder if it would get light and fluffy with solidified coconut oil at room temperature?). Gradually add the chopped pecans and flour, beating on low speed after each addition until well blended. Using your hands, shape the dough into 1-inch balls. Place the cookies on the baking sheet, leaving about 1 1/2-inch space around each cookie (the cookies will not expand in size). Bake for 14 to 15 minutes, until the bottoms of cookies are lightly browned. Let the cookies cool for 5 minutes on the baking sheet. Pour the powdered sugar into a small bowl and roll the warm cookies liberally to coat in powdered sugar. Taste, and if the cookies aren't quite sweet enough to delight, give them another roll in powdered sugar. Let the cookies cool on a wire rack.

1 cup butter, softened
1 cup granulated sugar
1 cup packed brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1 1/2 teaspoons mexican vanilla bean paste or 1 1/2 teaspoons vanilla extract
1/4 teaspoon coconut extract
3 1/2 cups all-purpose flour
1 cup flaked coconut, toasted
1/4 cup finely chopped candied pineapple
1 teaspoon finely shredded lemon peel
1 teaspoon finely shredded lime peel
1 teaspoon finely shredded orange peel
toasted flaked coconut
2 cups powdered sugar
2 -4 tablespoons lemon juice

Steps:

  • In a large bowl, beat butter with an electric mixer on medium to high speed for 30 seconds.
  • Add granulated sugar, brown sugar, baking soda, and salt. Beat until combined, scraping bowl occasionally.
  • Beat in eggs, vanilla paste, and coconut extract until combined.
  • Beat in as much of the flour as you can with the mixer, using a wooden spoon, stir in any remaining flour.
  • Stir in the 1 cup coconut, candied pineapple, and the citrus peels.
  • Divide dough into thirds and shape each portion of dough into a 12-inch-long roll.
  • Wrap rolls in plastic wrap or waxed paper and chill for 4 hours or until firm enough to slice.
  • Preheat oven to 350 degrees F.
  • Cut rolls into 1/2-inch-thick-slices.
  • Place slices 1 inch apart on an ungreased cookie sheet, bake in the preheated oven for 9 to 10 minutes or just until centers are set.
  • Transfer cookies to a wire rack; let cool.
  • Drizzle tops of cookies with Lemon Glaze and sprinkle with additional toasted coconut.
  • Let stand until glaze is set. Makes about 60 cookies.
  • LEMON GLAZE:.
  • In a medium bowl, stir together powdered sugar and enough lemon juice to make an icing of drizzling consistency.
  • STORAGE:.
  • Layer cookies between sheets of waxed paper in an airtight container; cover. Store at room temperature for up to 3 days or freeze for up to 3 months.

2 eggs
4 cups all-purpose flour, sifted
1 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon brandy
1/2 cup sugar
2 tablespoons cinnamon

Steps:

  • Preheat oven to 375°F
  • Cream butter with the 2 kinds of sugar until very creamy and light. Add eggs, one at a time, beating well after each addition. Add baking powder and salt to flour and add to cream mixture in thirds. Finally, blend in the brandy.

1 cup unsalted butter, room temperature
1/2 cup granulated white sugar
1 teaspoon vanilla extract
1 teaspoon almond extract
1/2 teaspoon kosher salt
2 cups flour
1 cup coarsely ground almonds
1/2 cup powdered sugar, for dusting cookies

Steps:

  • Preheat oven to 325 degrees. Line a baking sheet with parchment paper. In the base of a mixer, beat together the butter and sugar until light and fluffy--about 3 minutes. Add the extracts and salt, and beat for another 30 seconds. Lower the mixer to the lowest setting, and slowly add the flour letting it mix until it is all completely worked in. Add the almonds and let mix until completely incorporated. Use a cookie scoop or your hands to form round balls out of the dough, each about 1 tablespoon in size. Arrange on the cookie sheet 1 inch apart. Once you have filled the cookie sheet, place it in the refrigerator to chill for 15 to 30 minutes. Once chilled, place in the oven and bake for about 20 minutes, or until the cookes are completely baked, golden brown on the bottom, but still pale on top.
