POLISH SAUSAGE AND SAUERKRAUT CASSEROLE (KAPUSTA)
When my husband's Grandmother died, I was the designated person to bring this to all holiday dinners (even though I'm Irish!) since I learned what to do by watching her. She always used fresh rather than smoked Polish Sausage.

Steps:
- Preheat oven to 325 degrees Fahrenheit.
- Bring sausage to boil and simmer 15 minutes; drain and set aside.
- Cut bacon into small pieces.
- Begin browning, then add diced onion.
- Saute together until bacon is almost crisp.
- Drain mixture, reserving bacon grease.
- Drain sauerkraut (do not rinse).
- Add sauerkraut and brown sugar to bacon mixture.
- Mix in about 2 Tablespoons reserved bacon grease and water.
- Place in large casserole dish.
- Cut Polish sausage into 3" pieces and place on top of sauerkraut.
- Cover and bake at 325 degrees Fahrenheit for 1 hour 15 minutes, checking sauerkraut mixture halfway through to add more water if sauerkraut appears very dry.
- Finish baking; remove from oven.
- Taste sauerkraut and, if desired, adjust flavor by adding salt and pepper, or a little more brown sugar, vinegar or bacon grease to your taste. (Note: In the old days, Busia (Grandma) would soak a cup of yellow peas overnight to soften them and would mix them into the sauerkraut. It was probably to stretch the quantity, but I don't do it anymore!).

- Preheat oven to 300ºF.
- Place bacon, onion and carrot in heavy large ovenproof Dutch oven over medium-high heat.
- Saute until onion is tender but not brown, about 5 minutes.

POLISH PORK TENDERLOIN IN APPLE-ONION SAUCE & SAUERKRAUT
Made this for Easter with fresh pork from a local farm. ABSOLUTELY delicious and tender. Very unfussy, great for everyday. I use Polish Grill Seasoning but you can use any seasoning or make your own with any combo such as 1 tsp. each of marjoram, garlic powder, onion powder and paprika.

- *If using fresh apples, peel, core and dice the apples. Simmer in a little apple juice or water, covered until soft. Mash with a potato masher and you have easy, fresh, homemade applesauce!
- Pat pork loin dry. Season generously on both sides with salt & pepper and then with the pork seasoning. Let sit for 15-30 minutes at room temperature
- Sprinkle the roast on both sides with flour to coat.
- Preheat oven to 325.
- Heat oil or butter over medium-high heat, add loin and brown on all sides.
- Add undrained sauerkraut to an oven dish and place loin on top.
- Add applesauce, onion soup mix, brown sugar and ginger to the skillet used to cook the pork. Mix well and spoon over the top of the pork.
- Pour 1/4 cup of the apple juice to the bottom of the pan, over the sauerkraut.
- Cover dish with foil and bake for 30 minutes, basting halfway through.
- After 30 minutes, remove foil, add the other 1/4 cup of apple juice, baste again and cook for 15 more minutes, uncovered.
- Remove from oven and let pork sit for 10-15 minutes before slicing.
- Slice and serve over the sauerkraut.

- In a large bowl, combine 3 cups all-purpose flour, rye flour, sugar, salt and yeast. In a saucepan, heat water and butter to 120°-130°. Add to dry ingredients; beat until smooth. This is a fantastic way to prepare pork chops. I've been doing it for years. For the apples, I usually use Granny Smiths, but you can use any apple that you'd normally eat on its own. DON'T use a cooking apple. You need a sweeter apple to balance with the sauerkraut.

- Melt the butter in a flameproof casserole dish, and fry the chops till browned on both sides. Remove from pan and set aside.
- Add onion and garlic to the dish and fry till transparent.

- 1. In a large pot add sauerkraut and water. Bring to a boil and simmer covered for 1 hour. Drain in colander.
- 2. while sauerkraut is cooking, dice fat back into small pieces and put into a large skillet. Cook down on medium heat until pieces of fatback turn brown and crispy. Remove pieces with slotted spoon and dispose of, keeping the drippings in the pan. Add onions to drippings in the pan and saute' until tender.
- 3. When sauerkraut is cooked and drained, put back into pot and add onions as well as most of the drippings. Add pinch of salt and pepper. If it seems dry add a little more drippings.
- 4. Let this mixture cook down for at least 1/2 hour, stirring frequently to prevent it from sticking and burning. Taste occasionally to check flavor. Important to learn with ethnic cooking.. become a TASTER! Add more salt and pepper if needed. When onions and sauerkraut are tender and blended remove from heat
- 5. Serve with Kielbasa, smoked ham, hot dogs, sausage - you name it!

- 1. Add a can of sauerkraut and 1 can water to pot and bring to a boil. Turn heat down to simmer and cook for about an hour until sauerkraut is tender.
- 2. While the sauerkraut is cooking, boil noodles according to package directions.
- 3. Remove salt pork from rind and dice. Put in hot skillet and fry on medium heat until pork is brown and drippings are rendered. Remove pork and discard, keeping the drippings.
- 4. Drain sauerkraut well and return to pot. Add drained noodles gradually until you have a good equal mix. Add a little pork drippings and stir.
- 5. Stir gently and cook on low heat. Add more drippings if needed. Add salt and pepper to taste, AFTER tasting sauerkraut. simmer on low heat for about 1/2 hour stirring frequently, until flavors are blended. Serve hot with Kielbasa or smoked ham.

- Place on a paper towel to drain fat.
- Discard fat from frying pan except for about 1 tablespoon.

- Fry meat to desired doneness and set aside.
- Mix remaining filling ingredients and fry for about five minutes.
- Combine mixture with meat and refrigerate until ready to assemble pierogi.
- Combine the ingredients listed under dough and knead until well blended (dough should be somewhat dry and about the consistency of play-doh, you can knead in more flour if needed).
- Twist off workable portions of dough and roll out very thin on a floured surface.
- Using a glass with a thin lip and a diameter of about 3.
- 5 inches, dip lip of glass in flour and cut circles out of the dough.
- Place about 2 tsp filling in the center of each dough circle.
- Moisten outer edges with water and fold dough over to close.
- Seal edges by pressing gently with the back of a fork or pinching together with your fingers.
- Cook 12 pierogi at a time, reducing heat to a gentle boil; boil, stirring occasionally to keep from sticking to the bottom, until pierogi float to the surface (about 5 minutes).
- Rinse in cold water, then drizzle melted butter or vegetable oil over dough to keep from sticking.
- Repeat with remaining pierogi.
- At this point you can serve them warm, freeze them for later use, deep fry them until golden brown or pan fry them in butter with onions over medium heat, lightly browning both sides before serving.
