1/2 pound sliced bacon, diced
2-1/2 pounds red potatoes, thinly sliced
2 medium onions, sliced
1-1/2 pounds boneless venison steak, cubed
2 cans (14-3/4 ounces each) cream-style corn
3 tablespoons Worcestershire sauce
1 teaspoon sugar
1/2 to 1 teaspoon seasoned salt

Steps:

  • In a large skillet, cook bacon over medium heat until crisp; drain. Place potatoes and onions in a 5-qt. slow cooker. Top with venison and bacon., Combine the corn, Worcestershire sauce, sugar and seasoned salt; pour over the top. Cover and cook on low for 6-8 hours or until meat and potatoes are tender.

4 cups uncooked penne pasta
1-1/2 pounds smoked Polish sausage or kielbasa, cut into 1/2-inch slices
2 cans (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
1 jar (16 ounces) sauerkraut, rinsed and well drained
3 cups shredded Swiss cheese, divided
1-1/3 cups 2% milk
4 green onions, chopped
2 tablespoons Dijon mustard
4 garlic cloves, minced

Steps:

  • Preheat oven to 350°. Cook pasta according to package directions; drain and transfer to a large bowl. Stir in sausage, soup, sauerkraut, 2 cups cheese, milk, onions, mustard and garlic., Spoon into 2 greased 8-in. square baking dishes; sprinkle with remaining cheese. Bake, uncovered, until golden brown and bubbly, 45-50 minutes. Freeze option: Cover and freeze unbaked casserole up to 3 months. Thaw in the refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake, uncovered, until golden brown and bubbly, 50-55 minutes.

These are great little appetizers to have on hand when "unexpected" guests pop in. We always have a few batches in the freezer, and everyone loves them. I am ALWAYS asked for the recipe (I think by this point, I have it memorized!)lol. I could make these in my sleep!! Note: Servings is approximate.

2 loaves miniature party rye rounds
1 teaspoon oregano
1 teaspoon garlic powder
1 lb Velveeta cheese
1 lb lean ground beef
1 lb Jimmy Dean sausage or 1 lb sausage
1 teaspoon Worcestershire sauce

Steps:

  • Brown hamburger and sausage in separate skillets. Drain both.
  • In a pot, add hamburger, sausage, and rest of ingredients and stir until cheese is melted.
  • Put 1 teaspoons of mixture on each bread slice and freeze on cookie sheets for 10 minute or until set.
  • Remove from sheets and place in plastic bags. Freeze.
  • Take out as many as you want to use and place on cookie sheet.
  • Bake at 350 degrees for 10-15 minutes or until hot.

I have no idea where this recipe originated, but it is the ultimate Polish comfort food to me. It is a very versatile recipe, as I have made it several times with cooked, sliced cabbage instead of the sauerkraut; substituted cream of celery soup for cream of chicken, and I have even made this once using ham in place of the pork. It uses simple ingredients, and only needs a big loaf of bread or fresh rolls with butter to satisfy any growling belly:)

1 tablespoon vegetable oil
3 lbs boneless pork roast or 3 lbs steak, cut into 1 inch cubes
2 (10 3/4 ounce) cans cream of mushroom soup
1 (10 3/4 ounce) can cream of chicken soup
2 stalks celery, sliced
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1 envelope dry onion soup mix
1 (16 ounce) package kluski noodles, cooked and drained
1 (8 ounce) can mushroom stems and pieces, drained
1 (28 ounce) can sauerkraut, drained

Steps:

  • In large skillet, heat oil over medium heat.
  • Add meat and saute until browned, about 10 minutes.
  • Stir in mushroom and chicken soups, onion soup mix, celery, pepper, and garlic powder.
  • Spoon into 13x9-inch casserole dish.
  • Cover.
  • Bake at 350 degrees until tender, 45 minutes- 1 hour, stirring occasionally and adding up to 1 cup of water if needed.
  • Add cooked noodles and sauerkraut and stir to combine.
  • Cover and bake for 30 minutes longer.

KIELBASA AND POTATO BAKE

An easy variation of the now classic brunch potato bake that includes a very tender Kielbasa.

1 (10.75 ounce) can condensed cream of mushroom soup
2 cups milk
1 tablespoon minced garlic
1 teaspoon salt
½ teaspoon ground black pepper
1 pound kielbasa sausage, sliced thin
4 large russet potatoes, peeled and cubed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large mixing bowl, mix together soup, milk, garlic, salt, and pepper. Stir in potatoes and kielbasa. Spoon into a 7x11 inch casserole dish.
  • Place casserole on a baking sheet, and bake in the preheated oven for 90 minutes, or until potatoes are tender.

I saw this one-dish (actually two) meal made on a PBS fundraising show. it is delicious. Everyone who loves Polish sausage, cabbage, and pierogies, raves about this dish. Great for potlucks because it's so easy to prepare.

1 lb polska kielbasa, sliced
1 head green cabbage, chopped
1/2 cup butter
1 chopped onion
1 package frozen pierogi
salt
pepper

Steps:

  • Melt butter in large oven proof skillet.
  • Saute onion, add sausage. Stir.
  • Add chopped cabbage, cover.
  • Parboil frozen pierogies.
  • When cabbage has wilted, add salt and pepper to taste.
  • Add pierogies.
  • Put into 350 degree oven with skillet lid.
  • Bake 20 minutes.
