KIELBASA KAPUSTA - SLOW COOKER RECIPE!
This recipe for Kielbasa Kapusta is my family's traditional Polish Kapusta recipe made in a slow cooker!

Steps:
- In a large skillet over medium heat melt butter and bacon drippings until foaming subsides, about 2-3 minutes. Add onions and cook, stirring occasionally, until onions are translucent and edges begin to brown, about 8-10 minutes.
- While onions cook rinse and drain sauerkraut at least twice. Make sure sauerkraut is well drained and add it to slow cooker along with onions, salt, pepper, brown sugar, water, and kielbasa. Give everything a good stir and cover. Cook on high for 1 hour, then reduce to low and cook for an additional 6 hours, stirring occasionally. Serve.

- I usually brown my sausage and onions in about 2 tablespoons of butter or oil before adding to crock pot but this is not necessary. Add all ingredients to crock pot, stir to combine.
- Cook on low for 6 to 7 hours or high for 4 hours or until carrots and potatoes are cooked. Makes a 3 quart crock pot almost full or about 8 to 10 servings.
POLISH CROCK POT SAUERKRAUT
This dish was always showing up at pot luck dinners when I was a kid. I could eat whole bowls of this stuff and never get tired of it.

Steps:
- Fry bacon until crisp and set aside. In same pan with bacon grease, cook onion until tender and translucent.
- In crock pot, add sausage, onions, garlic powder, sauerkraut, noodles, soup, and mushrooms. Stir gently until mixed while adding salt and pepper to taste.
- Crumble bacon and layer on top of mixture in crock pot.
- Cook on high for 4-5 hours stirring occasionally.

- Heat oil on stove and cook onions and garlic on stove until soft.
- Add the sauerkraut, apple, onion and garlic mixture, and caraway seeds to the slow cooker crock. Stir.

- In a medium bowl, combine the sauerkraut and brown sugar. then place in slow cooker. Arrange the sausage and onion over the sauerkraut.
- Cook on high for two hours, check for dryness, adding some water if necessary, then reduce to low setting, and cook on low for two more hours.
