Time 1h45m

Yield 12-16 serving(s)

Number Of Ingredients 13

1 head garlic, cloves separated
1 1/2 cups water
1/2 cup polenta or 1/2 cup medium-grind cornmeal
1 tablespoon chopped garlic
1 tablespoon dried basil, crumbled (optional)
1 1/2 teaspoons herbes de provence, crumbled
1 1/2 teaspoons kosher salt
3 (8 ounce) packages cream cheese, at room temperature
1/2 lb blue cheese, cut into chunks and at room temperature
3 large eggs
1/4 cup freshly shredded parmesan cheese
1/2 cup pine nuts or 1/2 cup almonds, toasted
crostini (optional) or cracker, for serving (optional)

Steps:

  • Arrange the oven rack in the center of the oven. Preheat the oven to 375°F Remove as much skin as possible from each clove, place in a small baking dish without crowding (a pie plate also works well for this), cover tightly with aluminum foil, and bake until the garlic is very tender and easily squeezed from the skin, 35 minutes. Set aside until cool enough to handle.
  • Meanwhile, combine the water and cornmeal in a small saucepan. Bring to a boil, stirring often, then add the chopped garlic, basil (if using), herbes de Provence, and salt. Reduce the heat to a simmer and cook until smooth and creamy, stirring occasionally and adjusting the heat as necessary so the polenta doesn't overcook or bubble up and splatter, 12 to 15 minutes.
  • While the polenta is cooking, place the cream cheese and blue cheese in a large mixing bowl. Add the eggs one at a time and mix by hand or beat with an electric mixer until the eggs are thoroughly incorporated. Set aside.
  • When the garlic is done, reduce the heat to 325 degrees F. Lightly oil a 9-inch springform pan or spray with nonstick cooking spray.
  • When the polenta is done, remove it from the heat and stir in the Parmesan cheese. Let cool for 5 minutes. With a rubber spatula, press the polenta into the bottom of the prepared springform pan and set aside.
  • Pour the reserved cheese filling evenly over the polenta crust. Tap the pan lightly on the counter to remove any air bubbles. Squeeze the garlic cloves from their skins and arrange them around the perimeter of the pan at equal distances. Sprinkle the hazelnuts evenly in the center of the cheesecake.
  • Place the cheesecake on a baking sheet to catch any drips, transfer to the oven, and bake for 1 hour, or until the cake springs back when lightly jiggled and the internal temperature on an instant-read thermometer reaches 160 degrees F. Cool on a wire rack for at least 1 hour.
  • To serve, release and remove the sides of the springform pan. Serve the cheesecake warm or at room temperature, cut into slices as an appetizer or spread onto crostini or crackers for a more rustic look. The cheesecake can be covered and kept in the refrigerator for up to 1 week (its flavors meld and deepen the longer it sits). If serving from the refrigerator, slice and warm it in a 350 degree F oven or microwave briefly before serving.

POLENTA AND PINE NUTS

Polenta and Pine Nuts image

This is the lightest Polenta I have eaten. In Winter, I bake it in the oven, in Summer, it goes on the grill. When we grill it, we grill it hot for a short period of time so that the outside is crisp, and the inside creamy. Whenever I buy pine nuts, I toast all of them in the oven on a cookie sheet, so that we always have them available for polenta or other yummy foods. This is a favorite of our guests at our Summer parties.

Creamy Polenta with Raisins and Pine Nuts image

Time 1h15m

Yield 4 servings

Number Of Ingredients 9

1 quart chicken broth
1 teaspoon salt
1 cup polenta or yellow cornmeal
1/3 cup heavy cream
4 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
1/4 cup raisins
1/4 cup pine nuts
1/2 cup freshly grated Parmesan

Steps:

  • In a large pot, bring the chicken broth and salt to a boil over medium heat. Gradually whisk in the cornmeal in a slow steady stream. The liquid will be absorbed and the cornmeal will lock up; don't freak, just whisk through it. Lower the heat and continue to whisk until the polenta is thick and smooth, about 20 minutes.
  • Add the cream and 2 tablespoons of the butter; continue to stir until incorporated and creamy, about 5 minutes; season with salt and pepper. Remove the polenta from the heat and pour it into a small baking dish.
  • Preheat the oven to 400 degrees F.
  • Place a small skillet over medium heat and add the remaining 2 tablespoons of butter. Swirl the pan over the heat and cook the butter until golden and nutty, about 1 minute. Add the raisins and pine nuts, tossing to coat in the brown butter. Pour the raisins and pine nuts over the top of the polenta and sprinkle with the Parmesan. Bake for 25 minutes and serve.

POLENTA CHEESECAKE WITH PINE NUT SAUCE

Polenta Cheesecake with Pine Nut Sauce image

Number Of Ingredients 18

1/2 cup all-purpose flour
2 tablespoons sugar
1/4 teaspoon salt
2 1/2 tablespoons cold unsalted butter, cut into bits
2 teaspoons ice water
3 tablespoons grappa or rum
1/2 cup golden raisins
1 1/2 cups cooled prepared polenta (leftover or made by following procedure for basic polenta, follows, using 1/2 cup cornmeal or instant polenta, 2 cups water, and 1/2 teaspoon salt)
two 8-ounce packages cream cheese, softened
1 cup sugar
3 whole large eggs
1 large egg yolk
1 teaspoon vanilla
1/2 teaspoon cinnamon
1 cup sugar
1/2 cup water
1/2 cup pine nuts, toasted
1 teaspoon vanilla

Steps:

  • Preheat oven to 400°F.
  • In an 8- by 3-inch springform pan stir together flour, sugar, and salt and with your fingertips blend in butter until mixture resembles coarse meal. Stir in ice water until incorporated and press mixture evenly onto bottom of pan. Bake pastry in middle of oven until golden, about 12 minutes.
  • In a small saucepan bring grappa or rum with raisins to a boil, stirring occasionally, and remove pan from heat. With back of a spoon force polenta through a coarse sieve into a bowl to break up lumps. Stir in cream cheese until smooth and whisk in remaining ingredients until combined well.
  • Reduce temperature to 350°F. Drain any liquid from raisins. Pour filling over pastry and gently stir in raisins. Bake cheesecake in middle of oven 1 hour, or until edges are golden but middle trembles slightly. Turn off oven and cool cheesecake in oven 1 hour. Remove cheesecake from oven and chill, covered, until cold. Cheesecake may be made 2 days ahead and chilled, covered.
  • In a heavy saucepan cook sugar over moderate heat, without stirring, until it begins to melt. Continue to cook sugar, stirring with a fork, until melted and swirl pan until a deep caramel. Add water (mixture will bubble up) and cook, stirring until caramelized sugar dissolves. Cool sauce slightly and stir in pine nuts and vanilla until combined.
  • Serve cheesecake drizzled with sauce.
  • In a heavy saucepan bring water and salt to a boil and gradually whisk in cornmeal in a thin stream. Cook polenta over moderately low heat (it should be barely boiling), stirring constantly, until very thick and pulls away from side of pan, about 40 minutes for cornmeal and about 15 minutes for instant polenta. Remove pan from heat and cover to keep warm. Stir polenta just before using. Polenta will keep warm, covered, about 20 minutes. Makes about 3 cups.

  • Note: In the traditional method of cooking polenta, forty minutes of constant stirring is required to achieve a lumpless texture and fragrant flavor. However, Italian-food expert Marcella Hazan has developed a method that involves very little stirring during this time. We believe it produces a very good polenta, one nearly as flavorful and smooth as the traditional procedure. To make satisfactory polenta in a real hurry, an imported instant polenta (precooked cornmeal) is available. This cooks in a mere fifteen minutes.
