An easy meatloaf with a slightly crunchy veggie texture. Flavorful sauce adds that classic slightly sweet & tangy tomato flavor. HINT: To reduce fat, I bake this for one hour, pour any grease off and *then* pour the sauce over and then bake for the last 15 minutes.

1 medium onion
1 medium green bell pepper
1 1/2 lbs ground beef
1 cup breadcrumbs
1 (8 ounce) can tomato sauce, divided
1 egg
1 1/2 teaspoons salt
1/4 teaspoon pepper
1/4 cup water
2 tablespoons brown sugar, packed
2 tablespoons prepared yellow mustard
1 tablespoon vinegar

Steps:

  • Preheat oven to 350°F.
  • Chop onion and green bell pepper.
  • Gently mix ground beef, bread crumbs, onion, green bell pepper, 1/2 of the tomato sauce, egg, salt, and pepper until combined.
  • Do not overmix. Form into a loaf and place in a shallow pan.
  • Whisk together the rest of the tomato sauce, water, brown sugar, mustard, and vinegar until smooth. Pour over the meatloaf.
  • Bake for 1 hour and 15 minutes, basting with pan juices about every 20 minutes. Let rest 15 minutes before cutting and serving.

We opted for an all-beef meatloaf rather than the traditional mix of beef, veal and pork because we wanted that satisfying big beef flavor. Milk adds richness and tenderizes the meat, preventing it from getting tough or dry. We also cook the onion instead of adding it raw as many recipes suggest, which imparts a welcome sweetness and eliminates that harsh raw onion flavor.

2 large eggs, lightly beaten
1/3 cup milk
3 tablespoons Worcestershire sauce
Kosher salt
1/4 cup olive oil
1 large onion, chopped
2 cloves garlic, finely grated
1 tablespoon thyme leaves, chopped
Freshly ground pepper
1/2 cup ketchup
2 pounds 80/20 ground beef chuck
1/2 cup panko

Steps:

  • Arrange a rack in the center of the oven and preheat to 450 degrees F. Line a rimmed baking sheet with foil.
  • Whisk the eggs, milk, Worcestershire sauce and 2 teaspoons salt in a large bowl until completely combined. Heat the oil in a large skillet over medium-high heat. Add the onion, garlic, thyme, 1/2 teaspoon salt and 1 teaspoon pepper and cook, stirring occasionally, until the onions are tender and lightly golden brown, 8 to 10 minutes.
  • Add 3 tablespoons of the ketchup and cook until most of the moisture has evaporated and the mixture is thick and brick red colored, 3 to 4 minutes. Remove the skillet from the heat and let the onions cool slightly. Then add them to the beaten eggs and mix to combine.
  • Add the beef to the egg and onion mixture. Break up the meat with a fork or wooden spoon, and then mix to thoroughly combine; you don't want to see any lumps of raw beef. Add the panko and mix to combine. Stir the meat vigorously with a wooden spoon for about 7 seconds; it will become more homogenous and tackier.
  • Transfer the meat to the prepared baking sheet and shape into a 9-by-5-inch loaf. Smooth the top and evenly spread the remaining ketchup over top. Bake for 5 minutes, and then reduce the oven temperature to 350 degrees. Continue to bake until an instant-read thermometer inserted into the center of the loaf registers 150 degrees F, 30 to 35 minutes. Allow the meatloaf to rest for 20 minutes before slicing.

1 large onion, chopped
2 carrots, chopped
1 cup beef broth
2 eggs
½ cup bread crumbs
2 tablespoons minced fresh basil
½ teaspoon salt
½ teaspoon ground black pepper
1 pound ground turkey
¾ pound ground beef
½ pound ground pork sausage
½ cup condensed tomato soup
1 tablespoon balsamic vinegar
½ teaspoon Dijon mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Oil a 9x5-inch loaf pan.
  • Place the onion and carrots into a saucepan, and pour in the beef broth. Bring to a boil over medium heat, and reduce heat to a simmer; cook, stirring often, until the vegetables are tender, about 8 minutes. Set the veggies and broth aside.
  • In a large bowl, beat the eggs, and stir in bread crumbs, basil, salt, and black pepper. Allow the mixture to stand for 5 minutes to moisten the crumbs, and lightly mix in the turkey, beef, and pork sausage. Mix in the cooked onions, carrots, and beef broth. Place the mixture into the prepared loaf pan. In a bowl, mix the tomato soup, balsamic vinegar, and Dijon mustard together, and spread the mixture over the meat loaf.
  • Bake until the loaf is no longer pink in the center and an instant-read meat thermometer reads at least 160 degrees F (70 degrees C), about 1 1/2 hours.

1 large yellow onion, finely chopped
1 to 2 tablespoon olive oil
1 pound lean ground beef
1 pound hot sausage
1 cylinder Ritz cracker, well crumbled
2 eggs
1 teaspoon salt, or to taste
1/2 pound bacon
4 to 6 small red potatoes, halved or quartered
1/2 pound baby carrots
1/2 pound green beans, washed and clipped

Steps:

  • Sauté onion in olive oil, stirring until onions caramelize. Add burger, sausage, crumbled crackers, eggs, and salt and mix well. In a 10-inch Dutch oven, place a layer of bacon on the bottom. Add meatloaf mixture and pat into place. Top with small red potatoes, cut side placed down into surface of meatloaf mixture, and carrots. Cover and bake with top and bottom heat for about 30 minutes. Using baster, remove fat. Add green beans and continue cooking for another 15 minutes. Remove fat. Bake a final 15 minutes. Remove fat. Meat should reach 160-180°F. Additional coals may need to be added. Serves 4 to 6. NOTE: This recipe has NO tomato products of any kind.

1 tablespoon olive oil, plus more for greasing
1 large yellow onion, diced
3 cloves garlic, minced
2 tablespoons tomato paste
1 cup panko breadcrumbs
1 cup whole milk
2 lb ground beef
2 large eggs, beaten
½ cup fresh parsley, roughly chopped
1 tablespoon worcestershire sauce
½ teaspoon dried thyme
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
½ cup ketchup

Steps:

  • Preheat the oven to 350°F (180°C). Line a rimmed baking sheet with foil.
  • Heat the olive oil in a large pan over medium-high heat. Once the oil begins to shimmer, add the onion and cook, stirring often, until softened and golden brown, about 7 minutes. Add the garlic and cook, stirring constantly, until aromatic, about 1 minute. Add the tomato paste and cook, stirring often, until the tomato paste turns deep red in color, about 2 minutes. Remove the pan from the heat and let the onion mixture cool to room temperature.
  • In a large bowl, stir together the panko and milk. Add the ground beef, eggs, parsley, Worcestershire sauce, thyme, salt, pepper, and the onion mixture and use your hands to combine. Do not overmix!
