SO-CAL UNIVERSITY GIRL'S GRANOLA BARS
I adapted a few granola bars to fit my needs as a short-on-cash college kid. They're easy to adapt to what you have in your pantry and perfect to store individually for a healthy grab-and-go snack! Using dried cherries gives the bars a tarty edge! I recommend cutting bars and storing in refrigerator wrapped individually for grab-and-go snacking.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking pan with cooking spray.
- Mix oats, almond flour, dried fruit, rice cereal, brown sugar, pecans, chocolate chips, flax seeds, instant coffee granules, and cinnamon in a large bowl.
- Whisk applesauce, honey, egg, and vanilla extract in a small bowl; pour into oat mixture. Stir until evenly incorporated. Press batter into prepared baking dish.
- Bake in the preheated oven until edges are golden brown, 25 to 30 minutes. Cool completely before cutting into granola bars.

- Preheat oven to 325 F. Prepare a 10x15" pan with foil that is sprayed with cooking oil. Mix all the ingredients together. Spread evenly into pan and flatten slightly with a spatula sprayed with cooking oil. Bake 325 F for 20-25 in. Let cool and cut into rectangles. They will be still moist on the bottom. Keep in the fridge until ready to eat.

- Preheat the oven to 350 degrees F (175 degrees C). Line a 9x13 inch baking pan with parchment or foil.
- In a large bowl, mix together the oats, brown sugar, wheat germ, cinnamon, flour, extras (fruit, nuts, choco chips) and salt. Make a well in the center, and pour in the honey, egg, oil and vanilla. Mix well using your hands. (or on low in the mixer until combined) Pat the mixture evenly into the prepared pan.
- Bake for 18-20 minutes in the preheated oven, until the bars begin to turn golden at the edges. Cool for 5 minutes, then cut into bars while still warm. Do not allow the bars to cool completely before cutting, or they will be too hard to cut.
