Plantains are eaten all over Colombia and South America. This delicious vegetable is made in different ways. Plátanos Asados con Bocadillo y Queso make a delicious side dish. Omit the guava paste for a classic plátano asado con queso or baked plantain with cheese.

4 very ripe plantains
1 tablespoon melted butter
4 slices of guava paste ½ inch thick
4 slices of mozzarella cheese ½ inch thick

Steps:

  • Preheat the oven to 400°, cut the ends of the plantains and peel.
  • Place them in a baking dish and brushed with the butter, bake for 30 to 40 minutes.
  • Remove from the oven and slice the plantains lengthwise but not go all the way trough, stuff them with the guava paste and cheese slices.
  • Return to the oven and bake 10 more minutes until the cheese melts and serve.

6 ripe plantains, whole
1 -2 tablespoon melted butter or 1 -2 tablespoon oil, use as little as you want
6 thick slices mozzarella cheese
aji criollo salsa or hot sauce

Steps:

  • Pre-heat oven to 400 F.
  • Peel the plantains, place them on a baking sheet and rub them with butter or oil.
  • Bake the plantains for 30 minutes, then turn each one and bake for another 15-20 minutes or until golden on both sides.
  • Remove the plantains from the oven, made a horizontal slit on the middle of each plantain, and stuff them with the cheese slices.
  • In a few minutes the cheese will have melted, serve immediately, with or without hot sauce.

2 large ripe plantains
1 tablespoon ground ginger
1 teaspoon ground red pepper
1 tablespoon garlic powder
salt
cooking spray or coconut oil

Steps:

  • Select very yellow ripe plantains, some black spots should be visible. Cut Ends off plantains and peel remaining shin off. It should peel almost like a banana. Slice diagonally in a slanted cut pattern about 1 inch or a little thicker. Sprinkle generous amounts of ginger, garlic and red pepper if you like some spice. Lightly sprinkle with salt. Arrange on baking sheet and bake in preheated oven at 450 degrees. Turn plantains occasionally until both sides have a nice golden top about 15 minutes. Remove from oven and serve.
  • you can also use fresh ginger 1 tablespoon, 4 cloves garlic and 1 small habenero pepper and a dash salt prepared in food processor with tablespoon olive oil. Let plantains marinate in mixture for hour than arrange on cookie sheet and bake or fry in oil until golden brown.

6 heirloom bananas or small plantains, ripe but not black, unpeeled
1 cup (230 g) crema or crème fraîche
1 cup (120 g) crumbled queso fresco

Steps:

  • Preheat the oven to 400°F.
  • Place the whole bananas or plantains on a baking sheet and bake, turning them every 10 minutes, until the peel starts to split and the inside is tender when tested with a skewer, about 40 minutes. Remove from the oven but keep on the baking sheet. Carefully slice the peel lengthwise to just reveal the flesh and drizzle with some crema and sprinkle with cheese.
