Cheddar Cornbread Waffles - Flour, cornmeal, baking powder, baking soda, salt, cheddar cheese, eggs, buttermilk, club soda, and canola. Great with chili!

Number Of Ingredients 10

1 cup all-purpose flour
1 cup yellow cornmeal
2 tsp baking powder
1 tsp baking soda
½ tsp salt
1½ cups shredded sharp Cheddar cheese
3 large eggs
1 cup buttermilk
1 cup club soda
⅓ cup canola oil

Steps:

  • Sift together first 5 ingredients in a large bowl. Stir in cheese. Combine eggs and next 3 ingredients; gently stir into dry ingredients just until blended.
  • Spray waffle iron with cooking spray. Spoon batter onto preheated waffle iron. Cook 3-5 minutes or until crisp and done. Repeat with remaining batter.
  • Transfer waffles to a baking sheet, and keep warm, uncovered, in the oven at 200° until ready to serve. Waffles can be frozen in zip-top freezer bags and reheated in oven or toaster oven.

2 medium eggs
1 1/4 cups milk
1/4 cup oil or 1/4 cup melted margarine
1 1/2 cups cornmeal
3/4 cup flour
3 teaspoons baking powder
1 teaspoon salt
2 tablespoons sugar

Steps:

  • Into a large bowl, crack the eggs. Pour in the milk and the oil or margarine. Mix this up until it is emulsified nicely. Dump in the cornmeal, flour, baking powder, salt and sugar. Use a whisk or a spoon and a strong arm to mix this all up until it is quite smooth. Turn the batter into a round, oiled 9-inch pan, or an oiled 8-inch square pan. You culd also use a large iron skillet if you like. Bake the cornbread at 400F for about 30 minutes, maybe a smidgen more. Remove it from the oven and allow it to cool for a few minutes before cutting it into wedges.
