- Heat a nonstick pizzelle iron. In a small skillet, toast anise seeds over high heat, stirring, until fragrant, about 1 minute. Transfer seeds to a spice grinder, let cool, and finely grind. Scrape into a medium bowl; whisk together with flour, baking powder, and salt.
- In a large bowl, whisk together eggs and granulated sugar until well combined. Whisk in vanilla and anise extracts. Slowly add cooled butter in a steady stream, whisking continuously, until batter is smooth. Stir in flour mixture until just combined (do not overmix).

- In another medium bowl, briskly whisk the eggs, sugar and melted butter together until smooth and evenly combined.

- 1. Add and beat ingredients together, in order listed. Drop by rounded spoonfull onto center of the pre-heated pizzelle grill. Close lid and immediately clip handles together. Allow to cook till steaming stops..... about 30-60 seconds. Remoove with a fork,onto a wire grill. When cool...Store in an air tight covered container. I have stored mine over a month... this way.... But I think we have a mouse in the house!!! OH! MY! They just seem to dissappear! Next time ..I will count them!!!....HA! When ready to serve, dust with powdered sugar.
- 2. ******CHOCOLATE PIZZELLES: Mix in 3 tablespoons cocoa and 3 tablespoons sugar. Add to basic recipe.

- Whisk the eggs and the sugar until pale yellow, thick and frothy. Add the melted cooled butter and vanilla. Mix to combine. In a separate bowl, whisk the flour and baking powder together. Add to the batter. Mix to combine. Heat the pizzelle press until it's hot. Using two small spoons, place about a tablespoon of batter slightly behind the center of each pizzelle design. The batter will spread forward as it bakes. Bake for a few minutes, just until the pizzelles are slightly golden. Working quickly, wrap the hot pizzelles around a clean marker. You won't be able to shape them into a cylinder if they cool even a little bit, so work really fast. You don't need to use a marker, but it's easier for me that way. Repeat will all the batter. Meanwhile, to make the filling, using a paddle attachment on a standing mixer or using a hand mixer, cream the cream cheese and condensed milk until the mixture is smooth. Add the vanilla. Fold in the Cool Whip or whip up some cream in a separate bowl and fold into the cream cheese. Fill a piping bag with the filling and fill the pizzelle.
AUNT PHILLOMENA'S PIZZELLE
At the holidays, these crisp, simple cookies are stacked everywhere in Italian kitchens. My family was from Abruzzi, and my mother always used the recipe from her older sister. You can scent these cookies with orange, almond or lemon or just vanilla, but we always made plenty with anise at Christmas. You can use a simple stove-top pizzelle maker or an electric one. I prefer the kind without a non-stick coating. A little shot of cooking spray or a wipe with some cooking oil helps prime the press. Like pancakes, you will probably throw away the first one.

In another large bowl, whisk the eggs, granulated sugar, maple sugar, vegetable oil and maple extract until well combined.
