PIZZA STUFFED BREADSTICKS

16 ounces pizza dough
1 cup tomato sauce
1 heaping cup shredded mozzarella
¼ cup grated Parmesan, plus more for sprinkling
4 ounces thinly sliced pepperoni
1 tablespoon minced oregano
"Everything" seasoning

Steps:

  • Preheat oven to 425˚F.
  • Lightly flour a clean surface and roll dough out to a 12"x18" rectangle.
  • Lightly drizzle the surface of the dough with tomato sauce and evenly spread onto a thin layer. Sprinkle half of the mozzarella and Parmesan on only half of the dough and top the cheese with pepperoni.
  • Top pepperoni with the remaining cheese and minced oregano and carefully fold the half of the dough with just tomato sauce on top of the other half of the dough.
  • Firmly press the open sides with the back of a fork to seal the sides shut.
  • Cut the dough into long sticks and carefully transfer onto a baking sheet, gently twisting each stick as you transfer them.
  • Top each stuffed breadstick with extra Parmesan and "everything" topping and bake for 15 to 20 minutes or until golden brown and the cheese is bubbling out of the sides.
  • Allow breadsticks to cool, about 10 minutes. Serve with a side of tomato sauce, ranch dressing or garlic butter.

Made from 6 ingredient homemade pizza dough, these easy cheesy breadsticks are a completely irresistible side dish or snack. You can freeze half of the dough for another night. Only 15 minute bake time!

1 lb store-bought or homemade pizza dough*
2 Tablespoons (30g) unsalted butter, melted
1 teaspoon garlic powder or 2 minced garlic cloves
1 teaspoon Italian seasoning blend or dried basil
1 and 3/4 cups shredded mozzarella cheese*
optional: sprinkle of cornmeal for dusting the pan
optional: marinara or pizza sauce for dipping

Steps:

  • Prepare pizza dough through step 3. Punch the risen dough down to release the air bubbles. Divide in half. (Make a pizza with the other half or freeze half of the dough for another time. See dough recipe for freezing instructions.)
  • Preheat oven to 425°F (218°C).
  • On a lightly floured work surface or on a piece of parchment paper or a silicone baking mat sprinkled with cornmeal (I skipped the optional cornmeal in the video above), roll the dough out into a 9×13 inch rectangle. The dough will want to be round, so do your best to shape it into a thin rectangle around this size- doesn't have to be perfect.
  • Combine the butter, garlic, and Italian seasoning together in a small bowl. Brush over shaped dough. Cover evenly with shredded cheese.
  • Bake for 12-15 minutes or until the edges are golden brown. If desired, turn the oven to broil for the last minute to really brown the top.
  • Slice into breadsticks and serve plain or with marinara sauce. Cover leftover breadsticks tightly and store in the refrigerator for up to 1 week. Reheat as you prefer. Baked breadsticks can be frozen up to 3 months.

2 tubes (11 ounces each) refrigerated breadsticks
1/2 pound sliced fresh mushrooms
2 medium green peppers, chopped
1 medium onion, chopped
1-1/2 teaspoons Italian seasoning, divided
4 teaspoons olive oil, divided
1-1/2 cups shredded cheddar cheese, divided
5 ounces Canadian bacon, chopped
1-1/2 cups shredded part-skim mozzarella cheese
Marinara sauce

Steps:

  • Unroll breadsticks into a greased 15x10x1-in. baking pan. Press onto the bottom and up the sides of pan; pinch seams to seal. Bake at 350° until set, 6-8 minutes., Meanwhile, in a large skillet, saute the mushrooms, peppers, onion and 1 teaspoon Italian seasoning in 2 teaspoons oil until crisp-tender; drain., Brush crust with remaining oil. Sprinkle with 3/4 cup cheddar cheese; top with vegetable mixture and Canadian bacon. Combine mozzarella cheese and remaining cheddar cheese; sprinkle over top. Sprinkle with remaining Italian seasoning., Bake until cheese is melted and crust is golden brown, 20-25 minutes. Serve with marinara sauce. Freeze option: Bake crust as directed, add toppings and cool. Securely wrap and freeze unbaked pizza. To use, unwrap pizza; bake as directed, increasing time as necessary.
