A refreshing change to grilled chicken, very tasty and ideal for something good but fast after a day at work.

2 boneless skinless chicken breasts
1 tablespoon olive oil
2 ounces cheddar cheese
4 cherry tomatoes
2 teaspoons pesto sauce

Steps:

  • Preheat the grill by turning it to high.
  • Sandwich the chicken breasts between two plastic food bags and beat them firmly with a rolling pin or base of a saucepan to flaten them by a third.
  • heat the oil in a non stick frying pan, add the chicken and cook for 2 minutes on each side until golden.
  • Grate the cheese and quarter the tomatoes and mix the two together.
  • Take the chicken out of the pan and wipe out the oil so that it doesn't spit under the grill later.
  • Return the chicken to the pan, spread each with a tsp of pesto, then pile the cheese and tomatoes on top.
  • Put under the hot grill for a minute or so until the cheese has melted and is bubbly.

Quick Pizza Melts image

Pizza toppings are baked inside flaky crescent layers, and then sliced into triangles perfect for dipping in pizza sauce or ranch dressing. Our favorite dip for these melts is ranch dressing with blue cheese crumbles.

Number Of Ingredients 8

2 (8 ounce) cans refrigerated crescent dinner rolls
1/4 cup pizza sauce
1 (3 1/2 ounce) package pepperoni, sliced
2 cups mozzarella cheese, shredded
1 egg, beaten
2 tablespoons parmesan cheese, grated
1 teaspoon dried oregano leaves
1 cup pizza sauce, if desired (optional)

Steps:

  • Heat oven to 375°F Grease cookie sheet. On cookie sheet, unroll 1 can of dough into 1 large rectangle. With floured rolling pin or fingers, roll or press dough into 12x9-inch rectangle, firmly pressing perforations to seal.
  • Spread 1/4 cup pizza sauce over dough to within 1/4 inch of edges. Top with pepperoni and mozzarella cheese.
  • On 14-inch length of parchment paper, unroll remaining can of dough. Press to make 12x9-inch rectangle, firmly pressing perforations to seal. While holding paper with dough, turn dough upside down to cover cheese. Remove paper. Brush with beaten egg. Sprinkle with Parmesan cheese and oregano.
  • Bake 12 to 15 minutes or until golden brown. Let stand on cooling rack 5 to 10 minutes. Move to cutting board. Using pizza cutter, cut into 16 squares. Cut each square in half diagonally. Serve with 1 cup pizza sauce.

A sandwich that goes from the freezer to the microwave & table in less then 3 minutes was perfect for him. They thaw in his lunch bucket so microwave time is usually 1 1/2 minutes just enough to melt the cheese...

1 pkg soft hoagie rolls
3 italian sausages
1/2 yellow onion, diced
1 clove garlic, minced
1 Tbsp olive oil, extra virgin
1 Tbsp italian seasoning
1 tsp oregano, dried
6 slice mozzarella cheese + 1/2c shredded
6 slice provolone cheese
1/2 c parmesan cheese
18 slice pepperoni, sandwich style
SAUCE
1 Tbsp olive oil, extra virgin
1/4 yellow onion, minced
12 grape tomatoes, halved
1 tsp oregano, dried
1 clove garlic, minced
1 bottle pizza sauce

Steps:

  • 1. Split each Italian sausage and remove from casings. Place in skillet on stovetop over medium heat and brown. Add herbs & onion to browned sausage. Add olive oil if needed (there may be enough fat from sausages) saute onion with sausage until cooked through. Add garlic and remove from heat to cool.
  • 2. Sauce: In small sauce pan add olive oil, finely chopped onion, halved grape tomatoes & oregano. Saute until onions are opaque then add minced garlic, saute for 1 minute then add a bottle of pizza sauce. Simmer for 5-10 minutes. Let this cool. The tomatoes will be soft similar to chunky spaghetti sauce.
  • 3. Split the hoagie buns and spread the tomato sauce liberally on both sides of the bun.
  • 4. half each slice of cheese and place provelone on one side of the bun & mozzarella cheese on the other side of the bun.
  • 5. Place sandwich style pepperoni and approximately 2T. of Italian sausage mixture on one side of hoagie bun. Sprinkle with shredded mozzarella & fresh grated parmesean cheese. Close the buns and push them lightly shut.
  • 6. Wrap each sub in wax paper and label with date, sandwich type and microwave instructions as follows: Pizza Sub - Microwave in paper from frozen 2 - 2 1/2 minutes. Then place in gallon ziplock freezer bags and freeze.

1/4 c pizza sauce
1 pkg pepperoni
2 c mozzarella cheese, shredded
1 egg, beaten
2 Tbsp parmesan cheese
1 tsp dried oregano leaves

Steps:

  • 1. Heat oven to 375^ Spray a cookie sheet with non stick cooking spray. Unroll 1 can of dough onto sheet, with floured hands and rolling pin press dough sealing all slits. Make on large rectangle to cover bottom and up sides of sheet.
  • 2. Spread sauce over dough to within 1/4" of the edges. Top with pepperoni and mozzarella cheese.
  • 3. On 14" length of parchment paper, unroll the remaining can of dough. Press to make 12x9 rectangle sealing as you press. Turn dough upside down over the pizza pan to make a sandwich of your pizza. Remove paper.
  • 4. Seal sides to dough that came up the side of pan with the top layer of dough. Brush top with beaten egg. Sprinkle with parmesan cheese and oregano.
  • 5. Bake 12-15 minutes or until golden brown.Let cool for 5-10 minutes. move to cutting, using a pizza cutter, cut 16 squares. Cut each in 1/2 diagonally and serve.

1 package (3.5 oz) sliced pepperoni
2 cups shredded mozzarella cheese (8 oz)
1 egg, beaten
2 tablespoons grated Parmesan cheese
1 teaspoon dried oregano leaves
1 cup pizza sauce, if desired

  • Heat oven to 375°F. Grease cookie sheet.
