AIR-FRIED PIZZA EGG ROLLS

East meets West in this fusion of pizza and egg rolls, plus they're easy enough to make for those midnight cravings.

1 (8 ounce) package mozzarella cheese
1 (10 ounce) package egg roll wrappers
1 cup marinara sauce, divided
10 ounces mini pepperoni
2 tablespoons olive oil, or as needed
2 teaspoons Italian seasoning
1 teaspoon garlic salt

Steps:

  • Preheat an air fryer to 400 degrees F (200 degrees C) according to manufacturer's instructions.
  • Cut mozzarella cheese into 6-inch sticks.
  • Place 1 egg roll wrapper on a flat surface, positioned to look like a diamond. Add 1 teaspoon marinara sauce, 1 mozzarella stick, and 2 tablespoons mini pepperoni to the bottom third of the egg roll wrapper.
  • Roll up the bottom point over the filling, towards the center of the wrapper. Fold in the left side of the wrapper to cover the center. Fold in the right side of the wrapper to cover the left fold, like an envelope. Roll up the egg roll until just the top point is exposed. Brush some water on the top point and fold down. You may need to brush a bit more water over the edges to create a seal.
  • Repeat for the remaining egg rolls. Brush olive oil over the tops. Sprinkle Italian seasoning and garlic salt over the tops.
  • Brush some olive oil over the air fryer basket. Add egg rolls to the basket seam side-down, without letting them touch each other. Reduce the temperature to 360 degrees F (180 degrees C) and air fry for 8 minutes, flipping at the halfway point. Serve with remaining marinara sauce.

1 pound bulk Italian sausage
3/4 cup diced green pepper
1 garlic clove, minced
1 can (15 ounces) crushed tomatoes
1/4 cup tomato paste
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/4 teaspoon sugar
1/8 teaspoon dried rosemary, crushed
Dash pepper
8 ounces cubed part-skim mozzarella cheese
13 egg roll wrappers
1 egg, lightly beaten
Oil for frying

Steps:

  • In a large skillet, cook sausage and green pepper over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in the tomatoes, tomato paste and seasonings. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. Uncover and simmer 10 minutes longer. Remove from the heat; cool for 20 minutes. Stir in cheese., Place 1/3 cup sausage mixture in the center of each egg roll wrapper. Fold bottom corner over filling; fold sides toward center over filling. Brush remaining corner with egg; roll up tightly to seal. , In an electric skillet or deep-fat fryer, heat 1 in. of oil to 375°. Fry egg rolls in batches for 1-2 minutes on each side or until golden brown. Drain on paper towels.

2 rotisserie chicken breasts
1 1/2 cups barbecue sauce
3/4 cup shredded cheddar cheese
3/4 cup shredded monterey jack cheese
1/4 cup sliced scallion, plus more for garnish
12 egg rolls, wrappers
1 small red onion, thinly sliced
1/2 cup fresh cilantro, plus more for garnish
1 large egg, beaten
1 quart vegetable oil (for frying)

Steps:

  • Remove the skin and bones from the chicken and shred into a large mixing bowl. Toss together with 1 cup barbecue sauce, cheeses, and 1/4 cup scallions.
  • To assemble the egg rolls, working one at a time, place the egg roll wrapper at an angle on a clean work surface. Spoon about 2 tablespoons of the chicken mixture in the center. Top with a few slices of red onion and cilantro leaves.
  • Bring the corners into the center, over the filling, and roll into a tight log. Seal the edge with a bit of beaten egg and place on a platter or baking sheet. Continue rolling the rest of the egg rolls in the same manner.
  • Fill a pot or skillet with high sides, halfway up with oil and bring to 365 degrees F. Once hot carefully add a few egg rolls at a time. Fry until golden brown, about 2-3 minutes per side. Drain on paper towels and serve with remaining BBQ sauce and garnish with cilantro and sliced scallions.
