2 (4 inch) pita bread rounds
2 cups torn fresh spinach
¼ cup halved grape tomatoes
3 tablespoons chopped pimento-stuffed green olives
½ cup shredded mozzarella cheese
½ cup crumbled feta cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix lemon juice, garlic powder, oregano, and basil in a bowl; whisk oil into lemon juice mixture until dressing is well blended. Brush about 1 tablespoon dressing over pita breads and arrange on baking sheet; reserve remaining dressing.
  • Combine spinach, tomatoes, and olives in a large bowl. Pour remaining dressing over vegetables and toss to coat. Divide spinach mixture evenly over each pita; sprinkle with mozzarella cheese and feta cheese.
  • Bake in the preheated oven until cheese is melted and pitas are lightly toasted, about 8 minutes.

2 pocket pitas, each split into 2 rounds
2 tablespoons olive oil
2 cups shredded scamorza cheese (you can also use mozzarella)
1 Roma tomato, thinly sliced
Garlic salt, for sprinkling
Fresh basil leaves, for topping

Steps:

  • Preheat the oven to 400 degrees F.
  • Brush both sides of each pita round with a liberal coating of olive oil and place all 4 rounds onto a baking sheet. Sprinkle the shredded cheese in an even layer on each pita. Place a single layer of tomato slices on top of the cheese and sprinkle garlic salt over top of each.
  • Bake until the bottoms are golden brown and the pitas are crispy, 15 to 20 minutes. Top with fresh basil.

1 tablespoon extra-virgin olive oil, plus more for brushing and drizzling
Kosher salt and freshly ground pepper
3 cups baby arugula
1/2 cup pitted kalamata olives, roughly chopped
1 tablespoon fresh rosemary, roughly chopped
1 large red onion, cut into 1-inch-thick rounds
4 6-to-8-inch pocketless pitas
1/2 cup ricotta cheese
1/4 pound part-skim mozzarella cheese, diced
Pinch of red pepper flakes

Steps:

  • Core the tomatoes and halve them crosswise, then squeeze the juices and seeds into a large bowl. Whisk in 1 tablespoon olive oil and season with salt and pepper. Add the arugula but don't toss; set aside. Dice the tomatoes and toss in a separate bowl with the olives and rosemary.
  • Preheat a grill to medium high. Brush the onion rounds with olive oil and season with salt. Grill until soft, 3 to 4 minutes per side. Transfer to a plate and separate the rings. Reduce the grill heat to medium.
  • Brush both sides of the pitas with olive oil and grill until marked, 2 to 3 minutes per side. Top with some of the tomato-olive mixture, ricotta, mozzarella and onion. Cover and grill until the cheese melts, 2 to 3 minutes.
  • Toss the arugula with the dressing and pile on top of the pitas. Season with salt and the red pepper flakes and drizzle with olive oil.

two 6-inch whole-wheat pita loaves
3 tablespoons olive oil plus addition for brushing the pita rounds
1 1/3 cups grated mozzarella
1 small red onion, sliced thin
2 garlic cloves, minced
1 small red bell pepper, sliced thin
1 small green bell pepper, sliced thin
3/4 cup thinly sliced zucchini
4 mushrooms, sliced
1 teaspoon crumbled dried oregano
2/3 cup chopped seeded fresh tomato
3 tablespoons shredded fresh basil leaves
3 tablespoons freshly grated Parmesan

Steps:

  • Halve the pita loaves horizontally to form 4 rounds, arrange the rounds, rough sides up, on a baking sheet, and brush the tops lightly with the additional oil. Sprinkle the rounds with salt to taste and toast them in the middle of a preheated 350°F. oven for 5 minutes, or until they are pale golden and crisp. Sprinkle half the mozzarella onto the rounds and bake the rounds for 1 minute, or until the mozzarella is melted. While the rounds are toasting, in a large skillet cook the onion and the garlic in the remaining 3 tablespoons oil over moderately low heat, stirring, until the onion is softened, add the bell peppers, and cook the mixture, stirring, for 4 minutes, or until the peppers are softened. Add the zucchini, the mushrooms, the oregano, and salt and pepper to taste and cook the mixture, stirring, for 2 minutes, or until the zucchini is softened. Stir in half the remaining mozzarella and divide the mixture among the rounds, mounding it slightly. Top the rounds with the remaining mozzarella, the tomato, the basil, and the Parmesan and broil the rounds under a preheated broiler about 4 inches from the heat for 3 minutes, or until the cheeses are melted and bubbly.

1 teaspoon salt
1 large sweet red pepper, halved and sliced
1 medium onion, halved and sliced

1 medium onion, finely chopped
1 medium red bell pepper, finely chopped
2 tablespoons tomato paste
8 ounces 90 percent lean ground beef

1/2 cup plain 2 percent Greek yogurt
1 tablespoon plus 2 teaspoons red wine vinegar
4 whole-wheat pocketless pitas
1 head green-leaf lettuce, torn into pieces
1/2 cup pickled beets, cut into bite-size pieces
1 small cucumber, peeled and cut into half moons

Steps:

  • Position a rack in the upper third of the oven and preheat to 400 degrees F. Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the onion and bell pepper and cook, stirring occasionally, until golden, 6 to 8 minutes. Add the tomato paste and cook, stirring, until brick red, 1 minute. These are inexpensive, easy, quick to put together and can be served room temp or right out of the oven. Cut into wedges like small pizza slices. They never last long and you can really use any toppings. I like to make my own hummus, but it isn't difficult if you want to make your own. But I get a small container which is enough for about 8 pitas for under $3, a roasted red pepper hummus right from the grocery store so why not. Then my favorite toppings are black or kalamata olives, goat or feta cheese, carmelized onions, fresh basil, fresh baby spinach, diced tomato or sundried tomatoes. You can add anything. Just lightly toast in the oven top, cook again for just 5 minutes and done! Slice like a pizza and serve. Great easy treats.

1 1/2 cups hummus you want about 3 tablespoons per pita bread (I prefer roasted red pepper)
3 tablespoons olive oil

1 cup sliced black olives (kalamata olives are also great, use your favorite)
1 1/2 cups feta cheese (goat cheese is great as well)
1 cup tomatoes, seeded and chopped (I used plum tomatoes)
2 cups Baby Spinach
1 tablespoon dried Italian seasoning
1 teaspoon black pepper
2 tablespoons olive oil
1 tablespoon balsamic vinegar
scallion, carmelized onions, sauteed onions, sauteed mushrooms, arugula, basil

Steps:

  • Pitas -- Brush with a little olive oil, salt and pepper on each pita. Lightly toast in a 400 degree oven until slightly brown.
  • Top -- Top with hummus, then your favorite toppings. I like olives, baby spinach, tomatoes, feta, a little black pepper and some Italian seasoning. But NOTE -- you can add any of your favorite toppings.
  • If you add onions, mushrooms, peppers, zucchini, artichokes, etc., I pan saute lightly first so they are pre-cooked before adding to the pizza. The pizzas are only cooked a few minutes so just have everything ready.
  • Bake -- Another 5 minutes in the oven, just to heat everything up and soften the cheese.
  • Finish -- Mix the balsamic vinegar and olive oil and just simply drizzle over the top after it comes out of the oven. Perfect finishing touch. Just cut in Pizza slices and serve. I like to use my pizza cutter and 6 slices per pita.
  • ENJOY a very simple inexpensive quick appetizer.

1 cup feta cheese
1/2 teaspoon dried Italian seasoning
Zest of 1 lemon
Kosher salt and freshly ground black pepper
1 tablespoon olive oil
8 ounces ground sirloin
Four 6-inch pitas
2 tablespoons sliced fresh mint (about 2 sprigs)
10 pitted black olives, halved
1 plum tomato, cut into 1/4-inch slices
1/4 small red onion, thinly sliced

Steps:

  • 1. Preheat a grill on medium-low heat. Using a fork, mix together the feta, 1/3 cup warm water, 1/4 teaspoon of the Italian seasoning, the lemon zest, 1/2 teaspoon salt and 1/2 teaspoon pepper in a small mixing bowl until the mixture comes together and the feta is in small chunks. Set aside.
  • 2. Heat the oil in a large nonstick skillet over medium-high heat. Add the sirloin, the remaining 1/4 teaspoon Italian seasoning, 1/2 teaspoon salt and 1/4 teaspoon pepper and cook until the meat is no longer pink and begins to brown, 2 to 3 minutes. Drain any liquid off and set aside.
  • 3. Spread the feta mixture on the pitas and top with the cooked meat. Place a large piece of nonstick foil directly onto the preheated grill. Place the pitas on the foil, cover and grill until the bottoms begin to char and the cheese melts, about 3 minutes. Remove from the heat and sprinkle with the sliced mint, olives, tomatoes and onions. Serve warm.

6 ounces lean ground beef or lamb
1/4 cup finely chopped onion
2 cloves garlic, minced
1 8-ounce can Muir Glen™ tomato sauce
1 teaspoon snipped fresh rosemary or 1/4 teaspoon dried rosemary, crushed
2 6-inch whole wheat pita bread rounds
1/2 cup shredded reduced-fat mozzarella cheese (2 ounces)
1/2 cup shredded fresh spinach
1 medium tomato, chopped
1/4 cup crumbled reduced-fat feta cheese (1 ounce)
12 pitted kalamata or ripe olives, quartered

Steps:

  • Preheat oven to 400°F. In a medium nonstick skillet, cook ground beef, onion, and garlic until meat is browned; drain off fat. Stir tomato sauce and rosemary into meat mixture in skillet. Bring to boiling; reduce heat. Simmer, uncovered, for 2 minutes.
  • Carefully split pita bread rounds in half horizontally; place pita halves, rough sides up, in a single layer on a large baking sheet. Bake for 3 to 4 minutes or until lightly toasted.
  • Top toasted pita bread with meat mixture; sprinkle with mozzarella cheese. Bake for 2 to 3 minutes more or until cheese is melted. Remove from oven. Top with spinach, tomato, feta cheese, and olives. Serve immediately.

4 pita breads (6 inches in diameter)
1/2 cup roasted garlic-flavored or regular hummus
1 cup crumbled feta cheese (4 ounces)
1 small onion, sliced
2 cups shredded spinach
1 large tomato, seeded and chopped (1 cup)
1/4 cup sliced ripe or Kalamata olives

Steps:

  • Heat oven to 400°F. Place pita breads in ungreased jelly roll pan, 15 1/2x10 1/2x1 inch.
  • Spread hummus on each pita bread. Sprinkle with cheese.
  • Bake 8 to 10 minutes or until cheese is melted. Top each pizza with onion, spinach, tomato and olives.

GRILLED CHORIZO, GOAT CHEESE, AND WATERCRESS PITA PIZZAS



Grilled Chorizo, Goat Cheese, and Watercress Pita Pizzas image

14 ounces fresh pork or beef chorizo sausages, plastic casings removed
4 cups (packed) watercress tops, divided
8 ounces soft fresh goat cheese, crumbled
8 5- to 6-inch-diameter pita breads
Olive oil
3 mini sweet peppers (1 yellow, 1 orange, and 1 red), cut into thin rings

Steps:

  • Prepare barbecue (medium heat). Sauté chorizo in large skillet over medium-high heat until cooked through, breaking up with spoon, about 8 minutes. Transfer chorizo to sieve set over bowl and drain. Mix 2 1/2 cups watercress and goat cheese in medium bowl.
  • Lightly brush 1 side of each pita bread with oil. Grill, oiled side down, until bottom is just crisp, about 2 minutes. Transfer to work surface, grilled side up. Cover each pita bread with cheese mixture, chorizo, and several sweet pepper rings, dividing equally.
  • Return pita pizzas to barbecue. Grill, covered, until goat cheese softens, about 2 minutes. Transfer pita pizzas to serving platter. Top each with more watercress and serve.

1 cup chunky salsa
1/2 cup shredded reduced-fat Mexican cheese blend
5 tablespoons fat-free sour cream
2 green onions, sliced

Steps:

  • In a nonstick skillet, cook beef over medium heat until no longer pink; drain. Place pitas on a baking sheet. Spread with refried beans; top with beef, salsa and cheese. , Broil 4 in. from the heat for 3-5 minutes or until cheese is melted. Top with sour cream and onions.
