PISTACHIO AMBROSIA

Steps:
- Drain fruit cocktail, pineapple and oranges, reserving 3 cups juice. Set fruit aside; pour juice into a 4-qt. bowl. Add pudding mix and mix until smooth. Stir in sour cream. Add whipped topping and mix until smooth. Fold in fruit; chill for several hours. Top with pecans just before serving if desired.

This is a different version of Ambrosia with a touch of the green for St. Patty's Day. A hand me down recipe from a company pot luck. Cook time is time needed for chilling.

- In medium bowl mix together both cans of pineapple.
- Sprinkle pudding mix over pineapple and let sit about 3 minutes.
- Add nuts and coconut.
- Blend in whip topping and marshmallows, combining well.
- Cover and chill at least 2 hours.

PISTACHIO AMBROSIA CUPCAKES
The light fluffy ambrosia salad on top of a simple cupcake is simply delicious. These are cute, cool and look almost too pretty to eat but grab a fork and dig in. The cherry on top is the perfect touch.These cupcakes would be fabulous for a summer or spring potluck. What a fabulous idea!

- 1. Bake cupcakes according to directions, let cool completely before adding topping.
- 2. In large bowl toss all other ingredients.
- 3. Top each cupcake with about 2 tablespoons of topping.

AMBROSIA USING PISTACHIO PUDDING
Steps:
- Mix cans of pineapple and mandarin oranges with juice in a large bowl. Sprinkle instant pudding mix lightly on top and let stand for 3 minutes.
- Mix pineapple mixture well with large metal spoon and add sour cream. Stir in coconut and marshmallows, then add Cool Whip and stir in gently.
- Put in a large glass serving bowl and refrigerate for at least 1 hour or up to 24 hours. Can decorate with marshmallows or fruit before serving.

- 1. Take cans of pinapple (with juice) and dump into a medium mixing bowl.Sprinkle the pudding mix over the pineapple and let it sit for a couple of minutes to be absorbed.
- 2. Gently fold in the coconut and nuts. Add whipped topping and marshmallows. Don't overmix!
- 3. Place in the refrigerator for at least an hour or so before eating.

PISTACHIO AMBROSIA
From Taste of Home. One of my DH's favorites.....This recipe makes a large amount which is great if you need to take it somewhere to share. It's great for potlucks/covered dish dinners - I usually make it and set some aside at home for my DH and still have plenty to share. Or, I halve the recipe if I'm making it just for us at home. Substitute the lighter versions of sour cream and whipped topping and you have an an almost guilt-free dessert.
