This comes from Prince Edward Island Canada, (home of Anne of Green Gables fame.) It is a colorful blend of beans and carrots with a nice crisp texture. Posted for the Zaar World Tour to Canada, 2005.

3/4 cup whole frozen yellow beans, thawed, rinsed in warm water and drained
3/4 cup frozen green beans, thawed, rinsed in warm water and drained
1 cup frozen baby carrots, thawed, rinsed in warm water and drained
4 slices smoked bacon
2 tablespoons cider vinegar
1/2 teaspoon sugar
1 tablespoon Worcestershire sauce
1/4 teaspoon dry mustard
2 drops Tabasco sauce (optional)

Steps:

  • Dice the smoked bacon and cook in a sauté pan until crisp.
  • Drain crisp bacon on dry paper towels and reserve 2 tablespoons of Bacon Fat in a bowl.
  • Mix the remaining ingredients into the Bacon Fat.
  • In a hot pan, add the vegetables and heat until warm, stirring often.
  • Add the Bacon Fat mixture and the crisp Bacon.
  • Stir well in the pan and serve immediately.

This is a Taste of Home recipe with lots of delicious taste. I made this for my mom and I for lunch and we were slurping up the dressing. :) I put the recipe as written, but my changes are in parentheses.)

1 1/2 lbs asparagus spears, trimmed and cut into 2 inch pieces
2 small tomatoes, cut into wedges
3 tablespoons cider vinegar
3/4 teaspoon Worcestershire sauce
1/3 cup sugar
1 tablespoon grated onion (I used green onion)
1/2 teaspoon salt
1/2 teaspoon paprika
1/3 cup vegetable oil (I used canola)
1/3 cup sliced almonds, toasted
1/3 cup crumbled blue cheese (I really think this enhances the flavor) (optional)

Steps:

  • In large saucepan, bring water to oil. Add aspargus; cover and cook for 3-5 minutes or until crisp-tender. (I steamed my asparagus in the microwave.) Drain.
  • Add tomatoes; cover and keep warm.
  • In a blender, combine vinegar, Worcestershire sauce, sugar, onion, salt and paprika; cover and process until smooth. While processing, gradually add oil in a steady stream.
  • Pour over asparagus mixture and toss to coat.
  • Transfer to serving bowl; sprinkle with almonds and blue cheese if desired. Serve warm.

I got this recipe from LoversDream, a Zaar chef, who gave me permission to post this. I did make some changes, but it tastes so fresh and there's that sweet vinegar flavor all through it.

2 cups fresh cauliflower florets
2 cups fresh broccoli florets
2 large carrots, sliced into thin coins
1 large cucumbers or 2 small cucumbers
1/2-1 cup cherry tomatoes
1/2-1 red bell pepper, sliced into strips and halved
2 green onions, chopped (whites and greens)
1 cup distilled white vinegar
1 cup sugar
1/2 cup canola oil
1 tablespoon water
salt & pepper, to taste

Steps:

  • Mix all prepared vegetables in a large serving bowl.
  • In a small bowl, mix the vinegar, sugar, oil and water together.
  • Pour vinegar mixture over vegetables and combine thoroughly.
  • Season with salt and pepper; cover and refrigerate for at least 6 hours.
  • Drain and serve.

4 baking potatoes
2 tablespoons butter, melted
salt
1 tablespoon fresh parsley, chopped (or thyme)
1/4 cup cheddar cheese, grated
2 tablespoons parmesan cheese, grated

Steps:

  • Scrub potatoes.
  • Cut, crosswise, into thin slices, using the handle of a wooden spoon to prevent knife from cutting all the way through.
  • Put potatoes in a baking dish; fan slightly. Drizzle with butter.
  • Sprinkle with salt and herbs.
  • Bake potatoes in 425°F (220°C) oven for 50 minutes.
  • Remove from oven.
  • Sprinkle with cheeses.
  • Bake 10-15 minutes longer or until lightly browned and cheeses are melted.

This colcannon recipe came from a Prince Edward Island, Canada, cookbook, if I remember correctly. I do not know the title to it or if it is still in print. There are many different recipes for colcannon, but this one is my favorite, the only one I make now.

3 -4 medium potatoes, peeled and cut in quarters
2 tablespoons milk or 2 tablespoons light cream
1/4 teaspoon salt
1/8 teaspoon pepper
2 cups chopped cabbage
2 tablespoons butter or 2 tablespoons margarine
1/4 cup chopped onion
2 tablespoons butter (for frying)

Steps:

  • Cook potatoes in boiling water till tender; drain, reserving water.
  • Place in a large bowl.
  • Mash with hand masher till well-mashed.
  • (I find the electric mixer makes it too gooey).
  • Add milk, salt and pepper and beat till fluffy.
  • In the same saucepan as potatoes were cooked in, cook cabbage in reserved potato water for 6 to 8 minutes, until tender.
  • Drain.
  • Meanwhile, melt 2 tablespoons butter in frying pan and saute onion until tender.
  • Add mashed potato and cooked cabbage to the onion.
  • Heat throughly, stirring constantly.
  • Place in a heated serving dish.
  • Serve hot, topped with butter.
