This is a requirement at an Southern tea, shower or bridal luncheon. You can top almost any type of bread with this, but Hawaiian bread or a 7 grain is really good. Slice the sandwiches into small triangles to serve.

- Place tea bags and bring to boil.
- Add 2 cups of boiling water.
- Add fresh mint leaves.
- After 10 minutes remove tea bags and mint leaves.
- Add sugar or sweetener.
- If you use fresh pineapple: Blend with the food processor the pineapple together with the iced water. If you prefer a clear drink, filter this juice. Add to the tea.
- If you use pineapple juice: Simply add pineapple juice and water to the tea.
- Add lemon juice, stir well and refrigerate.
- Serve it cold.

RICE PUDDING WITH GREEN TEA APPLE SORBET AND CHILI PINEAPPLE
Steps:
- In a saucepan, heat the cream to a boil and add the rice, sugar, orange zest, cardamom pods, and vanilla bean. Stir rice mixture until it becomes thick and creamy. Cook for approximately 15 minutes.
- To make the chili pineapple, melt the sugar in a saute pan and caramelize. Add the pineapple slices and cook for approximately 3 minutes. Add the butter and the chili powder and cook an additional minutes. Set aside until ready to use.
- Combine the green tea and sugar in a saucepan and heat the mixture to dissolve the sugar completely in order to make a syrup. Add the apple puree and allow the syrup to cool completely. Add the egg white and process the sorbet in an ice cream machine. Store in freezer until ready to use.
- To make the tuilles, whip together the egg whites, egg, confectioners' sugar, and bread flour until they are blended well and smooth. Fold in the orange and lemon zest and allow the batter to rest overnight in the refrigerator. Spread the batter onto a greased and floured pan into half dollar sizes and bake for a couple of minutes until edges just begin to turn brown. Immediately remove from oven and allow to cool flat.
- To serve, spoon rice pudding on plate and top with chili pineapple slices. Using 2 tuilles, create a sandwich with a sorbet scoop between the tuilles. Place on plate and serve.

- Combine milk and 2 teaspoons pineapple juice in a bowl and let stand.

- Place the boar in a bamboo steamer. Line wok with foil and mix tea, rice and sugar together and place on foil. Place the bamboo steamer over the wok. Cover and seal with wet towel. On low heat, smoke the mixture for 20 to 30 minutes then turn off heat and let stand for 20 more minutes. Meanwhile, in a stock pot coated with oil, saute the onions, carrots, celery and garlic. Add the smoked boar. Season and add the soy, sugar, wine, and water, to cover. Check for seasoning and bring to a simmer. Simmer for 1 1/2 to 2 hours until meat is extremely tender. Burkina Faso, also known by its short-form name Burkina, is a landlocked country in west Africa. The tea is called Bissap a La Bonne Dame in Burkina Faso, Africa, and enjoyed everyday in the hot weather. Chilled hibiscus tea is light and refreshing. - Pour boiling water over hibiscus flowers or teabags.
- Let steep about 30 minutes. Hibiscus looks so pretty as the purplish dried leaves turn the water deep red.
- Strain into ice to speed up cooling.
- Serve chilled with chunks of freshly cut pineapple. You can leave the pineapple out of the drink if you like, but it's so good and cold, don't leave it out!
- If you like, mix equal parts lemonade with the tea. Yum.

- In a large pot bring 6 cups water and 1 cup sugar to boiling. Add 4 regular size tea bags (or 2 family size; regular or decaf) and boil for 5 minutes.
- Remove tea bags and reduce heat to low. Add 1 large can orange juice concentrate, stirring lightly to help it melt. Once orange juice is incorporated, add 1 can unsweetened pineapple juice, 6-7 sticks of cinnamon, and 1 tablespoon whole cloves. - Chop the skin and core left over from the small pineapple (as used in our pineapple passion bundt cake), plus 1 scraped vanilla pod and put in a pan. Add 600ml water or just enough to cover the fruit and vanilla. Bring to the boil, then cover and simmer for 30 mins, after which the pineapple will be soft and the liquid reduced. Remove from the heat, add 1 English Breakfast tea bag, then steep for 5 mins, or longer if you like. Strain, then sweeten with 1 tbsp golden syrup. Cool, then serve over ice. Will keep in the fridge for up to three days.
