When having a BBQ I like to include fruits and vegetables. This is a pineapple recipe that is great along side grilled chicken or brats. The sweetness is heavenly and the grilling subsides some of the strong acid the fruit yields

1 large ripe pineapple
1/3 c butter or margarine
1/3 c honey
2 Tbsp lime juice
1/4 tsp ground ginger

Steps:

  • 1. Remove leafy top of pineapple and reserve for garnish
  • 2. Cut pineapple lengthwise into 8 wedges. Slash pineapple with sharp knife verticle slashes 1 inch apart down to but not thru skins
  • 3. Heat butter in small saucepan on grill until melted. add honey, lime juice and ginger
  • 4. brush cut surfaces of pineapple with butter mixture and place on grill. Grill 15 minutes, turning every 5 minutes and brushing with butter mixture.
  • 5. place reserved top in center of serving platter and lay grilled wedges around for a nice presentation. ENJOY !

1 large ripe golden pineapple, peeled, cored and cut into 8 to 10 wedges
Good olive oil
1/4 cup honey

Steps:

  • Prepare a charcoal grill with a single layer of hot coals.
  • When the grill is ready, brush the pineapple wedges lightly with the oil and place them on the grill. Cook for 6 to 8 minutes per side until nicely charred and lightly colored. Remove to a serving plate and drizzle with honey.

1 pineapple
1 cup apricot jelly
2 tablespoons light brown sugar
1 tablespoon unsalted butter
1 tablespoon ground cinnamon
Pinch of salt
Vanilla ice cream, for serving

Steps:

  • Prepare a grill for medium heat.
  • Cut the pineapple in half lengthwise from the very top to the bottom (keeping the leaves on). Then cut each half lengthwise in half again, so you have 4 long pieces with leaves at one end.
  • Add the jelly, brown sugar, butter, cinnamon and salt to a medium saucepan over medium-low heat. Cook, stirring, until the mixture is fully combined and liquid.
  • Brush the pineapple with some of the mixture (reserve the remaining mixture), transfer to the grill and grill 3 to 4 minutes per side. Remove to a platter and, using a sharp knife, cut the bottom ends off each piece of pineapple. Then, carefully cut lengthwise from the bottom to the top of each piece along the skin (separating the fruit from the skin), and then crosswise into 1-inch pieces.
  • Drizzle the remaining apricot mixture over the pineapple. Serve with vanilla ice cream.

HONEY GRILLED PINEAPPLE

1 fresh pineapple, peeled and sliced
1/4 c honey

Steps:

  • 1. Pare off the outside of the pineapple and cut into slices. You don't really need to core it- just don't eat the center.
  • 2. Brush a grill grate with oil, then grill pineapple slices a couple minutes on each side, just enough to warm and char lightly, brushing with a little honey.
  • 3. Drizzle with a little more honey before serving if you like.

  • Combine syrup and butter; set aside. Quarter the pineapple lengthwise, leaving top attached. , Moisten a paper towel with cooking oil; using long-handled tongs, rub on grill rack to coat lightly. 2 teaspoons ground cinnamon
1 pineapple - peeled, cored, and cut into 6 wedges

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Whisk brown sugar and cinnamon together in a bowl. Pour sugar mixture into a large resealable plastic bag. Place pineapple wedges in bag and shake to coat each wedge.
  • Grill pineapple wedges on the preheated grill until heated through, 3 to 5 minutes per side.
