2 cups cooked rice
2 cups cubed fully cooked ham
1 can (20 ounces) crushed pineapple, undrained
1/2 cup packed brown sugar
1 tablespoon lemon juice
1 teaspoon ground mustard

Steps:

  • In a bowl, combine all of the ingredients. Spoon into a greased 1-1/2-qt. baking dish. Bake, uncovered, at 350° for 25-30 minutes or until heated through.

This easy dish is perfect for using up leftover rice and comes together in a flash. White rice is stir-fried with garlic, ginger, veggies and ham before getting tossed with chunks of sweet pineapple.

3 tablespoons canola oil
3 cups cooked and cooled white rice (leftover rice is perfect)
1 clove garlic, finely chopped
1 teaspoon grated fresh gingerroot
3/4 cup thinly sliced green onions
1/2 cup diced carrot
1/2 cup diced ham
2 eggs, beaten
2 teaspoons soy sauce
1/2 cup diced fresh or canned pineapple

Steps:

  • Have ingredients chopped, diced and ready to go, since this goes quickly once you get started.
  • In 12-inch skillet or wok, heat oil over high heat until hot and shimmering. Add rice, breaking up with wooden spoon as you stir to coat rice in oil.
  • Add garlic and gingerroot; cook 60 seconds before adding green onions, carrot and ham. Stir to combine. Push rice to one side; pour in eggs. Scramble eggs while gradually stirring into rice until eggs are fully cooked. Season with soy sauce. Remove from heat; fold in pineapple.

2 tablespoons oil
2 eggs, slightly beaten (can use more)
2 slices bacon, coarsely chopped
1 small finely chopped onion
3/4 cup cooked small shrimp
3/4 cup diced ham
4 green onions, including tops, finely chopped
4 cups cooked cold long-grain rice
2 tablespoons chicken broth
2 tablespoons soy sauce
2 teaspoons sesame oil
2 slices chopped pineapple, drained and diced
1/4 cup chopped unsalted cashews (optional) or 1/4 cup almonds (optional)
salt & freshly ground black pepper, to taste

Steps:

  • In a wok or a large skillet over medium-high heat, add oil, swirling to coat the sides of wok.
  • Pour in eggs, tilting pan to coat; cook just until the eggs are set; remove from pan and allow to cool slightly then cut into pieces.
  • Add more oil to the wok swirling to coat sides.
  • Add in the bacon; cook for 1 minute or until the bacon is limp and translucent.
  • Add in shrimp, ham, green onions and rice until well blended.
  • Stir in broth, soy sauce, sesame oil and salt; cook and toss for 2 more minutes, or until the rice is heated; remove from heat.
  • Add in the chopped pineapple, egg pieces and nuts (if using) toss to mix.
  • Season with black pepper and salt.
  • Place in a serving bowl.

3 tablespoons ginger-flavored soy sauce
3 tablespoons fresh lemon juice
1 whole smoked ham, cut into 1-inch cubes
1 green pepper, 1-inch dice
1 red pepper, 1-inch dice
1 yellow pepper, 1-inch dice
1 red onion, 1-inch dice
1 white onion, 1-inch dice
16 to 24 (1-inch) cubes fresh pineapple
8 to 10 wooden skewers
Basmati Rice, recipe follows
1 mango, cut into 1/2-inch cubes
1/4 head red leaf lettuce, chopped
2 tablespoons minced fresh parsley leaves, for garnish
4 cups water
2 cups basmati rice
2 to 4 tablespoons butter

Steps:

  • Combine the soy sauce and lemon juice in a medium non-reactive bowl. Evenly coat the ham cubes with the soy mixture. Heat a medium pan over high heat, and then add the ham and cook for approximately 25 minutes, or until golden brown. With a slotted spoon, remove the ham from the pan. Make the kebabs by alternating the ham with the peppers, onions, and pineapple cubes on the wooden skewers. Serve over Basmati Rice, and garnish each plate with the mango, lettuce, and parsley.
  • In a medium saucepan, bring 4 cups of water to a boil over high heat. Add the rice to the pan, and reduce the heat to low. Cook the rice for 20 minutes, or until tender yet firm, and all of the water has been absorbed. Gently stir in as much butter as desired for flavoring. Place the kebabs on top of the rice.
