1 recipe pastry for a 9 inch double crust pie
¾ cup white sugar
3 tablespoons cornstarch
1 (20 ounce) can crushed pineapple with juice
1 tablespoon lemon juice
2 tablespoons milk
1 tablespoon white sugar

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a medium saucepan combine sugar, cornstarch, pineapple with juice, and lemon juice. Cook over medium heat, stirring constantly until thickened, then allow to boil 1 minute.
  • Cool slightly and pour mixture into pastry-lined pie pan. Cover with top crust and seal. Make a few steam vents in crust, then brush with milk and sprinkle with sugar. Place in preheated oven and bake for 35 minutes. Serve chilled or at room temperature.

1 can (14 ounces) sweetened condensed milk
1 can (8 ounces) crushed pineapple, undrained
1/4 cup lemon juice
1 carton (8 ounces) frozen whipped topping, thawed
1 graham cracker crust (9 inches)
Optional: Chopped toasted macadamia nuts and additional crushed pineapple

Steps:

  • Combine milk, pineapple and lemon juice; fold in whipped topping. Pour into prepared crust. Refrigerate until serving. If desired, serve with toasted macadamia nuts and additional crushed pineapple.

Someone asked about a 2 crusted pineapple pie and I happen to have one from the Country Woman Magazine the July/Aug. 2001 issue. This was a prize winning recipe by Kathy Cron of Alaska. This recipe later posted in the Taste of Home Recipes with this photo..Enjoy! The winner said the golden crust and drizzle combined with the coconut adds a tropical accent to the tangy pineapple inside... We enjoy this pie at our house hope you like it.

20 ounce(s) can crushed pineapple, drained, reserve juice, for another recipe
3/4 cup(s) flaked coconut
1 cup(s) granulated sugar
1/4 cup(s) all purpose flour
1/4 teaspoon(s) salt
1 1/2 tablespoon(s) lemon juice, fresh
1 teaspoon(s) lemon zest, grated
1 tablespoon(s) butter, melted
GLAZE
1/2 cup(s) powdered sugar
1/4 teaspoon(s) rum extract
2 tablespoon(s) reserved pineapple juice

Steps:

  • Make Crisco pie crust for 2 crust pie. Line 9-inch pie pan with bottom pastry; trim even with pan. Sprinkle the coconut on the bottom. Set aside.
  • Heat oven to 400^. In a small saucepan, combine sugar,flour,salt, lemon juice, butter and pineapple. Bring mixture to a boil and cook for 1 minute. Spread over coconut in pie shell. Roll out remaining pie crust to fit on top; place over filling. Trim, seal and flute edges. Cut slits in top. Add decorative cutout on top ,if desired.
  • Cover edge of crust with foil lightly.Bake for 5 minutes; turn oven temperature to 350^ and bake for 25 minutes. Remove foil; and bake for 10 minutes longer or until crust is golden brown. Cool on wire rack. Combine glaze ingredients and drizzle over cooled pie. Serve with vanilla bean ice cream...delicious! Store any leftover pie in the fridge.

¼ cup cornstarch
2 (20 ounce) cans crushed pineapple, drained with juice reserved
1 ½ cups white sugar
¼ teaspoon salt
4 egg yolks
pastry for a (10 inch) double crust pie

Steps:

  • Dissolve the cornstarch in 1/4 cup of the reserved pineapple juice. Combine the drained pineapple, sugar, salt, egg yolks, cornstarch mixture, and 1 cup of the reserved pineapple juice in a large saucepan. Cook and stir over medium heat just until the mixture has thickened slightly and turned shiny. Do not boil. Remove from heat, and cool 15 minutes.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Line a 10-inch pie plate with half of the pastry. Pour the cooled pineapple mixture into the crust. Top with second crust, and seal and crimp the edge. Use a fork to poke holes in the top crust in a few places.
  • Bake in preheated oven until the crust is golden brown, about 35 to 40 minutes. Cool before serving.

I have had this recipe for years.I have changed the type of apples and made one crust and topped with cool whip instead of whipped cream. Arrange the apples in a circle, it shows through the glaze and place the cool whip in the center.

7 granny smith apples, peeled, cored, wedges or 7 cups tart apples
3/4 cup white sugar
1 1/2 cups unsweetened pineapple juice
3 tablespoons cornstarch
1 tablespoon margarine
1/2 teaspoon vanilla
1/4 teaspoon salt
1 pie crust, baked, cooled
whipped cream or Cool Whip

Steps:

  • In large pot add 1 1/4 cup pineapple juice and sugar. Bring to a low boil, add apples.
  • Simmer about 4 minutes, apples should be tender but not soft.
  • With slotted spoon take out apples and drain in colandar, have a dish underneath to catch liquid.
  • In small bowl, add 1/4 cup pineapple juice and cornstarch. Stir to dissolve.
  • Add to hot pineapple mixture, stirring until thickened. Turn the heat down when thickening. Should be clear and not milky.
  • Take off the heat. Stir in margarine vanilla and salt. Cool about 30 minutes, do not stir. Take any juice drippings from apples and stir into mixture.
  • Pour half of the mixture in the pie shell covering bottom.
  • Arrange apples in the circle around the shell. Spoon other half over the applies, smooth with the back of a spoon. Chill.Before serving top with whipped cream or cool whip in the center.
  • Optional Serving: Place 8 slices of Kiwi fruit on top of pie for 8 servings.

This recipe is is easy and fast to make. Fresh cut pieces of pineapple with a pineapple glaze in a graham cracker crust. My mother asked me to make her a fresh Pineapple pie,so I made this one up specially for her.

4 c fresh cut up pineapple
1 1/2 c water
3/4 c sugar
2 Tbsp cornstarch
3 Tbsp pineapple gelatin
1 graham cracker pie crust
scoop(s) whipped cream, sweetened,optional
1 tsp lemon juice

Steps:

  • 1. Boil together water,sugar and cornstarch for 1 min.
  • 2. Remove from heat and add gelatin and lemon juice.
  • 3. Cool glaze for 10 minutes and add pineapple.
  • 4. Pour into pie crust and refrigerate for 2 hours before serving.
  • 5. Serve with whipped cream(optional) is good either way.
