PINEAPPLE DREAM DESSERT

Pineapple dream is one of those perfect potluck desserts. Cream cheese, pineapple, whipped cream and graham crackers, yum!

2 1/2 cups graham crumbs (2 sleeves)
1/2 cup unsalted butter
2 cups powdered sugar (sifted)
1/2 cup unsalted butter (softened)
4 oz cream cheese (softened)
8 oz Cool Whip (fat-free)
20 oz crushed pineapple (drained well)

Steps:

  • Preheat oven to 300 F.
  • Melt butter in the microwave and allow to cool. Combine the crumbs and butter and toss together until incorporated. Press 2 cups of the crumb mixture firmly into an 9×9 square pan and bake for 8-10 minutes. Place on wire rack to cool.
  • Beat the cream cheese and butter together until creamy. Turn the mixer down to low and add the powdered sugar one cup at a time until incorporated. Turn up and beat well for a minute or so. Add a heaping tablespoon of the drained pineapple and stir in with a rubber spatula. Spread the cream cheese and pineapple mixture over the crust.
  • Fold the remaining pineapple into the Cool Whip and spread on top of the cream cheese mixture. Sprinkle the remaining graham cracker crumb mixture on top. Refrigerate for at least 4 hours, preferably overnight.

I received this recipe at a meeting for diabetics many years ago. I've shared this dessert with many friends on restricted diets.

Number Of Ingredients 9

1 cup reduced-fat graham cracker crumbs (about 5 whole crackers)
3 tablespoons butter, melted
1 package (.3 ounce) sugar-free lemon gelatin
1 cup boiling water
3 cups 1% cottage cheese
Sugar substitute equivalent to 7 teaspoons sugar
2 teaspoons cornstarch
1 tablespoon water
1 can (8 ounces) unsweetened crushed pineapple, undrained

Steps:

  • In a bowl, combine cracker crumbs and butter. Press into an ungreased 9-in. square dish. Refrigerate until firm. , In a bowl, combine gelatin and water; stir until dissolved. Cool to room temperature. In a blender, combine the cottage cheese and sugar substitute; cover and process until smooth. Slowly add gelatin mixture and blend until smooth. Pour into crust. Refrigerate until firm. , Meanwhile, in a saucepan, combine cornstarch and water until smooth. Add pineapple. Bring to a boil. Cook and stir for 2 minutes or until thickened. Cool to room temperature. Spread over gelatin layer. Refrigerate for at least 1 hours before serving.

1/4 cup lime gelatin powder
1/2 cup cream-style cottage cheese
1 cup whipped topping

Steps:

  • In a small saucepan, bring pineapple to a boil over medium heat. Remove from the heat; stir in gelatin until dissolved. Chill until slightly thickened, about 30 minutes. Stir in cottage cheese and whipped topping. Cover and refrigerate until thickened.

This recipe was passed down by my mother. We serve it often, but especially at Christmas and Thanksgiving. Of course, the green color makes it nice for St. Patrick's Day, too. With the marshmallows, pecans and whipped cream, the sweet salad can even be served as a light dessert. I like to cook for both small groups and large crowds. When our entire family gets together for thanks and feasting, it's a wonderful time!

2 cups boiling water, divided
1 package (3 ounces) lime gelatin
16 large marshmallows
3 ounces cream cheese, softened
1 can (8 ounces) unsweetened crushed pineapple, undrained
1 cup heavy whipping cream, whipped
1 cup chopped pecans
2 to 3 drops green food coloring, optional

Steps:

  • In a bowl, add 1 cup boiling water to gelatin; stir 2 minutes to completely dissolve. In a small saucepan, combine marshmallows and remaining water; cook over low heat until blended, stirring occasionally. Stir into gelatin. Refrigerate until partially set., In a large bowl, beat cream cheese until smooth. Beat in pineapple. Fold in gelatin mixture, whipped cream, pecans and, if desired, food coloring. Pour into a 6-cup mold coated with cooking spray. Refrigerate, covered, until set. Unmold onto a serving plate.

This is a great recipe my mom got from my aunt. She has made it every year for Thanksgiving. It is a family tradition for us. It can be made a day or two ahead of time, if you like. It looks just beautiful in a cut crystal bowl. Thanksgiving is not the same without it for us! We just 'gobble' it up! Chopped walnuts can be substituted for chopped pecans.

1 cup boiling water
1 (6 ounce) package lime flavored Jell-O® mix
1 (20 ounce) can crushed pineapple, drained with juice reserved
1 (8 ounce) package cream cheese, softened
2 cups heavy cream
1 cup chopped pecans

Steps:

  • In a large bowl, pour 1 cup boiling water over the gelatin mix. Stir until dissolved, then stir in 1/2 cup pineapple juice. Refrigerate until thickened but not set, about 1 hour.
  • Meanwhile, place crushed pineapple and remaining juice in a small saucepan. Bring to a boil, reduce heat, and simmer for about 5 minutes. Remove from heat, and cool to room temperature.
  • In a large bowl, blend softened cream cheese and lime gelatin until smooth. Mix in the cooled pineapple. In a medium bowl, whip cream until soft peaks form. Fold into gelatin mixture. Fold in chopped nuts. Pour into a pretty crystal bowl, and refrigerate for at least 4 hours, or until set.

ORANGE-PINEAPPLE DELIGHT

I was just tickled with this recipe. Many years ago I had a similar recipe that used fresh strawberries and strawberry jello; it was very pretty and very tasty and I was sad when I lost my copy. But I like orange-pineapple even more than strawberries, so this recipe, found in a Jell-O cookbook, is a newfound treasure! Serve as a sweet salad, or a dessert. Perfect for a potluck or bbq.

1 (20 ounce) can crushed pineapple, undrained
cold orange juice, as needed
1 1/2 cups boiling water
1 (6 ounce) package orange gelatin (or 2 3oz pkgs)
1 (8 ounce) package cream cheese, softened

Steps:

  • Drain pineapple well, reserving juice.
  • Place pineapple juice in a 2-cup measuring cup and add enough cold orange juice to make 1 1/2 cups liquid.
  • Place orange jello in a large bowl and add boiling water; stir at least 2 minutes or until jello is completely dissolved.
  • Stir pineapple/orange juice into jello.
  • Reserve one cup of the jello mixture; leave this at room temperature.
  • Stir half of the crushed pineapple into jello mixture in bowl; pour into a 6 cup mold that you've sprayed with nonstick cooking spray (like Pam).
  • Refrigerate mold about two hours, or until set but not firm-- mixture should stick to your finger when touched, and should mound.
  • Place cream cheese into mixing bowl and stir in reserved gelatin (what you've been keeping at room temp); whisk well until smooth.
  • Stir in remaining crushed pineapple; spoon this mixture over gelatin layer in mold.
  • Refrigerate for 4 hours or until firm; unmold and serve.

1 package (6 ounces) lemon gelatin
3 cups boiling water

1 carton (16 ounces) frozen whipped topping, thawed
3/4 cup sugar
3 tablespoons lemon juice
3 tablespoons water
2 tablespoons all-purpose flour
2 large egg yolks, lightly beaten

Steps:

  • Drain pineapple, reserving juice. Dissolve gelatin in water; add pineapple. Pour into a 13x9-in. dish coated with cooking spray; chill until almost set, about 45 minutes. , In a bowl, beat cream cheese and whipped topping until smooth. Carefully spread over gelatin; chill for 30 minutes. Meanwhile, in a saucepan over medium heat, combine sugar, lemon juice, water, flour, egg yolks and reserved pineapple juice; bring to a boil, stirring constantly. Cook until thickened, about 1 minute. Cool. Carefully spread over cream cheese layer. Chill for at least 1 hour.

1 teaspoon vanilla
1 tablespoon icing sugar
1 (19 ounce) can crushed pineapple, drained

Steps:

  • Crust: Mix graham crackers and butter together.
  • Press into 9 x 13 inch pan.
  • Bake in 250f degree oven for 15 minutes.
  • Cool.
  • Filling: In a bowl, cream together butter and icing sugar.
  • Add eggs and beat well.
  • Spread over cooled crust.
  • Bake in 350f degree oven for 25 minutes.
  • Cool.
  • Topping: Beat together whipping cream, vanilla and icing sugar until stiff.
  • Fold in pineapple.
  • Spread over filling.
  • Sprinkle extra graham wafer crumbs on top for a finishing touch.
  • Chill.
  • Cut into squares and serve.
