- Drain pineapple, reserving 2 Tbsp. juice; set aside. Combine sugar and butter in 13x9-inch pan. Arrange pineapple slices in pan, cutting if necessary to fit. Place cherry half, cut-side up, in center of each slice. Sprinkle with reserved pineapple juice, then nuts.
- Beat remaining ingredients with mixer until blended; pour over ingredients in pan.

- 1. Mix the cake mix, water, oil, and eggs together, as directed on the cake mix box. Bake the cake in a 13 x 9" baking dish, using the temperature & time suggested on the cake mix box. Remove from oven and cool.
- 2. Drain the pineapple well. (I actually squish it with a wooden spoon, just a little, so the cake won't get soggy.)
- 3. Spread drained pinepple over the cooled cake.
- 4. In a blender (or using a bowl & mixer), mix together the cream cheese, pudding mix, and milk until well-blended. Pour over the pineapple on the cake...
- 5. ...and smooth the pudding evenly over the cake.
- 6. Refrigerate at least 30 minutes until the pudding is set. Then frost with Cool Whip.
- 7. Refrigerate again until ready to serve. (If there are any leftovers, refrigerate them, too.) I wish this photo showed the whole slice of cake. Silly JAP editing! =^..^=

This cake was inspired by my grandmother. She made a similar cake but only with pineapple, yellow cake mix, and a Jiffy frosting she mixed with the pineapple juice. She always said she had to let it sit for several days for the pineapple juice to absorb into the cake properly. I never made the one she did, but altered the recipe...

- 1. Prepare cake mix as instructed by box. Bake and cool completely. While cake is cooling, In a medium bowl, mix icing, drained pineapple, and cool whip together to make Icing. Mix lightly... Make sure pineapple isn't to wet or icing might run. You can always add back reserved pineapple juice to moisten if it's to stiff. Set in refrigerator to cool until cake is ready. When cakes have completely cooled you can either make it a 2 layer or cut them in half to make a four layer cake as I do. Put first layer on cake stand and spoon on reserved pineapple juice, making sure to stay away from the edges because we still have to ice the cake. Put only enough to moisten the layer, don't soak it!!! Take your premade icing from fridge and frost first layer. Make sure you save enough for each additional layer or you can double the icing recipe just in case or if you like extra icing. Continue with each additional layer, moistening it with juice, and then icing.*** Sprinkle with shredded coconut if desired. Cover and place in the refrigerator for at least three days. I have ate it right after it was made and I tasted the eggs too much, so wait! It will be worth it... Plus three days gives it enough time to soak up all the juices and makes a wonderfully moist cake with a light and not to sweet icing. Keep it refrigerated...

- Preheat oven to 350 degrees F (175 degrees C). Grease and line with waxed paper two 8 inch cake pans.
- Drain and reserve syrup from pineapple. Add enough water to syrup to make 1/2 cup liquid. Place liquid in small saucepan, and mix in cornstarch. Cook and stir over medium heat until thickened, about 2 minutes; stir in reserved pineapple. Spoon filling into a small bowl. Cover with plastic wrap, and refrigerate until chilled.
- Whisk together flour, baking powder, and salt in a small bowl.
- In large bowl, cream the butter or margarine. Add 1/2 cup sugar, and beat until fluffy. Beat in egg yolks and vanilla. Add flour mixture alternately with milk in two parts, mixing after each addition. Spread batter into prepared pans. Sprinkle with all but 2 tablespoons macadamia nuts.
- In another bowl, beat egg whites until soft peaks form. Gradually add remaining 1/2 cup sugar, and beat until stiff peaks form. Spread egg whites evenly over batter.
- Bake for 35 minutes, or until tester inserted in the center of the layers comes out clean. Remove from oven; cool in pans on wire racks. Loosen edges with spatula and turn out of pans. Peel off waxed paper. Place one layer, cake side down, on plate. Spread with pineapple filling. Place second layer, meringue side down over filling.

- 1. 1st Layer. Melt 1/2 cup of butter and mix with graham wafer crumbs. Press into 9 1/2 X 12 inch pan. Place in refrigerator or freezer.
- 2. 2nd Layer. Mix together 1/4 cup of soft butter with confectioners sugar and pineapple juice (enough juice to make a soft icing). Spread over 2nd layer (this can be trying), place back in refrigerator.

My Mom used to make this for me when I was a child, as it was my favorite cake. As I grew and became more kitchen savvy, she taught me how to make this cake. It still remains my favorite today and has become a favorite for those who I have made it for.

- Utilizing the water, vegetable oil and eggs, prepare cake in 2 eight, or 2 nine inch, cake pans according to package directions. Completely cool on wire racks.
- Prepare the rum syrup by placing the water and sugar in a small saucepan and bring to a boil, stirring occasionally to dissolve the sugar. Cool and stir in the rum.
- In a bowl, stir dry pudding mix into crushed pineapple and its juice. Gently fold Cool Whip into the pineapple mixture with a rubber spatula.
- Use a long serrated knife to cut the cake layer into two horizontal layers and moisten both sides with up to one half of the rum syrup. Spread the layers with a thin layer of the apricot preserves.
- Reassemble the two cut layers and place them on a cake plate. Top with 1 cup of the frosting.
- Repeat the rum syrup and apricot preserve process with the second cut cake layer and place it on top of the frosted bottom layer. Frost sides of cake lightly then top cake with remaining frosting mixture.
- If desired, garnish cake with pineapple slices or chunks and maraschino cherries taking care to drain them and dry them off on paper towels before adding them to the cake.
- Chill until serving time and store leftovers in refrigerator.

- While the cake layers are cooling, spoon the Cool Whip into a large bowl. Add the pudding mix and the pineapple and stir well to make the frosting.
- Frost each layer and the sides of the cake. Keep refrigerated until you are ready to enjoy it.
