AMAZING PINEAPPLE CRANBERRY SAUCE
This is a variation on classic, fresh Ocean Spray® cranberry sauce! My grandma has made it for years and people who don't like cranberry sauce request that I make this at our events! It's different and great! This is a nice change of pace. and I've yet to meet anyone who doesn't like it! Tastes best if stored in refrigerator overnight.

Steps:
- Drain juice from canned pineapple into a measuring cup. Fill the measuring cup with enough water to equal 1 cup liquid altogether.
- Stir pineapple juice mixture and sugar together in a saucepan; bring to a boil, stirring constantly. Add cranberries and return to a boil. Reduce heat to low and simmer until cranberries burst, about 10 minutes.
- Mix pineapple chunks into cranberry mixture. Cool to room temperature before serving.

DELICIOUS CRANBERRY-PINEAPPLE SAUCE
This goes back a long time, and I still make it to serve with a turkey dinner. It is one of my favorite cranberry recipes, and is always enjoyed by everyone. Serve this at your holiday dinner table and you will receive rave reviews! You can make this up to a week in advance.... this has the perfect balance of sweet and tart with the the right texture! No need to double the recipe this makes close to 6 cups, plan ahead the sauce needs to chill for 24 hours before using and you may omit the walnuts if desired

Steps:
- Drain the pineapple thoroughly in a fine sieve set over a large measuring cup (push the pineapple against the sieve to drain out any extra juice).
- Add enough water to the measuring cup (with the juice in it) to make 2 cups liquid.
- Place the liquid in a saucepan.
- Add in cranberries and sugar.
- Stir over medium heat until sugar dissolves and the mixture comes to a boil.
- Continue to boil until most of the berries pop (you might want to keep a splatter screen or a lid over until the berries are finished popping) and the mixture is thick, stirring occasionally (about 10 minutes) remove from heat.
- Add in drained pineapple, walnuts, lemon juice and cloves; mix until well combined.
- Transfer to a bowl and cool to room temperature.
- Cover and refrigerate for 24 hours.
- Delicious!

- Score the ham, making 1/2-in.-deep diamond shapes; insert a clove in each diamond. Place ham in a 5-qt. slow cooker. In a large bowl, combine the pineapple, cranberry sauce, garlic, mustard and pepper; pour over ham., Cover and cook on low for 5-6 hours or until a thermometer reads 140°. Remove meat to a cutting board and keep warm; remove and discard cloves., Transfer sauce to a small saucepan. Bring to a boil. Combine cornstarch and water until smooth; gradually stir into pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Slice ham and serve with sauce.

CRANBERRY PINEAPPLE SAUCE
I used to make this sauce 30 yrs. ago to go with ham. I lost the recipe and this is my re-creation of it. The original recipe used half a can of whole-berry cranberry sauce. I switched it to fresh/frozen berries, making it from scratch.

- 1. In a medium saucepan, bring water and sugar to a boil. Add cranberries. Cook over medium heat for 10 minutes, til the berries pop, stirring constantly.
- 2. Add the pineapple, pineapple juice and nuts. Stir to combine. If you wish to add the nutmeg, do so. Continue cooking for 1-2 minutes. Remove from heat.
- 3. Pour into a serving bowl and serve warm.
- 4. Notes: This is a tangy, not so sweet sauce. It goes great with roast pork, ham, as well as roasted chicken and turkey. Goes great with smoked pork, too. You can use fresh or frozen cranberries to make this sauce. If you use fresh berries, wash and cull them before cooking. If you like a sweeter sauce, add a couple more TBS of sugar. Nuts: I used pecans. Walnuts would work too.

- Place cranberries in colander, rinse and drain. Pick over and discard cranberries as needed.
- Combine sugar and citrus juices in saucepan. Bring to a boil, stirring constantly.
