SOFT AND CHEWY PINEAPPLE COOKIES

Even if you don't care for pineapple, this soft and chewy cookie is fantastic! Mom's recipe (and her favorite, as well). Have to laugh, every time I make them, she CANNOT walk past them without taking one. You can add chopped nuts, too if you are a nut fan :)

Number Of Ingredients 10

1 cup light brown sugar
1 cup granulated sugar
1 cup shortening
2 eggs
1 (20 ounce) can crushed pineapple, drained
1 1/2 teaspoons vanilla
4 cups flour
1/2 teaspoon salt
1 1/2 teaspoons baking soda
1/2 teaspoon baking powder

Steps:

  • Stir vanilla into pineapple; set aside.
  • Cream shortening, sugars and eggs.
  • Add pineapple and stir until well blended.
  • In separate bowl, combine flour, salt, baking soda, and baking powder; mix well.
  • Stir flour mixture gradually into pineapple mixture until thoroughly combined.
  • Drop by spoonfuls onto ungreased cookie sheets.
  • Bake at 350 degrees for 12-15 minutes.

I saw this recipe on the web and thought it looked so good I had to try it immediately - so I did! The results were wonderful. Even my fiance (who swears he doesn't like pineapple) thought they were great. I found a couple of similar recipes on zaar, but not one exactly like this.

1/2 cup shortening
1/2 cup brown sugar
1/2 cup white sugar
1 egg, beaten
2 cups flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1 cup crushed pineapple, drained
2/3 cup chopped walnuts
1/4 teaspoon salt
1/2 teaspoon vanilla

Steps:

  • Preheat oven to 350.
  • Cream shortening and sugars together.
  • Add egg and mix well.
  • Add dry ingredients and mix well Add drained pineapple and mix well.
  • Add nuts and flavoring, mix well (yes, again).
  • Drop by spoonful onto greased baking sheet.
  • Bake for 15-20 minutes.

PINEAPPLE COOKIES

1/2 cup shortening, plus more for pans
1 cup brown sugar
1 egg
1 teaspoon vanilla extract
1 (8-ounce) can crushed pineapple
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/8 teaspoon kosher salt

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease 2 cookie sheets.
  • In a large bowl, using a hand-held electric beater, cream together the shortening and sugar until light and fluffy. Add the egg, beat well, and then stir in the vanilla and pineapple. Combine the flour, baking powder, baking soda and salt in a medium bowl, then gradually stir into the creamed mixture. Drop rounded spoonfuls, 2 inches apart, onto the prepared cookie sheets. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

These cookies are always popular at bake sales. I sometimes use 1 cup of coconut instead of the chopped walnuts.

1 cup shortening
1 cup sugar
1 cup packed brown sugar
2 large eggs
2 cans (8 ounces each) crushed pineapple, drained
2 teaspoons vanilla extract
4 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
1 cup semisweet chocolate chips
1 cup chopped walnuts, optional

Steps:

  • In a bowl, cream shortening and sugars. Add eggs, one at a time, beating well after each addition. Beat in pineapple and vanilla. Combine the flour, baking soda, baking powder and salt; gradually add to creamed mixture. Stir in chocolate chips and walnuts if desired., Drop by rounded tablespoonfuls 2 in. apart onto greased baking sheets. Press down lightly. Bake at 375° for 10-12 minutes or until lightly browned. Remove to wire racks to cool.

This recipe has been in the family for years. I remember making them in the 1960's. They are so good.

1/2 c shortening
1/2 c brown sugar
1/2 c sugar
1 egg
2 c flour
2 tsp baking powder
1/4 tsp baking soda
1 c crushed pineapple , drained, reserve 3 tablespoons juice for icing
2/3 c chopped walnuts
1/4 tsp salt
1 tsp vanilla
ICING:
1 1/2 c powdered sugar
3 Tbsp pineapple juice

Steps:

  • 1. Preheat oven to 350. Cream shortening and sugars together. Add egg and mix well. Add dry ingredients and mix well Add drained pineapple and mix well. Add nuts and flavoring, mix well. Drop by spoonful onto greased baking sheet. Bake for 15-20 minutes.
  • 2. Cool cookies on wire racks. Mix powdered sugar and reserved pineapple juice to make icing. Drizzle icing on cooled cookies.
