Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Thread green bell pepper, onion, chicken, and pineapple onto skewers; brush with barbeque sauce.

I combined a couple of different kabob recipes to come up with this summer grilling mainstay. The marinade does a terrific job of making the chicken and vegetables so tender and tasty.

2 cans (one 20 ounces, one 8 ounces) unsweetened pineapple chunks
1/3 cup Worcestershire sauce
8 boneless skinless chicken breast halves (4 ounces each)
1 package (1 pound) sliced bacon
2 large sweet onions
4 large green peppers
32 cherry tomatoes

Steps:

  • Drain pineapple, reserving juice; set pineapple aside. In a small bowl, combine Worcestershire sauce and reserved juice. Cut each piece of chicken into four strips. Pour 1 cup marinade into a large resealable plastic bag; add chicken. Seal bag and turn to coat; refrigerate for at least 1 hour. Cover and refrigerate remaining marinade for basting. , In a large skillet, cook bacon over medium heat until partially cooked but not crisp. Remove to paper towels to drain; cut in half widthwise. Cut each onion into 16 wedges; cut each pepper into eight pieces. Drain and discard marinade. Wrap a piece of bacon around each chicken strip., On 16 metal or soaked wooden skewers, alternately thread the bacon-wrapped chicken, vegetables and pineapple. Grill, uncovered, over medium heat for 6-8 minutes on each side or until meat is no longer pink, basting frequently with reserved marinade.

8 to 12 bamboo skewers
1 lb boneless skinless chicken breast tenders (not breaded)
1 cup teriyaki sauce or marinade
1 can (8 oz) pineapple chunks, drained
1 red bell pepper, cut into 1-inch chunks

Steps:

  • Soak bamboo skewers in water to cover for 30 minutes. Meanwhile, cut chicken into 1-inch pieces; place in resealable food-storage plastic bag or container. Add teriyaki sauce; seal bag and shake gently to mix. Refrigerate at least 30 minutes to marinate.
  • Heat gas or charcoal grill. Drain chicken, discarding marinade. Thread chicken, pineapple chunks and red pepper pieces onto bamboo skewers in whatever order you wish, dividing evenly among skewers.
  • Place kabobs on grill over medium heat. Cover grill; cook 4 to 5 minutes on each side or until chicken is no longer pink in center. Serve immediately.

1 (20 ounce) can pineapple chunks, drained & reserve 2 Tblsp. juice
3/4 cup teriyaki sauce, Lawry's brand
1 teaspoon dijon-style mustard
4 boneless skinless chicken breasts (cut into 1 inch pieces)
2 bell peppers (cut into chunks)
1 zucchini, cut into slices
12 wooded skewers (12-inch long)

Steps:

  • Reserves 1/4 cup marinade.
  • Combine reserved juice, 1/2 cup marinade and mustard.
  • Pour into sealable plastic bag and add chicken and vegetables.
  • Marinade in refrigerator 30 minutes.
  • Remove chicken and veggies from bag and discard marinade.
  • Thread all ingredients onto skewers.

3 Tbsp brown sugar
1 Tbsp sesame oil
1/4 tsp ground ginger
1 tsp garlic powder
8 boneless chicken breast, cut into 2" pieces
1 20 oz can(s) pineapple chunks, drained
1/2 c your favorite bbq sauce (I love Sunset Gourmet's sweet & spicy brown sugar bourbon sauce)

Steps:

  • 1. In a shallow glass dish, mix the soy sauce, brown sugar, sesame oil, ginger, and garlic powder.
  • 2. Stir the chicken pieces and pineapple into the marinade until well coated.
  • 3. Cover and marinate in the refrigerator for at least 2 hours.

1/4 cup rice vinegar
3 tablespoons olive oil
1 tablespoon fish sauce
1/2 teaspoon sriracha or other hot sauce
3 tablespoons packed dark brown sugar
1/2 teaspoon grated fresh ginger
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
3/4 pound raw cleaned and deveined shrimp
2 cups fresh pineapple chunks (about 18 pieces)
1/2 teaspoon cornstarch

Steps:

  • 1. In a small bowl, combine teriyaki sauce, vinegar, oil, fish sauce, sriracha, 1 tablespoon of the brown sugar and the grated ginger. Combine in a resealable plastic bag with chicken pieces and shrimp. Marinate in the refrigerator at least 30 minutes to 1 hour. 2. Heat grill to medium-high heat. Thread a piece of chicken, a shrimp and a pineapple chunk onto a skewer. Repeat, reserving marinade. 3. Transfer reserved marinade to a small saucepan. 1/4 cup soy sauce
1/4 cup honey
1 tablespoon mustard
1/2 cup brown sugar

2 large boneless, skinless chicken breasts (about 2 pounds)
1 large pineapple, cut into 1 1/2 inch chunks
2 large red bell peppers, cut into 1 1/2 inch pieces
1 large onion, cut into 1 1/2 inch pieces
12 strips of thick cut bacon
1 1/2 cups pineapple juice
1 1/2 tablespoons cornstarch
1/2 cup brown sugar
2 tablespoons soy sauce
1/2 teaspoon salt
6 long skewers

Steps:

  • ~To make the Hawaiian sauce: * Combine all ingredients in a medium saucepan and stir until the cornstarch is dissolved. * Bring the mixture to a boil, reduce the heat to medium and simmer for 2 minutes. * Set-aside until ready to use. ~Thread the skewers. * Weave the bacon around each piece of chicken and pineapple, stick the bell pepper and onion together and weave the bacon around both of those. 1 Tbsp ginger, minced 3 cups white rice, cooked
1/3 cup water 6 skewers, 8-10 inches long

Steps:

  • Place the chicken cubes in a Ziploc bag. Combine remaining ingredients in a bowl and add to the chicken. Let the chicken marinade for several hours. Thread skewers with the marinated chicken. 1 1/2 lb boneless, skinless chicken thighes, cut into 1-inch pieces
12 slice bacon
3 c fresh pineapple chunks (1 inch cubes)
1/3 c hickory-smoked barbecue sauce
1/3 c pineapple preserves
white rice

  • 1. Soak eight short bamboo skewers in water for 30 minutes (or use four long metal skewers). Place chicken on microwave-safe plate and microwave on HIGH for 5 minutes stirring once halfway through cooking time. Cut bacon crosswise into 2-inch long pieces. Thread skewers with chicken, folded bacon, and pineapple chunks, leaving a 1/4-inch space between pieces.
  • 2. Heat grill to medium-high for gas, or prepare charcoal grill with medium-hot coals. Place skewers on grill and cook for 6 minutes; turn and grill for 6 minutes longer.
  • 3. Meanwhile, in small microwave-safe bowl, stir together barbecue sauce and pineappple preserves; microwave on HIGH for 1 to 2 minutes or until warm. Microwave cooked rice following package directions.

1 pound of chicken breast cut up into large bite sized chunks {approx. 1x1 inch pieces}
1 fresh ripe pineapple {You can use canned, but fresh is amazing!} cut into bite sized chunks {approx. 1x1 inch pieces}
1 red onion
1 tsp garlic powder
1 Tbsp brown sugar
1/2 tsp ground ginger
1/2 tsp black pepper
1 Tbsp vegetable oil
2 Tbsp water
1/4 cup low sodium soy sauce {we always use low sodium}

Steps:

  • In a medium sized bowl, combine garlic powder, brown sugar, ground ginger, black pepper, oil, water & soy sauce. Whisk vigorously for 1 minute until combined. Add chicken and mix so all chicken is coated with sauce. Dump entire contents into a gallon sized zip lock bag {or cover bowl with saran wrap} and place in fridge. Marinate for 3 - 4 hours, mixing contents of bag/bowl every hour to ensure even marinade. Place wooden skewers in a pan of water and allow them to absorb the water while chicken is marinading. When chicken is done marinading, slice red onion into large 1 inch pieces. Alternatively, skewer Pineapple, Onions and Chicken until skewers are full, leaving 2" on each end. Spray grill with non stick spray and place skewers on grill. Cook for 10 - 15 minutes or until chicken is done, rotating every 5 minutes to ensure even grilling. Serve immediately over rice.
