PINEAPPLE AND CORIANDER SALSA
This pineapple salsa is ideal for summer barbecues. Serve it as a dip with white corn chips, on top of grilled fish, throughout a salad of prawns or along side any chicken dish. The best time to make this is about 1/3rd of the way into pineapple season as that is when they are at their sweetest and luckily also when summer is in full swing. Should the pineapple be out of season or not sweet enough, a touch of brown sugar may be added at this stage. Retain as much of the pineapple juice as possible when dicing.

Steps:
- Add the coriander and cumin to a small skillet and heat over medium heat. Swirl until the seeds are golden and slightly fragrant, about 3 minutes. Let cool slightly, and finely grind in a spice grinder.
- Combine the spices with the cilantro, rum, jalapeno, onions, red pepper, pineapple, lime juice and zest in a medium bowl. Season with salt and pepper. Refrigerate until chilled, at least 1 hour or overnight. Serve with tortilla chips.

PINEAPPLE SALSA
This is a simple salsa with a bright acidity, one that you could temper with some diced mango if you like. I've called for a single jalapeño. You could use two if you like. Just keep all the flavors in balance - sweet, salty, sour and fiery. It's terrific on pork and with grilled fish, on tacos or as an accompaniment to breakfast eggs.
