Pineapple Coconut Bread is a sweet quick bread that tastes like a tropical paradise! A delicious loaf filled with pineapple and coconut topped with a creamy coconut frosting, this recipe is sure to be one of your new favorites.

2 cups shredded unsweetened coconut
1 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter (softened)
1 cup granulated sugar
3 eggs
1 cup sour cream
20 ounce can crushed pineapple (drained well)
2 cups powdered sugar
2 tablespoons milk

Steps:

  • Preheat oven to 325F.
  • Spread the coconut out on a large cookie sheet and bake at 325F for 4-5 minutes until golden brown, stirring at least once during the baking time. Tip: watch the coconut very closely so it doesn't burn. Set the toasted coconut aside to cool.
  • In a medium mixing bowl, whisk together the flour, baking soda, and salt. Set aside.
  • In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, beating the eggs into the batter well between each addition.
  • Add half of the flour mixture and half of the sour cream and mix well. Add the remaining flour mixture and sour cream, mixing until fully incorporated.
  • Stir in the crushed pineapple (as much of the juice drained off as possible) and 1 cup of the toasted coconut. Pour the batter into a loaf pan that has been greased with non-stick cooking spray. Top with the remaining toasted coconut.
  • Bake the bread at 325F for 60-70 minutes, until a toothpick inserted into the center comes out clean.
  • In a small bowl, combine the powdered sugar and milk. Pour the frosting over top of the bread while it is still slightly warm, but not hot. Cool the bread completely to room temperature, then slice and serve.

1 cup sour cream
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups flour all purpose
1 can (17 ounce) crushed pineapple, drained

Steps:

  • Preheat oven to 350*F.
  • Grease and flour a 9" loaf pan or 4 mini loaf pans.
  • Spread an even layer of coconut on a baking sheet. Bake for 6-8 minutes, tossing occasionally.
  • Beat butter and sugar until light and fluffy, around 3 minutes. Add eggs, one at a time, mixing to combine.
  • Add sour cream, baking soda, and salt until just combined. Then add flour slowly, mixing until combined.
  • Fold in crushed pineapple and 1 cup of the toasted coconut into batter.
  • Fill loaf pans with batter. Sprinkle remaining toasted coconut on top of the batter.
  • Bake a large loaf pan for 65-70 minutes, (mini loaves bake approximately 40 minutes) or until a toothpick comes out clean. Let sit for 15 min . Then remove from pan to a wire rack to cool completely.

Steps:

  • Preheat oven to 325 degrees and spray a loaf pan with baking spray.
  • Spread coconut on a baking sheet and bake for 6 to 10 minutes shaking the tray occasionally.
  • In your stand mixer add the butter and sugar and cream on high speed until light and fluffy for 1-2 minutes.
  • Add the flour, baking soda, and salt into a bowl and whisk together until well mixed.
  • Add eggs, one at a time until fully combined then add in the flour mixture and the sour cream alternating in batches (1/3 of the amount each time).
  • Gently add in the pineapple and 1 cup of the coconut flakes with a spatula.
  • Add the batter to the loaf pan then sprinkle the top with the remaining coconut.
  • Bake for 65 to 70 minutes or until the cake is cooked through (test with a toothpick).

1 cup white sugar
1 cup crushed pineapple with juice
1 teaspoon vanilla extract
2 ½ cups all-purpose flour
3 teaspoons baking powder
½ teaspoon baking soda

½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5x3 inch loaf pan.
