1 (20 oz.) can crushed pineapple in juice
1 (3.4 oz.) package instant coconut cream pudding mix
1/2 cup flaked coconut
1 (8 oz.) tub Cool Whip, thawed
4 ounces cream cheese, softened
1/3 cup granulated sugar
1 (20 oz.) can pineapple tidbits, well drained
2-3 cups miniature marshmallows

Steps:

  • In a large bowl, combine crushed pineapple with juice, pudding mix and coconut. Mix well. Fold in Cool Whip.
  • In a separate bowl, beat cream cheese and sugar with an electric mixer until smooth. Fold into pudding mixture.
  • Fold in pineapple tidbits and marshmallows. Cover and chill until ready to serve.

20 oz crushed pineapple (1 can - do not drain!)
8 oz Cool Whip (1 container - I used lite - thawed)
1 tsp rum extract
2 cups miniature marshmallows
1 cup shredded sweetened coconut
1/2 cup chopped nuts (your favorite)

Steps:

  • Combine pudding mix and the entire can of crushed pineapple in a large bowl.
  • Stir until completely combined.
  • Fold in Cool Whip, rum extract, marshmallows, coconut, and nuts.
  • Chill until ready to served.

1 package (3.4 ounces) instant vanilla pudding mix
1 teaspoon coconut rum or rum extract
2 cups miniature marshmallows
1 cup sweetened shredded coconut, toasted
1/2 cup finely chopped pistachios, toasted
1 carton (8 ounces) frozen whipped topping, thawed

Steps:

  • In a large bowl, combine pineapple, pudding mix and rum. Add marshmallows, coconut and pistachios. Fold in whipped topping. Chill until serving.

1 pineapple
1 cup coconut cream
¼ cup coconut milk
1 cup white rum
3 cups ice
1 lime, juiced
1 pineapple corer

Steps:

  • Using a pineapple corer, core the pineapple and slice the pineapple into chunks.
  • Place the pineapple chunks flat on a baking sheet and freeze solid, about 2 hours.
  • In a blender, add the frozen pineapple, coconut cream, coconut milk, white rum, ice, and lime juice.
  • Place the blender back in the freezer for 20 minutes or until thickened.
  • Blend one more time until fully incorporated.
  • Pour piña colada back into the pineapple.
  • Top with a maraschino cherry.
  • Enjoy!

1 box Betty Crocker™ Super Moist™ white cake mix
3 eggs
1 can (14 oz) coconut milk (not cream of coconut)
2 teaspoons rum extract
1/2 cup flaked coconut
1 can (8 oz) crushed pineapple, drained, 3 tablespoons juice reserved
3/4 cup powdered sugar

Steps:

  • Heat oven to 325°F (for all pans). Spray bottoms only of two 8x4-inch loaf pans with baking spray with flour.
  • In large bowl, beat cake mix, eggs, coconut milk and rum extract with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Stir in coconut and pineapple. Pour into pans.
  • Bake 58 to 63 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Run knife around sides of pans to loosen cakes; remove from pans to cooling racks. Cool 50 minutes.
  • In small bowl, mix powdered sugar and reserved 3 tablespoons pineapple juice. Poke tops of cakes every inch with toothpick. Pour sugar mixture over cakes. Cut each cake into 8 thick slices, using serrated knife. Store loosely covered.
