Cut into the shape of a bat, these spooky sandwiches will be the hit of the Halloween party. Make your own spicy pimento cheese with sharp yellow cheddar cheese, Monterey Jack cheese, mayonnaise, mustard, and pimento peppers.

3 cups grated sharp yellow cheddar (1/2 pound)
1 1/2 cups grated Monterey Jack cheese (1/4 pound)
3 tablespoons mayonnaise
1 tablespoon Dijon mustard
1 jar (4 ounces) pimento peppers, drained and coarsely chopped
32 thin slices pumpernickel or favorite sandwich bread

Steps:

  • In a food processor, combine cheeses, mayonnaise, and mustard and process until smooth. Add pimentos; pulse until incorporated. (To store, refrigerate, up to 2 weeks.) Spread 2 tablespoons pimento cheese on each of 16 slices bread and top with remaining slices. With a cookie cutter, cut sandwiches into desired shape.

2 cups shredded extra-sharp Cheddar cheese
8 ounces cream cheese, softened
½ cup mayonnaise
¼ teaspoon garlic powder
¼ teaspoon ground cayenne pepper
¼ teaspoon onion powder
1 jalapeno pepper, seeded and minced
1 (4 ounce) jar diced pimento, drained
salt and black pepper to taste

Steps:

  • Place the Cheddar cheese, cream cheese, mayonnaise, garlic powder, cayenne pepper, onion powder, minced jalapeno, and pimento into the large bowl of a mixer. Beat at medium speed, with paddle if possible, until thoroughly combined. Season to taste with salt and black pepper.

1 cup Homemade Mayonnaise, recipe follows
1/2 teaspoon finely chopped sage
1 teaspoon fresh lemon juice
1 teaspoon dry mustard
1/4 teaspoon cayenne pepper
1/2 teaspoon Worcestershire sauce
8 ounces Colby cheese, grated (2 cups)
8 ounces sharp Cheddar cheese, grated (2 cups)
1 (4-ounce) jar chopped pimentos, drained
Salt and freshly ground black pepper
1/4 teaspoon hot pepper sauce
Pumpernickel bread, or bread of your choice
3 large egg yolks
1 teaspoon fresh lemon juice
1 teaspoon white vinegar
1 teaspoon dry mustard
1 teaspoon salt
1 teaspoon sugar
Dash cayenne pepper
1 1/2 cups canola oil

Steps:

  • In a medium bowl, combine the mayonnaise, sage, lemon juice, mustard, cayenne, and Worcestershire sauce with a rubber spatula.
  • Add the two cheeses and pimientos, blending thoroughly to combine. Season with salt, pepper, and hot sauce. Refrigerate until ready to use. Spread between 2 slices of bread.
  • In a food processor fitted with the metal blade, a blender, or the jar of mayonnaise maker, combine the yolks, lemon juice, vinegar, mustard, salt, sugar, and cayenne. Pulse several times to blend.
  • With the processor running at high speed, or while quickly dashing the plunger of a mayonnaise maker, very slowly drizzle in the oil, allowing it to fully integrate as added until all the oil has been incorporated.
