Here is a delicious and very simple pesto recipe by Gwyneth Paltrow. It's great as a spread for good bread or crackers! I really love this quick and easy pesto. It's a winner!

Number Of Ingredients 8

1 cup artichoke heart, cooked (canned would be fine, and roughly chopped)
1/8 cup raw pine nuts
1/4 cup extra virgin olive oil
1 small garlic clove, peeled and minced
1/3 cup parmesan cheese, finely grated
coarse salt, a pinch (just a little since the parmesan is salty, you can always add more salt when finished)
fresh ground black pepper, a few grinds
1 -2 teaspoon fresh tarragon leaves, thinly sliced (use as much as you would like, to taste...I like 1 t.)

Steps:

  • Pulse the first 7 ingredients together in a food processor. Stir in the tarragon and season to taste with more salt and pepper, if needed.
  • Enjoy!

I took a couple of my favorite recipes and combined them into these delicious hors d'oeuvres. The colorful and impressive snacks come together easily with refrigerated crescent roll dough, prepared pesto sauce and a jar of roasted red peppers. -Kathleen Farrell, Rochester, New York

1 tube (8 ounces) refrigerated crescent rolls
1/3 cup prepared pesto sauce
1/4 cup roasted sweet red peppers, drained and chopped
1/4 cup grated Parmesan cheese
1 cup pizza sauce, warmed

Steps:

  • Unroll crescent dough into two long rectangles; seal seams and perforations. Spread each with pesto; sprinkle with red peppers and cheese. , Roll each up jelly-roll style, starting with a short side. With a sharp knife, cut each roll into 10 slices. Place cut side down 2 in. apart on two ungreased baking sheets. , Bake at 400° until golden brown, 8-10 minutes. Serve warm with pizza sauce.

1 large brie cheese, round
1 package of prepared pesto sauce
1 jar pine nuts
plum tomato
coacktail bread

Steps:

  • Heat brie at about 300 degrees for 10-15 minutes, until just soft to the touch.
  • At the same time, heat the pine nuts.
  • They are always best toasted just a little.
  • Set the brie on a platter.
  • Cover it with pesto.
  • I don't use the whole package, sot hat more can be added later.
  • Cover this with the pine nuts.
  • I usually hold a few of these back as well.
  • Slice the plum tomatoes and put them around the outside of tray.
  • Put the cocktail bread around the outside of this.
  • Enjoy!

With three main ingredients you can make this gorgeous giant puff pastry pinwheel in no time. Pesto and ricotta fill layers of puff pastry that are cut and twisted into a pinwheel which begs to be pulled apart!

2 sheets puff pastry
2 teaspoons all-purpose flour, or as needed
8 ½ ounces ricotta cheese
8 ½ ounces pesto

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking tray with parchment paper and dust lightly with flour.
  • Lay puff pastry on a flat work surface; cut a 12-inch circle from each sheet. Transfer 1 circle to the prepared baking sheet.
  • Spread ricotta evenly over the pastry circle. Top with an even layer of pesto. Lay the second pastry circle on top. Set a small glass upside down in the middle of the circle.
  • Cut the circle, away from the glass, into 4 equal quarters. Cut each quarter in half, then each eighth in half, to make 16 equal strips. Remove glass. Twist strips twice, two at a time, in the opposite direction. Pinch ends together. Repeat with remaining strips to make a pinwheel shape.
  • Bake in the preheated oven until pastry is browned, 25 to 30 minutes.
