This is a funny name for a great summertime cake. Because this is served cold it's very refreshing on hot days.

Number Of Ingredients 7

1 (18 ounce) box butter recipe cake mix
1 (8 ounce) can mandarin oranges, including juice
1/4 cup oil
4 eggs
1 (15 ounce) can crushed pineapple, including juice
1 (3 1/2 ounce) box instant vanilla pudding
1 (8 ounce) container non-dairy whipped topping

Steps:

  • Blend all cake ingredients and beat three minutes.
  • Bake in greased 9" X 13" pan at 350 for 25 - 30 minutes.
  • Cool throughly.
  • Mix dry pudding with pineapple and juice.
  • Stir in whipped topping.
  • Spread over cake and refrigerate.

CAKE
1 pkg yellow cake mix
1 can(s) mandarin oranges, undrained (11 oz)
1 stick butter, melted
1/4 c vegetable oil
4 large eggs
1 can(s) crushed pineapple (20 oz., juice used to pour over cake and pineapple used for frosting)
FROSTING
12 oz whipped topping, thawed
3.4 oz box of instant French Vanilla or pistachio pudding (I use the French vanilla)
pineapple from can of crushed pineapple
1 - 1 1/2 c shredded coconut

Steps:

  • 1. PREHEAT oven to 350; grease and flour pans.
  • 2. Mix all cake ingredients except pineapple juice on medium for about 3 minutes. This will cause the oranges to break up.
  • 3. Pour into 2 - 9" round cake pans. Bake about 25 minutes or until the knife inserted comes out clean. Cool for 10 minutes.
  • 4. While the cake is still warm, poke holes all over and drizzle with reserved pineapple juice.
  • 5. Mix frosting ingredients well, making sure they are well combined and the pudding mix has dissolved.
  • 6. Frost cake after it has completely cooled.

I wrote in to ask for this recipes, but no one knew it. Well, I found it, and I thought I would share it with you. Very Moist Cake.

1pkg. plain yellow cake mix
1(11oz) can(s) mandarin oranges,undrained
1 stick butter, melted
1 1/2C vegetable oil (such as canola,corn,etc)
4 large eggs
1(8oz.) can(s) crushed pineapple in juice (drained)
FROSTING:
12oz. frozen whipped topping, thawed
3.4oz. pkg pistachio instant pudding mix
1 can(s) coconut, unsweetened
8oz. can(s) pineapple, crushed with juice(drained)

Steps:

  • 1. Place a rack in the center of the oven and preheat the oven to 350oF. grease two 9-inch round cake pans.
  • 2. Place the cake mix,mandarin oranges, and juice(from pineapple),melted butter,oil,and eggs,in a large mixing bowl. Blend with mixer for about 1min. Stop to scrape down the sides of the bowl. Increase speed to medium and beat 2 to 3mins more. Batter should look well blended and the oranges should be broken up in the batter.
  • 3. Divide the batter between the prepared pans, smoothing is out with spatula.
  • 4. Bake until golden brown and spring back when lightly pressed with your finger, 24 to 27 mins.
  • 5. Remove pans and place on wire racks to cool for 10 mins. Run knife around edge on pan,evert onto rack, then evert them again, so that cakes are right side up.
  • 6. While cakes are still warm, poke holes in the top of each layer with a toothpick or wooden skewer. Pour the pineapple juice over the layers so that the cake soaks up all the juice. Let cool for 30 mins.
  • 7. Prepare frosting: Place the thawed whipped topping, pudding mix. coconut, and the drained crushed pineapple in a large mixing bowl. Stir with a wooden spoon until well combined and the pudding mix has dissolved.
  • 8. place one cake layer,right side up,on serving plate. Spread the top with frosting. Place the second layer, right side up, on top of the first layer and frost the top and sides of the cake with clean. smooth strokes.
  • 9. Store this cake, lightly covered in waxed paper, in the refrigerator for up to 1 week.

ICING
1 box vanilla instant pudding
1 can(s) pineapples crushed
1 small tub of whiped cream

Steps:

  • 1. Spray a 9x13 in. pan with bakers secret. Mix cake mix with oil. eggs, and mandarin oranges. Pour into pan. Bake at 350 for 30min. or until toothpick comes out clean. Let cool.
  • 2. In a separate bowl mix pudding with crushed pineapples until smooth. Fold in whiped cream. Spread on cake. Refrigerate until icing is firm then serve.

This recipes is one of my favorites my mom use to make for me. It can also be converted to a diabetic recipe. Yeah!

1 or 2 pound cakes
1 pkg vanilla pudding reg/or sugar free
1 can(s) crused pinapple
1 pt coolwhip
1 bottle maraschino cherries

Steps:

  • 1. You will need a deep glass bowl to put layers in.
  • 2. In one bowl, prepare the vanilla pudding as the directions describe and set aside. You need to make it like an assembly line. Pound Cake, Pudding,crushed pinapple, coolwhip, and cherries.
  • 3. Take a small portion of the pound cake and crubble it in the bottom of the bowl. Spread pudding, pinapple, coolwhip, and cherries. Repeat, Layer layer layer until you are at the top. Cover with plastic wrap and Refridgerate for about 1hour and serve. Easy Peasy!
