A fun and easy appetizer for any party, your guests will love these salty, savory, creamy bites of salami, herbed goat cheese and dill pickle.

12 slices Genoa salami (thinly sliced)
12 baby dill pickles (quartered)
4 ounces Boursin cheese (I used garlic and fine herbs)

Steps:

  • To assemble, stack the salami slices and cut in half to create 24 half moons. Lay each half moon slice of salami out on a flat work surface or cutting board.
  • Using a butter knife, spread a small amount (1/2 teaspoon) of the cheese on each salami half starting in the center, middle.
  • Place a piece of pickle in the center of the salami on top of the cheese and tightly roll into a cone shape. Pierce with a toothpick to keep in place and arrange on a platter to serve.

These are easy and so good, I like to use the dried Italian salami or all beef salami, use mini gherkin pickles also known as cornichons or small dill pickles --- make certain to tell your deli person to slice the salami thin -- I have listed the yield at 36 appetizers that amount is only estimated it will depend on what size you slice the rolls.

12 slices italian salami, thin slices (such as Genoa salami)
1/3-1/2 cup whipped cream cheese with garlic (or use desired flavor)
12 large mini gherkins, drained (pick out the longest pickles from the jar, or use 2 pickles per roll, or you may use small dill pick)
colored toothpick (use as many as needed)

Steps:

  • Spread each slice of the salami with a thin layer of cream cheese to within 1/4-inch of the edges.
  • Place 1 pickle or two small pickles in the center of the salami, then roll up jelly-roll style.
  • Slice each roll into thirds or in half then pierce each piece with a coloured toothpick.
  • Place on a serving platter.
  • Refrigerate until ready to serve.

Okay, don't let the title scare you. THESE ARE GREAT appetizers even though the ingredients are a little strange. I make them all the time for almost any occasion which we need an interesting "snack". Kids really like them because of the pickles. Make sure that when you are rolling them up, that you roll tightly before inserting toothpick.

1 (32 ounce) package of rectangular sliced ham (lunch meat)
1 (8 ounce) package cream cheese, softened to room temp
1/2 cup picante sauce (works better if is not a "chunky" kind)
1/2 cup finely chopped pecans
2 (24 ounce) jars kosher dill pickles

Steps:

  • In medium sized bowl, combine the cream cheese, picante sauce and pecans; blending well.
  • Take one slice of ham and spread a light layer of the cream cheese mixture onto the ham slice.
  • Beginning at one of the short ends, place a pickle and roll up tightly.
  • Once you get to the other end, place toothpicks in approximately 1/2 inch spaces.
  • I use 5 toothpicks per rollup.
  • Slice between toothpicks resulting in bite sized rollup.
  • Refrigerate until time to serve.
