Pickled radishes add a nice flavor to so many things, including salads, noodle bowls, tacos, and brisket sandwiches. They're even great on their own! They're easily customizable with different spices and seasonings. These are ready in minutes, but the flavor only gets better overnight. They will turn a lovely shade of pink the longer they sit. Use a mandoline slicer for quick, even slicing. Will keep for several weeks.

10 radishes, thinly sliced
⅔ cup white wine vinegar
⅓ cup water
1 tablespoon white sugar
1 teaspoon salt
1 star anise pod
½ teaspoon cumin seed
½ teaspoon black peppercorns

Steps:

  • Place radish slices into a pint-sized jar with a lid.
  • Heat vinegar and water in a small non-reactive saucepan over medium heat; whisk in sugar and salt until just dissolved. Remove from heat and add star anise pod, cumin seed, and black peppercorns. Let cool slightly for 5 to 10 minutes.
  • Pour liquid over radishes. Cover and let cool to room temperature, then refrigerate.

1/3 cup plus 1 tablespoon white vinegar
1/2 teaspoon granulated sugar
Kosher salt
1 small red onion, thinly sliced lengthwise
2 small radishes, thinly sliced
1 tablespoon olive oil
4 large poblano peppers, stemmed, halved lengthwise and seeded
1 pound ground pork
2 cloves garlic, grated
1 tablespoon smoked paprika
2 teaspoons chili powder
2 teaspoons ground cumin
6 ounces shredded jack cheese
Cilantro leaves and tender stems, for garnish

Steps:

  • Position a rack on the top of the oven and preheat to broil.
  • Combine the vinegar, sugar, 1 teaspoon salt and 1/3 cup warm water in a mason jar. Cover and shake to combine until the sugar and salt dissolve. Add the onions and radishes and set aside.
  • Drizzle the oil over the peppers, season with 1 teaspoon salt and arrange on a baking sheet cut-side up. Broil on the upper rack of the oven until blistered and softened, 4 to 6 minutes.
  • Mix together the pork, garlic, paprika, chili powder, cumin and 2 teaspoons salt in a large bowl. Transfer to a large skillet over medium-high heat and cook, breaking up the pork into small pieces with a wooden spoon, until browned and cooked through, 5 to 6 minutes. Remove from the heat, drain the excess fat and set aside to cool.
  • Stir half of the cheese into the pork. Distribute the mixture evenly in the cavities of the peppers. Top with remaining cheese and broil until melted and bubbly, 2 to 3 minutes.
  • Top with the pickled onions and radishes. Garnish with cilantro and enjoy!

1/4 cup coarse salt
2 cups cider vinegar
1 cup sugar
1 tablespoon whole black peppercorns
2 teaspoons mustard seeds

Steps:

  • Toss vegetables with 2 tablespoons salt in a large colander set over a bowl, and refrigerate for 1 hour. Rinse well, pat dry, and place vegetables in a clean glass jar or glass bowl. Bring remaining 2 tablespoons salt, the vinegar, sugar, peppercorns, mustard and coriander seeds to a simmer in a small saucepan over medium heat. Simmer for 5 minutes. Pour over vegetables, and let cool for 1 hour. Cover, and refrigerate overnight or up to 3 weeks.

Steps:

  • Combine vinegar, 3/4 cup water, sugar, spices, and 2 tablespoons salt in a saucepan. Bring to a boil, stirring until sugar is dissolved. Fill clean containers tightly with radishes. Add boiling brine to cover completely. Let cool completely. Cover, label, and refrigerate at least 1 week before serving, or up to 3 months.

For the Oysters:
1 1/2 tablespoons olive oil
1/4 cup minced leek (white part)
1 shallot, minced
1 garlic clove, minced
Salt and pepper
6 tablespoons (3/4 stick) unsalted butter, cubed
20 oysters on the half shell (detached from the bottom shells)
For the pickled radishes etc:
1/2 cup minced radishes
1/2 cup minced carrot
1/2 cup minced celery root
3/4 cup rice vinegar
1/4 cup water
1/4 cup sugar
1 tablespoon kosher salt
For the dish:
5 cups rock salt
1/4 cup pickled radishes, carrots, and celery root
2 tablespoons minced chives

Steps:

  • For the Pickled radishes etc:
  • Put the radishes, carrots and celery root in a medium bowl. In a small saucepan, combine the vinegar, water, the sugar and salt. Bring to a boil over high heat, stirring until the sugar and salt are dissolved. Pour the pickling liquid over the radishes, carrots and celery, and cover with a plate to keep them submerged. Let cool to room temperature.
  • Cover the bowl with plaster wrap and refrigerate for about an hour. Transfer the pickles and liquid to a container, cover and refrigerate.
  • For the Oysters:
  • In a medium skillet, heat the oil over medium-low-heat. Add the leek, shallot and garlic and cook until soft, about 7 minutes. Season with salt and pepper and set aside to cool. Meanwhile, make the brown butter. In a small skillet, cook the butter over medium heat, swirling the pan, until the better melts and the milk solids turn golden brown, about 3 minutes. Set aside to cool.
  • Preheat the oven to 450°F, or prepare an outdoor grill and let the coals burn until they turn white.
  • To keep the oysters from tipping, spread the rock salt in a large baking pan and nestle the oyster in the salt, being careful not to spill the juices. With a spoon, gently lift each oyster from the shell, slip about 1/4 teaspoon of the cooked leek mixture into the shell, and set the oyster on top. Drizzle with a little brown butter.
  • Bake in the over or cook on the grill until the oysters are just heated through, about 5 minutes. Top each oyster with a few pieces of pickled radishes, carrots, celery root and chives.

  • In a large saucepan, bring vinegar, beets, salt, sugar, fennel seeds, and 1/2 cup water to a boil, stirring until salt and sugar are dissolved. Remove from heat and let cool slightly. Stir in radishes. Refrigerate, covered, at least 8 hours and up to 1 week before serving.

1kg radishes
140g coarse crystal sea salt
1 tbsp black peppercorns
1 tbsp coriander seeds
1 tbsp yellow mustard seeds
10 cloves
few pieces of mace blades
2 bay leaves
700ml white wine vinegar
150g white sugar
1 thumb-sized piece ginger , peeled and thinly sliced
1 sliced red chilli

Steps:

  • Trim the radishes and halve any larger ones. In a large bowl, mix the coarse crystal sea salt with 300ml boiling water and let it dissolve to make a brining solution. Add 1.2 litres cold water, then the radishes. Cover and leave to soak overnight, then rinse and drain.
  • To make the pickling vinegar, put the whole spices in a medium saucepan. Toast over a low heat until they begin to smell aromatic. Add the mace blades last, as these can easily catch. Add the bay, pour in all of the vinegar and sugar, let it dissolve, and bring to a simmer. Add the ginger and red chilli.
  • Pack the radishes into sterilised jars (see tip below), pour over the hot vinegar, then seal. Ready to eat in 2 weeks, or longer, if you like.

2 bunches radishes , sliced, leaves reserved (see below)
2 tbsp golden caster sugar
1 tbsp white wine vinegar
1 tbsp low-salt soy sauce
1 tbsp brown sugar
1 red chilli , deseeded and sliced
1 tsp clear honey
1 tbsp low-salt soy sauce
1 tbsp rice wine
1 tbsp white wine vinegar
1 tsp five spice powder
2 duck breasts
1 tbsp vegetable oil
leaves from 2 bunches radishes
2 garlic cloves , sliced
1 tsp low-salt soy sauce
1 tsp sesame oil
1 tsp sesame seeds

Steps:

  • Put the radishes in a sieve over a bowl. Sprinkle with the caster sugar and 2 tsp salt, and leave for at least 30 mins or up to 1 hr. Make a dressing by mixing the vinegar, soy sauce, brown sugar and chilli together until the sugar dissolves. Gently press the radishes to release any liquid, then tip them into a bowl and pour over the dressing.
  • Heat oven to 180C/160C fan/gas 4. For the duck, mix the honey, soy, rice wine and vinegar in a small bowl. Slash the skin of the duck breasts and season with salt, pepper and the five-spice powder. Heat an ovenproof frying pan and cook the duck, skin-side down, for 5 mins until golden. Flip over, baste with the honey and soy mix, then put the pan in the oven for 15-20 mins, turning the breasts a couple of times to glaze the skin. Leave the duck in the pan to rest.
  • For the radish leaves, heat the oil in a small wok, add the leaves and garlic, and stir-fry until the leaves are just wilted. Splash with soy, drizzle with sesame oil and scatter with sesame seeds. Serve the duck breasts whole or sliced - it's up to you - with the pickled radishes and the stir-fried leaves.

  • Halve daikon lengthwise, then cut crosswise into 1/4-inch-thick slices. Transfer to a large bowl and toss with radishes and kosher salt. Let stand at room temperature, stirring occasionally, 1 hour.
  • Drain in a colander (do not rinse) and return to bowl.

4 bunches radishes, washed and spit down the middle with a little stem (about 1/2-inch) still attached
1 quart champagne vinegar
1 cup white sugar
1/4 cup pickling spices
2 cloves smashed garlic
2 stems fresh wild fennel (optional if you don't have it, or use 2 tablespoons dried fennel seed)

Steps:

  • Take a large deep dish and lay the radishes out in it. In a large pot add the pickling ingredients and bring to a boil. Remove from heat and pour the boiling mix over the radishes in each dish. Cover tightly with plastic wrap immediately and set aside. Once cooled to room temperature, strain and serve.

  • Spread 1 side of each baguette with 1 Tbsp. mayonnaise, and spread the other side of each baguette with pâté, dividing evenly. Pile pork on bottom halves of baguette, and top with jalapeño, radishes and carrots, and cilantro. Close sandwiches.

2 cups baby turnips, cut in thin wedges (about 1/4 to 1/3 inch at the widest point), or sliced in half-moons
1/2 cup (135 grams) seasoned rice wine vinegar
1 tablespoon (15 grams) sherry vinegar
1/4 cup (50 grams) sugar
1 cup (230 grams) water
2 1/4 teaspoons (10 grams) kosher salt

Steps:

  • Place the turnips in a bowl or jar. 2. In a large bowl, combine the rice wine vinegar, sherry vinegar and sugar. Bring the water to a boil, remove from the heat and add to the vinegar and sugar mixture. Stir until the sugar is dissolved. Add the salt and stir well. Pour over the turnips, cover and refrigerate for at least 2 days before eating and for up to 2 weeks. Shake the jar from time to time or, if you use a bowl, place a saucer on top of the turnips to keep them submerged. Remove from the brine with a slotted spoon to serve. 1 1/2 pounds large shrimp, peeled, deveined

1 tablespoon plus 2 teaspoons gochujang (Korean hot pepper paste)
4 teaspoons unseasoned rice vinegar
1 tablespoon fish sauce
2 teaspoons honey
1 teaspoon toasted sesame oil
2 cups baby mizuna or arugula
2 teaspoons toasted sesame seeds

Steps:

  • Place radishes in a small bowl. Bring white wine vinegar, sugar, red pepper flakes, 1/2 tsp. salt, and 3/4 cup water to a simmer in a small saucepan over medium-high heat and cook, stirring occasionally, until sugar is dissolved, about 5 minutes. Immediately pour brine over radishes and let cool. Cover and chill at least 2 hours.
  • Meanwhile, rinse rice until water runs clear (this removes surface starch and keeps rice from getting gummy). Combine rice and 1 1/2 cups water in a medium saucepan, season with 1 1/2 tsp. salt and let sit 30 minutes.
  • Bring rice to a boil. Reduce heat to low, cover, and cook until rice is tender, 18-22 minutes. Remove from heat and let sit (still covered) 10 minutes, then fluff with a fork; keep warm.
  • Soak hijiki in 1/2 cup cold water in a small bowl until softened, 10-12 minutes. Drain; set aside.
  • Bring a medium pot of water to a boil; season generously with salt. Add shrimp, cover pot, and remove from heat. Let sit until shrimp are cooked through, about 3 minutes. Drain and transfer shrimp to a bowl of ice water; let cool. Drain and pat dry; cut into 1/2" pieces. Set aside.
  • Whisk shallot, soy sauce, gochujang, rice vinegar, fish sauce, honey, and oil in a large bowl. Add reserved hijiki and shrimp to honey-gochujang dressing; toss to coat. Cover; chill 1 hour. Taste and season with more salt if needed.
  • Divide rice among bowls and top with shrimp mixture, drained pickled radishes, and mizuna. Sprinkle with sesame seeds.

  • Radishes can be pickled 5 days ahead; keep chilled. Shrimp can be cooked 8 hours ahead; cover and chill.

This dish was truly the best breakfast I've had in a long time. A toasted slice of bread topped with soft avocado and the unique flavor of pickled radishes. Delicious.

¾ cup white vinegar
¾ cup water
3 tablespoons honey
2 teaspoons salt
1 bunch radishes, cubed
½ teaspoon whole mustard seeds
1 pinch ground black pepper
1 bay leaf
1 pinch coarse sea salt
1 pinch furikake (Japanese nori seasoning)
1 pinch toasted sesame seeds
1 avocado, cut into 1/4-inch dice
2 slices whole-grain bread
1 bunch sprouted cilantro
1 lemon wedge

Steps:

  • Bring vinegar, water, honey, and salt to a boil in a small saucepan. Remove from heat.
  • Put radishes, mustard seeds, black pepper, and bay leaf in a pint jar with a lid. Pour hot vinegar mixture over the radishes. Let the radishes come to room temperature. Cover with lid and place in the refrigerator for at least 2 hours.
  • Mix coarse sea salt, furikake, and sesame seeds together in a small bowl to create the seasoning mix.
  • Toast bread until lightly brown, about 2 minutes. Top each slice with half the avocado. Top avocado with a portion of the pickled radishes. Sprinkle half the seasoning mix over radishes. Place a small handful of cilantro on top. Squeeze lemon over the toast.

2 cups baby turnips, cut in thin wedges (about 1/4 to 1/3 inch at the widest point), or sliced in half-moons
1/2 cup (135 grams) seasoned rice wine vinegar
1 tablespoon (15 grams) sherry vinegar
1/4 cup (50 grams) sugar
1 cup (230 grams) water
2 1/4 teaspoons (10 grams) kosher salt

Steps:

  • 1. Place the turnips in a bowl or jar. 2. In a large bowl, combine the rice wine vinegar, sherry vinegar and sugar. Bring the water to a boil, remove from the heat and add to the vinegar and sugar mixture. Stir until the sugar is dissolved. Add the salt and stir well. Pour over the turnips, cover and refrigerate for at least 2 days before eating and for up to 2 weeks. Shake the jar from time to time or, if you use a bowl, place a saucer on top of the turnips to keep them submerged. Remove from the brine with a slotted spoon to serve. Advance preparation: These benefit from a week or longer in brine and will last for a couple of weeks. Variation: Pickled Radishes This isn't really a variation, though radishes can look a lot like baby red turnips. They're not as pungent and require less time in the brine. Slice the radishes or, if they're large, cut in half-moons. Cover with the brine and eat within a few days. They don't benefit from a long brining period as turnips do.
