So I LOVE pickled okra! Delish salsa bites? Yes, please! So I got a little crazy and wondered what a "Pickled Okra Salsa" would be like... The answer is: SALSA HEAVEN. I used mild okra for this batch but the spicy is total heatwave nirvana too! Pair this with super cheesy chicken nachos, and slice extra okra to use as garnish in place of (or in addition to) jalapeno slices. Your spiciest, most disco taste buds will thank you!!

Number Of Ingredients 7

1/2 large shallot, roughly chopped
1 handful of cilantro leaves
2 cup(s) tomatoes, roughly chopped, i used rainbow snacking tomatoes
1/2 cup(s) okra pickles, mild or spicy, your choice, cut each piece into thirds
1/4 - 1/3 cup(s) pickled jalapeno slices
1 1/2 tablespoon(s) lime juice
1 1/2 teaspoon(s) salt

Steps:

  • Put shallots and cilantro into a food processor and pulse until finely chopped.
  • Add tomatoes, okra, jalapeno, lime juice, and salt. Pulse all ingredients until you reach your desired consistency. (I prefer a chunkier texture but that's just me.)

Number Of Ingredients 7

5 whole pickled okra, sliced
1/2 cup chopped sweet onion
4 teaspoons chopped fresh cilantro
1 teaspoon fresh lime juice
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper
1 (14.5-oz.) can diced tomatoes with mild green chiles, drained

Steps:

  • 1. Pulse first 6 ingredients and half of tomatoes in a food processor 4 to 6 times or until thoroughly combined. Stir in remaining diced tomatoes. Serve immediately, or cover and chill. Store in refrigerator up to 7 days. If refrigerated, let stand at room temperature 15 minutes before serving.
