PICKLE ROLLUPS

A quick finger food that everybody loves, and you can vary the meat according to your taste. My friends like salami or corned beef best.

16 ounces sliced pastrami
2 (8 ounce) packages cream cheese, softened
1 (16 ounce) jar dill pickles, cut into strips lengthwise

Steps:

  • Spread cream cheese over a meat slice to cover. Place a pickle piece on one end, and roll the meat up. Repeat with remaining ingredients. Cut into 1 1/2 inch pieces, and chill until ready to serve.

Here's a quick, great party pleaser I've made for years which has a lot of variability. It's really simple and goes well with beer and soft drinks at neighborhood or family gatherings.

1/2 lb salami or 1/2 lb dried beef
1 (4 ounce) package cream cheese
4 large kosher dill pickles, whole

Steps:

  • Pat dill pickle dry with paper towel.
  • Take 2-3 pieces of meat (depending on size of pickle), and place them on a cutting board overlapping half of each with the next. (If you're lucky, you can find the ham cut in a rectangular shape as opposed to square. In this case, you can use just one slice and it will encase the entire pickle.).
  • Spread cream cheese over meat.
  • (You can use more cream cheese if you like.) Wrap pickle around in blanket fashion.
  • Chill for an hour or two, then slice pickle in~1/2 inch pieces and lay flat on tray.
  • (If using dried beef, you can also put meat in blender and pulverize. Spread cream cheese on dried pickle then roll in pulverized beef. Again, allow to refrigerate 1-2 hours and slice as above.).

OKRA OR PICKLE ROLLUPS

This is a very quick and easy recipe and usually get eaten pretty fast. These internet pictures give you an idea of what these should look like.

1 jar pickled okra, baby dills or pickle spears
1 package of sliced sandwich ham or roast beef (rectangular shaped)
1 container cream cheese and chives spread, room temperature

Steps:

  • 1. Spread a thin layer of the softened cream cheese on 1 side of ham or beef slice.
  • 2. Cut each end off each okra if using.
  • 3. Lay okra or pickle on 1 end of the cream cheese covered ham or beef slice.
  • 4. Roll up and place seam side down on cookie sheet.
  • 5. Refrigerate until firm enough to slice.
  • 6. Slice into 1 1/2 inch pieces.
  • 7. Lay flat on your favorite serving platter, cover with plastic wrap and chill until ready to serve.
