VIETNAMESE FRIED RICE (COM CHIEN)



Vietnamese Fried Rice (Com Chien) image

A delightfully flavorful and easy-to-prepare meal, Vietnamese fried rice calls for simple ingredients and can be ready to eat in less than 30 minutes. Serves four as a main and six as a side.

2 tablespoons neutral cooking oil (divided)
8-10 medium-sized shrimp (150 grams) (peeled, deveined, tail removed, and chopped)
1 small yellow or sweet onion (110 grams) (chopped )
3 Chinese sausages (lap cheong) (diced)
3-4 garlic cloves (minced)
2 cups (300 grams) frozen mixed vegetables (defrosted and drained is best, but frozen will work)
1/2 teaspoon sea salt
1/2 tablespoon granulated sugar
1/2 tablespoon chicken powder
1/2 tablespoon white pepper
6 cups cooked white rice (850 grams) (see notes*)
4 eggs
1-2 teaspoons fish sauce (optional, but recommended!)

Steps:

  • Heat a wok over medium-high heat and add in one tablespoon of oil.
  • Add shrimp, stirring one to three minutes or until cooked through. Remove from wok and set aside. Increase heat to high.
  • Add onion and cook for one minute.
  • Add sausage. Cook and stir for three minutes.
  • Add garlic and cook for one minute.
  • Add veggies and cook for two minutes (if still frozen, three to four minutes to cook off excess water)
  • Add the rice and mix with the veggies. Continue mixing until rice is broken down with no lumps.
  • Add shrimp back in and season with salt, sugar, chicken powder, and white pepper. Mix together well.
  • Push rice to the side and add in the remaining tablespoon of oil. Add the eggs. Stir them until they're half cooked (they should still be mostly liquid with bits of cooked egg), then quickly stir in the rest of the food. Continue to stir for a minute, the egg will continue to cook as it's coating the rice mixture.
  • Remove from heat and stir in the fish sauce, if using. Taste and add extra seasoning if necessary.
  • Enjoy!

QUICK BEEF PHO



Quick Beef Pho image

I wrote this recipe for fast pho because you don't always want to take a whole day to source the ingredients for and make pho from scratch. This is an awesome hack to be eating pho in an hour! You can find all the ingredients locally and even have them delivered. Slicing beef paper thin can be a pain. Japanese and Chinese markets always stock paper-thin meats for shabu shabu or sukiyaki.

2 tablespoons (30 g) beef bouillon or base
1 tablespoon (15 g) Vietnamese fish sauce
1 tablespoon (15 g) white sugar
One (2" [5-cm]) piece ginger, sliced into thin tiles
1/2 yellow onion, large dice
Pinch kosher salt
2 whole cloves
2 whole star anise
1 cinnamon stick
1/2 pound (240 g) thin rice stick noodles, rinsed
1/2 pound (240 g) beef strip loin or fillet, shaved thin
1 cup (240 g) Vietnamese basil leaves
1 cup (240 g) bean sprouts
1/2 cup (95 g) cilantro leaves
5 jalapeno or serrano chiles, sliced thin
4 scallions, sliced thin on the bias
1/2 yellow onion, sliced paper thin
1 lime, cut into wedges
Hoisin sauce, for the table
Chili sauce, such as Sriracha, for the table

Steps:

  • For the Pho Stock: Add the beef base and 1 quart water to a 2-quart (1.9-L) saucepan and bring to a low boil. Add the fish sauce, sugar, ginger, onion and salt to the stock and reduce the heat to a simmer. Wrap the cloves, star anise and cinnamon stick in a piece of cheesecloth and tie it into a satchel. Add the satchel to the broth and simmer for at least 30 minutes, but no more than 45 minutes.
  • Around the 30 minute mark, taste the broth to see that the spice flavors have been extracted, and adjust seasonings if necessary. Strain the aromatics and satchel from the broth, return to a sauce pot, and reserve for assembly.
  • For the assembly: Bring the broth back to a simmer. In a separate pot, bring water to a boil. Using a sieve or basket, quickly dip the noodles into the water until they are hot and al dente, 10 to 20 seconds. Drain the excess water from the noodles and distribute the noodles between 4 bowls.
  • Top each bowl with some sliced beef, basil, bean sprouts, cilantro, jalapeno, scallions and onion, or as each person wishes. Ladle in enough broth to cover the ingredients in the bowl. Garnish with a lime wedge. I like to serve pho with Sriracha and hoisin sauce.

This authentic pho isn't quick, but it is delicious. The key is in the broth, which gets simmered for at least 6 hours.

4 pounds beef soup bones
1 onion, unpeeled and cut in half
5 slices fresh ginger
1 tablespoon salt
2 pods star anise
2 ½ tablespoons fish sauce
4 quarts water
1 (8 ounce) package dried rice noodles
1 ½ pounds beef top sirloin, thinly sliced
½ cup chopped cilantro
1 tablespoon chopped green onion
1 ½ cups bean sprouts
1 bunch Thai basil
1 lime, cut into 4 wedges
¼ cup hoisin sauce
¼ cup chile-garlic sauce (such as Sriracha®)

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place beef bones on a baking sheet and roast in the preheated oven until browned, about 1 hour.
  • Place onion on a baking sheet and roast in the preheated oven until blackened and soft, about 45 minutes.
  • Place bones, onion, ginger, salt, star anise, and fish sauce in a large stockpot and cover with 4 quarts of water. Bring to a boil and reduce heat to low. Simmer on low for 6 to 10 hours. Strain the broth into a saucepan and set aside.
  • Place rice noodles in large bowl filled with room temperature water and allow to soak for 1 hour. Bring a large pot of water to a boil and after the noodles have soaked, place them in the boiling water for 1 minute. Bring stock to a simmer.
  • Divide noodles among 4 serving bowls; top with sirloin, cilantro, and green onion. Pour hot broth over the top. Stir and let sit until the beef is partially cooked and no longer pink, 1 to 2 minutes. Serve with bean sprouts, Thai basil, lime wedges, hoisin sauce, and chile-garlic sauce on the side.

For those of you who enjoy that pho taste, this recipe gives you a creative twist while keeping those authentic Vietnamese flavours in mind.

1 3/4 cups pc pho broth
1 cup long-grain white rice, rinsed
2 tablespoons vegetable oil
1 carrot, finely chopped
1/2 onion, finely chopped
2 garlic cloves, minced
1/2 cup frozen pc baby peas
1 large egg, lightly beaten
2 green onions, thinly sliced
2 tablespoons pc naturally brewed soy sauce

Steps:

  • 1. Bring broth and rice to a boil in large saucepan. Reduce heat to low; cover and simmer until broth is absorbed, about 20 minutes. Remove from heat; let stand 10 minutes. Fluff with fork. Spread evenly on large baking sheet; cover loosely with plastic wrap. Refrigerate until rice is chilled and dry to the touch, about 1½ hours.
  • 2. Heat oil in large nonstick skillet or wok over medium heat. Add carrot, onion and garlic; cook, stirring often, until softened, 2 to 3 minutes. Increase heat to medium-high. Add frozen peas and rice; cook, stirring often, until heated through, 3 to 4 minutes.
  • 3. Push rice mixture to edge of skillet to make well in centre. Add egg to well; cook, without stirring, 1 minute. Break up egg into small pieces with spoon; stir into rice mixture and cook, stirring often, 2 to 3 minutes.
  • 4. Stir in green onions and soy sauce.
