PHILLY CHEESESTEAK PHYLLO BITES
Cheesesteak-stuffed mushrooms deconstructed and piled high in mini phyllo shells for the perfect game-day snack. These won't make it to half-time. I guarantee it.

- Preheat the oven to 350 degrees F (175 degrees C). Place phyllo shells on a baking sheet.
- Melt butter in a large skillet over medium-high heat. Add mushrooms, onion, and bell pepper. Cook until onion is translucent and mushrooms have softened, about 5 minutes. Add steak, Worcestershire sauce, and soy sauce; cook for 5 minutes.
- Meanwhile, mix cream cheese and parsley together in a large bowl. Add cooked steak and vegetable mixture and stir to combine. Spoon mixture into the phyllo shells and sprinkle mozzarella cheese over top.
- Bake in the preheated oven until cheese is brown, about 5 minutes.

Here's a deliciously downsized version of the ever-popular Philly cheesesteak. For perfect bite-size snacks, the sandwich ingredients are layered on waffle-cut fries instead of buns.

- Bake 18 large waffle fries according to package directions (save remaining fries for another use). Meanwhile, in a large skillet, saute onion and peppers in 1 tablespoon oil until tender. Sprinkle with 1/8 teaspoon salt. Remove and keep warm., In the same pan, saute steak in remaining oil in batches for 45-60 seconds or until desired doneness. Sprinkle with pepper and remaining salt. On each waffle fry, layer the beef, onion mixture, ketchup and cheese sauce. Serve warm.

PHILLY CHEESESTEAK BAGEL BITES RECIPE

- Preheat oven to 400. Cut steak into small chunks. Heat oil in skillet over high heat, add steak and sear on high heat for 1-2 minutes then remove from pan. In the same pan, in the steak juices, add pepper and onion and cook for 3-4 minutes, then add mushrooms. Add steak back to skillet and season with salt and pepper. After all is mixed, remove skillet from heat and set aside. Place bagel slices on a baking sheet, then put about 2T of meat mixture on each bagel slice, top with a slice of cheese. Bake for 12-15 minutes at 400 until cheese is melted and bagel is crispy on the bottom. Serve immediately.

- Preheat the oven to 400ºF. Put two mini muffin pans into the hot oven for a few minutes until hot.
- While the mini muffin pan is preheating, prepare the Philly cheesesteak mixture.
- In a medium size skillet over medium-high heat, brown the meat. Once brown, add the onion, peppers and Worcestershire sauce and cook for 1-2 minutes. Remove from the heat and cool.
- In a medium size bowl, mix the biscuit mix, milk, cooled meat mixture and 1 1/2 cups of the cheese. Season with salt and pepper.
- Pull the hot pan out of the oven and spray the muffin cups with the cooking spray. Use a small scoop to evenly scoop heaping scoopfuls of the biscuit mixture into all of the mini muffin cups. Top each scoop of mixture with a little sprinkle of the remaining cheese.
- Bake for 15 minutes, or until golden on top.
