1 tablespoon olive oil
1 pound jumbo shrimp (peeled and deveined)
salt and pepper
3-4 garlic cloves (minced)
1 cup mushrooms (sliced)
1/2 cup cherry tomatoes (sliced in half)
1/3 cup pesto
1 cup heavy creamy (or half and half )
1/4 cup Grated Parmesan Cheese (optional)
8 oz pasta (cooked to al dente and drained)

Steps:

  • Heat olive oil in a large skillet. Add the shrimp and cook for 1 minute. Add the garlic, mushrooms, and tomatoes. Stir to combine and cook for 1-2 minutes or until shrimp are almost pink.
  • Add pesto, heavy creamy and grated parmesan cheese. Simmer for 3-4 minutes or until the sauce has slightly thickened. Add the cooked pasta and stir until the pasta is coated if desired.

12 ounces long pasta noodles, like spaghetti, bucatini or linguine
1 pound large shrimp, deveined (tail on or off)
2 tablespoons olive oil
1/2 teaspoon each smoked paprika, garlic powder, onion powder and kosher salt
1/2 to 2/3 cup basil pesto*
1/2 cup pasta water, plus more as needed
Kosher salt

Steps:

  • If frozen, thaw the shrimp.
  • Start a pot of well salted water to a boil. Boil the pasta until it is just al dente. Start tasting a few minutes before the package recommends: you want it to be tender but still a little firm on the inside; usually around 7 to 8 minutes. Just before draining, reserve 1 cup pasta water! Then drain the pasta.
  • Pat the shrimp dry. In a medium bowl, mix the shrimp with spices. In a large skillet, heat the olive oil on medium high heat. Cook the shrimp for 1 to 2 minutes per side until opaque and cooked through, turning them with tongs. Remove from the heat and set aside.
  • Place the pasta in a bowl (not the pasta pot). Stir together the pasta, pesto, and 1/2 cup pasta water, tossing with tongs until the pesto is well distributed and the pasta water forms a creamy sauce. Add more pasta water if desired. Stir in 1/4 teaspoon kosher salt and taste. If the flavor doesn't pop, add a few more pinches until it does. Top with the cooked shrimp and serve immediately. (Store any leftovers refrigerated: note that pesto can get gummy when reheated, so it's best to eat leftovers cold or room temp.)

1/4 teaspoon kosher salt
2 tablespoons olive oil
1/4 cup basil pesto (homemade or purchased)
Lemon, optional

Steps:

  • If necessary, thaw the shrimp.
  • Pat the shrimp dry.
  • In a large skillet, heat the olive oil on medium high heat. Add the shrimp and salt. Cook the shrimp for 1 to 2 minutes per side until almost opaque, turning them with tongs.

2 cups fresh basil leaves
4 cloves garlic
1/2 cup olive oil
4 tablespoons toasted pine nuts (pignoli), divided
1/2 teaspoon salt
1/4 cup grated Pecorino Romano
1/4 cup grated Parmesan
2 tablespoons softened butter
1 1/2 pound jumbo shrimp

Steps:

  • Put basil, garlic, olive oil, pine nuts, and salt in a blender. Puree until smooth. Transfer to a bowl and chill. Slowly blend in the cheeses by hand or with a spoon. When everything is well blended, add the softened butter.
  • Steam the shrimp for about 5 minutes. Transfer the shrimp to an ice bath or refrigerate until chilled. Arrange shrimp on a platter and spoon pesto on top of each piece.

I put at least 8 shrimp (the 26-30 count size) in each packet. Just remember that you need to be able to fold down the edges. I usually omit the salt.

1/3 cup low sodium chicken broth, HOT
1/2 cup couscous, uncooked
1 teaspoon lemon zest (optional)
1/2 cup red bell pepper, chopped
1/2 cup onion, slivered
4 teaspoons olive oil
1/4 teaspoon salt (to taste)
1/4 teaspoon fresh ground black pepper
8 ounces large shrimp, shelled and deveined
8 teaspoons sun-dried tomato pesto or 8 teaspoons basil pesto

Steps:

  • Preheat oven to 425 degrees.
  • Put couscous into medium sized bowl, pour broth over, cover and let stand for 5 minutes.
  • Fold two 15 inch square pieces of parchment paper in half; cut into heart shapes.
  • Add bell pepper, onion, oil, salt, and black pepper to couscous mixture; mix well.
  • Unfold the parchment paper and place couscous mixture on one side of each sheet next to the fold.
  • Arrange shrimp in a single layer over couscous mixture; top with pesto.
  • Fold and tightly seal the edges with narrow folds.
  • Place packets on a baking sheet with edges (just in case something leaks) and bake 14 minutes.
  • Remove packets from oven and transfer to individual serving plates.
  • Cut open packets and serve.

1 pound linguine pasta
½ cup butter
2 cups heavy cream
½ teaspoon ground black pepper
1 cup grated Parmesan cheese
⅓ cup pesto
1 pound large shrimp, peeled and deveined

Steps:

  • Bring a large pot of lightly salted water to a boil. Add linguine pasta, and cook for 8 to 10 minutes, or until al dente; drain.
  • In a large skillet, melt the butter over medium heat. Stir in cream, and season with pepper. Cook 6 to 8 minutes, stirring constantly.
  • Stir Parmesan cheese into cream sauce, stirring until thoroughly mixed. Blend in the pesto, and cook for 3 to 5 minutes, until thickened.
  • Stir in the shrimp, and cook until they turn pink, about 5 minutes. Serve over the hot linguine.
