PERUVIAN POTATOES WITH AVOCADO DIP
Warm spicy potatoe wedges dipped in an avocado dip, yum! Found this in the Something Extra put out by Riley's it sounded like a party appetizer we would enjoy.

Steps:
- Preheat oven to 400°F
- Stir together oil and dry seasonings in a large bowl. Add potatoes and stir well to coat with mixture. Place on a large baking sheet and cook for 40 to 50 minutes (golden brown and tender when poked with fork), stirring occasionally.
- Stir together all the dip ingredients in medium bowl.
- Serve warm potatoes and avocado dip together.

This is an Aaron Sanchez/Food Network recipe. Purple potatoes are so beautiful, but if you can't find them -- you can substitute another small potato.

- Preheat oven to 400 degrees F. Halve the potatoes and place them in a bowl. Cover them with water if you cut them ahead of time.
- In another bowl, mix olive oil, garlic, oregano, salt and pepper. Mix well. Drain potatoes well and add them to the oil mixture. Toss with olive oil mixture. Spread the potatoes on a sheet pan. Roast for 30 minutes until potatoes are tender. Sprinkle with cilantro and serve.

Official Contest Entry: Simply Potatoes 5Fix. This is a popular potato side dish in Peru that is pleasantly slightly spicy. I substituted Aji Amarillo paste with with pureed sliced nachos jalapeno peppers, but if you can find this paste in the Spanish sections of regular grocery stores, it will taste much better. Adjust amount to your liking.

Steps:
- Cook potatoes according to directions on package.
- Meanwhile in a saucepan heat milk and pureed jalapeno or Aji Amarillo paste, stir until smooth. Stir in cheese and walnuts and cook over low heat until cheese has melted.
- Adjust seasoning to taste. If not spicy enough, add more amarillo paste. If sauce is too thick, add some water.
- Place potatoes on a large serving platter. Pour hot sauce over potatoes.
