ITALIAN CHEESE-STUFFED MEATLOAF



Italian Cheese-Stuffed Meatloaf image

Cut slices of this juicy meatloaf, intensely flavored with herbs and prepared roasted peppers, to reveal a luscious center of melted cheeses.

2 eggs
1 1/2 lb lean (at least 80%) ground beef
2 cups soft French bread crumbs
1/2 cup shredded Parmesan cheese (2 oz)
1/4 cup chopped fresh basil or 1 1/2 teaspoons dried basil leaves
1/2 teaspoon salt
1/4 teaspoon pepper
4 cloves garlic, minced
1 can (8 oz) pizza sauce
1 1/2 cups shredded provolone cheese (6 oz)
1 jar (7.25 oz) roasted red bell peppers, drained, chopped
1/4 cup chopped ripe olives

Steps:

  • Heat oven to 375°F. Line 15x10x1-inch pan with foil; spray foil with cooking spray. In large bowl, beat eggs. Stir in ground beef, bread crumbs, Parmesan cheese, basil, salt, pepper, garlic and 1/2 cup of the pizza sauce until well combined.
  • On large sheet of foil, shape beef mixture into 12x10-inch rectangle. Top evenly with provolone cheese, roasted peppers and olives to within 1/2 inch of edges. Starting with one 10-inch side, roll up; press seam to seal. Place seam side down in pan.
  • Bake 40 minutes. Remove from oven; spoon remaining pizza sauce over loaf. Insert meat thermometer so bulb reaches center of loaf.
  • Return to oven; bake 15 to 20 minutes longer or until loaf is thoroughly cooked in center and thermometer reads 160°F. Let stand 10 minutes before slicing.

2 eggs
1 jar (14 ounces) pizza sauce, divided
1 cup shredded mozzarella cheese
1 cup Italian-seasoned bread crumbs
1/4 teaspoon garlic salt
1/8 teaspoon pepper
2 pounds ground beef
1/2 pound bulk Italian sausage

Steps:

  • In a large bowl, beat eggs. Add 3/4 cup of pizza sauce, cheese, bread crumbs, garlic salt and pepper; mix well. Combine beef and sausage; add to egg mixture and mix well. Press into a 9x5-in. loaf pan. Bake at 350° for 1-1/4 hours. Drain. Spoon remaining pizza sauce over meat loaf; bake 15 minutes longer or until no pink remains. Let stand 10 minutes before slicing.

1 can (13.8 oz) refrigerated Pillsbury™ Classic Crust Pizza Crust
1 oz fresh mozzarella cheese, well drained
1 roma (plum) tomatoes, thinly sliced
1/4 cup fresh basil leaves, sliced
1 yellow bell pepper, seeded and sliced
1/4 cup sliced fresh mushrooms
1 slice Prosciutto
1 egg
2 tablespoons chopped parsley
2 tablespoons tomato sauce
2 tablespoons provolone cheese
4 ounces grated parmesan cheese
2 tablespoons olive oil

Steps:

  • Preheat a gas grill to medium, or light a charcoal grill and allow it to come to the white ash stage.
  • Open the pizza dough package. Unroll and divide into 4 equal parts. Using your hands shape each into a 6 to 8-inch circle and set on a grill safe baking sheet or pizza pan.
  • For the margarita pizza, arrange 1 oz of mozzarella cheese, 2 slices of tomatoes and half of the basil on one crust.
  • For the veggie pizza, arrange the yellow pepper slices, mushrooms, on a second crust.
  • For the breakfast pizza, arrange the prosciutto, on a third crust. Crack the egg in the middle of the crust and sprinkle with chopped parsley.
  • For the favorite cheese pizza, cover the fourth crust with tomato sauce and sprinkle it with the provolone.
  • Sprinkle the parmesan cheese evenly over all four personal pizzas then drizzle olive oil over them all.
  • Place the baking sheet on the grill, close the lid, and bake for about 10 to 15 minutes, or until the dough is nicely browned and the toppings are melted. Serve right away.

1 can (15 oz) Muir Glen™ organic pizza sauce
1/4 cup fat-free (skim) milk
3/4 cup coarsely chopped turkey pepperoni
1/4 cup fat-free egg product
1 teaspoon dried oregano leaves
1/4 teaspoon salt
1 1/2 lb extra-lean (at least 93%) ground beef
1/2 cup shredded reduced-fat mozzarella cheese (2 oz)

Steps:

  • Heat oven to 450°F. Place cereal in resealable food-storage plastic bag; seal bag and finely crush with rolling pin or meat mallet (or finely crush in food processor).
  • In small bowl, reserve 3/4 cup of the pizza sauce. In large bowl, stir together crushed cereal, remaining pizza sauce and milk (mixture will be thick). Let stand 5 minutes.
  • Add 1/2 cup of the chopped pepperoni, the egg product, oregano and salt to cereal mixture; stir until well blended. Add ground beef; stir until well mixed.
  • Spray 15x10-inch pan (with sides) with cooking spray. Place meat mixture in pan; pat into 12x4-inch rectangle. Cut lengthwise down center and then crosswise into quarters to form 8 loaves. Separate loaves, using spatula, so no edges are touching. Spoon reserved pizza sauce on top of each loaf; spread evenly to cover top.
  • Bake 20 to 24 minutes or until loaves are no longer pink in center and meat thermometer inserted in center of loaves reads 160°F. Meanwhile, in small bowl, mix remaining 1/4 cup chopped pepperoni with the cheese. Sprinkle evenly over top of each loaf. Bake 3 to 5 minutes longer or until cheese is melted.

I'm not crazy about meatloaf, but my husband is. I do however want to eat it when I do make it, so I found this recipe from What's Cooking magazine, tweaked it a bit to suit my taste and they're not half bad.

1 lb lean ground beef
1 (120 g) box Stove Top stuffing mix
2 teaspoons Italian herb seasoning
1/2-1 cup pizza sauce
1 cup Italian cheese blend

Steps:

  • Heat oven to 375.
  • Place beef in bowl along with stuffing mix and seasoning.
  • Mix well.
  • Spray an 8 sectioned muffin tin with non stick spray.
  • Divide the meat mixture into 8 pieces and press the meat into each section.
  • Make an indentation in each and spoon the sauce into each one.
  • Bake 30 minutes or until done.
  • Divide the cheese evenly over the top of each muffin and return to the oven to melt.
  • Remove and let stand a few minutes so they are easier to take out.

¾ cup milk
1 cup shredded Cheddar cheese
½ cup quick cooking oats
1 teaspoon salt
1 pound ground beef
⅔ cup ketchup
¼ cup packed brown sugar
1 ½ teaspoons prepared mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the egg, milk, cheese, oats and salt. Add the ground beef, mixing well, and form this mixture into eight miniature meatloaves. Place these in a lightly greased 9x13 inch baking dish.
  • In a separate small bowl, combine the ketchup, brown sugar and mustard. Stir thoroughly and spread over each meatloaf.
  • Bake, uncovered, at 350 degrees F (175 degrees C) for 45 minutes.
