CREAMED SPINACH CASSEROLE

3 tablespoons unsalted butter
2 cloves garlic, minced
1 small onion, finely chopped
1 1/4 cups heavy cream
1/4 teaspoon freshly grated nutmeg
1/8 teaspoon cayenne
Two 10-ounce packages frozen chopped spinach, thawed and squeezed dry
Kosher salt and freshly ground black pepper
1/2 cup grated Parmesan
2 ounces cream cheese
2 tablespoons panko breadcrumbs

Steps:

  • Preheat the oven to 400 degrees F.
  • Melt the butter in a medium saucepan over medium heat. Add the garlic and onion and cook, stirring occasionally, until softened, about 6 minutes. Add the heavy cream, nutmeg and cayenne and bring to a simmer. Simmer, stirring occasionally, until slightly thickened, about 5 minutes. Mix in the spinach, 1/2 teaspoon salt and 1/4 cup of the Parmesan. Add the cream cheese and stir until melted. Season with salt and pepper to taste.
  • Transfer the mixture to a 1 1/2- to 2-quart baking dish and sprinkle with the panko and remaining 1/4 cup Parmesan. Bake until bubbling and light golden on top, about 15 minutes.

Mom found this recipe years and years ago. It is now a staple at every family gathering. Quick and easy, almost foolproof and once tried, spinach haters will rave.

3 (10 ounce) packages frozen chopped spinach
1 cup sour cream
1 package onion soup mix

Steps:

  • Cook spinach or just thaw it- I usually microwave for several minutes.
  • Drain very well.
  • Add sour cream and onion soup mix. Mix thoroughly.
  • Place in casserole dish.
  • Bake uncovered for 30 minutes at 350 degrees.

Got this from our CSA farm: Springdale Farms. It's from the Asparagus to Zucchini Cookbook. Made this with swiss chard instead of spinach (tastes the same) and doubled the rice, baking in a 2.5 liter Corning Ware dish. I adjusted the recipe a bit.

3 eggs
1 1/2 teaspoons lemon juice
1 cup cooked brown rice
1 1/2 teaspoons dried parsley
2 tablespoons grated parmesan cheese (optional)
1 1/2 tablespoons instant minced onion or 1 small onion, chopped and sauted
salt and pepper
6 -8 cups fresh spinach, chopped and steamed (one large bunch)
1 cup cottage cheese
1 cup grated cheddar cheese
4 eggs
salt and pepper
1 pinch cayenne pepper

Steps:

  • Preheat oven to 350°.
  • Mix the first 7 ingredients together.
  • Separately mix the Spinach Mixture ingredients.
  • Spread the ingredients from the first mixture in the bottom of a greased casserole.
  • Spread the spinach mixture over them and bake at 350 degrees until firm, 45-60 minutes.

This is a luscious variation of a standard creamed spinach. It is full-flavored and mouthwatering. A more classic version would be to leave out the mushrooms.

3 lbs fresh spinach, washed, cooked, drained, and chopped
3 cups chicken stock
6 slices bacon, crumbled
4 tablespoons butter
1/2 cup onion, finely minced
1/2 cup celery, finely minced
2 garlic cloves, minced
8 ounces mushrooms, sliced
1 tablespoon lemon juice
1/2 cup sour cream
1 ounce Pernod
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon Tabasco sauce
1/2 teaspoon sugar
seasoned dry bread crumb
2 hard-boiled eggs, sliced
paprika

Steps:

  • Cook spinach in chicken stock. Drain well and chop.
  • In a heavy skillet, cook bacon, drain fat and set aside.
  • In same skillet, melt butter and sauté onions, celery, garlic and mushrooms until soft and tender.
  • Add spinach, after pressing out as much liquid as possible; stir in crumbled bacon, lemon juice, sour cream, Pernod, salt, pepper, Tabasco, sugar and blend well.
  • Place in a casserole dish, top with breadcrumbs and sliced boiled eggs. Dust with paprika, pass under broiler until browned.
