These pumpkin cheesecake bars are delicious and perfect for the fall holidays. They taste best when chilled in the refrigerator overnight!

Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- Stir flour, butter, and 1/4 cup sugar together in a bowl until dough is well-blended. Pat dough into the bottom of a 9x13-inch baking dish.
- Bake in the preheated oven until crust is lightly golden, 10 to 15 minutes. Cool. Reduce oven temperature to 350 degrees F (175 degrees C).
- Beat cream cheese, 1/4 cup sugar, 1 egg, and vanilla together in a bowl with an electric mixer until smooth.
- Whisk pumpkin puree, evaporated milk, 3/4 cup sugar, 2 eggs, cinnamon, salt, ginger, and cloves together in a bowl.
- Spread cream cheese mixture evenly over cooled crust. Pour pumpkin mixture over cream cheese mixture.
- Bake in the preheated oven until bars are set, about 60 minutes. Cool to room temperature, then refrigerate overnight.

- Preheat oven to 350°F.
- Mix cake mix, oil, 1 egg, nuts.
- Press into a greased 13x9" pan.
- Stir together pumpkin, condensed milk, almond extract, salt, remaining eggs, and reserved 1/2 cup cake mix.
- Pour over crust.
- Bake for 40-50 minutes.

Steps:
- 1. Mix flour, baking soda, baking powder, salt and cinnamon and set aside.
- 2. Beat sugar, pumpkin, oil, and eggs until well incorporated.
- 3. Gradually add dry ingredients into pumpkin mixture until fully incorporated.
- 4. Pour mixture into an ungreased 15x10x1 pan and bake at 350 degrees for 25-30 minutes. Let cool completely before frosting.
- 5. For the cream cheese frosting: Beat together butter, cream cheese, vanilla until incorporated. Gradually add powdered sugar, and taste as you go. I like my frosting a little less sweet so I end up using less than the full amount of powdered sugar. Once frosted, I garnish with cinnamon on top. Enjoy! (I died the frosting orange in the picture for Halloween and topped with fresh ground cinnamon)

I have made Christmas boxes of goodies & candies for about 30 years & this is one of my favorites to put in it.

Steps:
- 1. Heat oven to 350°.
- 2. Grease 15x10x1" baking pan.
- 3. In large bowl, combine all bar ingredients; beat at low speed until moistened. Beat 2 minutes at medium speed.
- 4. Pour into greased pan.
- 5. Bake at 350° for 25-30 minutesor until toothpick inserted in center comes out clean.
- 6. Cool completely.
- 7. In small bowl, combine all frosting ingredients; beat until smooth. Frost cooled bars. Cut into bars. Store in fridge.
- 8. Sprinkle the top lightly with some nutmeg , cloves & cinnamon mixed, for color. It won't take much, so don't over-do it.
- 9. Note: Sometimes I make these thicker like a cake, as above. May need 2 batches to accomplish this.
