For the donuts
Cooking spray
1/2 c. milk
1/4 c. plus 1 tsp. granulated sugar, divided
1 (0.25-oz.) packet or 2 1/4 tsp. active-dry yeast
2 c. all-purpose flour
1/2 tsp. kosher salt
4 tbsp. butter, melted
1 large egg
1 tsp. pure vanilla extract
For the vanilla glaze
1 c. powdered sugar
2 oz. milk
1/2 tsp. pure vanilla extract
For the chocolate glaze
3/4 c. powdered sugar
1/4 c. unsweetened cocoa powder
3 tbsp. milk
For the cinnamon sugar
1/2 c. granulated sugar
2 tbsp. ground cinnamon
2 tbsp. melted butter

Steps:

  • Grease a large bowl with cooking spray. In a small, microwave-safe bowl or glass measuring cup, add milk. Microwave until lukewarm, 40 seconds. Add a teaspoon of sugar and stir to dissolve, then sprinkle over yeast and let sit until frothy, about 8 minutes.
  • In a medium bowl, whisk together flour and salt. In a large bowl, whisk together remaining ¼ cup sugar, butter, egg, and vanilla. Pour in yeast mixture, mix to combine, then add in dry ingredients, stirring with a wooden spoon until a shaggy dough forms.
  • Transfer to a lightly floured surface and knead until elastic and only slightly tacky, adding more flour a teaspoon at a time if needed, about 5 minutes. Form into a ball then place dough in oiled bowl and cover with a clean dish towel. Let dough rise in a warm spot until doubled in size, about 1 hour.
  • Line a large baking sheet with parchment paper and lightly grease with cooking spray. Punch down dough, then turn onto a lightly floured work surface and roll out into a ½" thick rectangle.
  • Using a doughnut cutter or 3" and 1" biscuit cutters, punch out your doughnuts. Knead any scraps together and punch out more doughnuts or holes. Place doughnuts and holes onto baking sheets, cover with dish towel, and let rise again, 40 minutes to 1 hour more.
  • Grease basket of air fryer with cooking spray and add 2 doughnuts and 2 doughnut holes at a time, making sure doughnuts don't touch. Cook at 375° for 6 minutes, until deeply golden. Place on cooling rack and repeat with remaining dough.
  • Dip doughnuts in glaze (see below) or follow instructions for cinnamon sugar. Return to cooling rack and let set for 5 minutes before serving.
  • In a medium bowl whisk together powdered sugar, milk, and vanilla until smooth.
  • In a medium bowl whisk together powdered sugar, cocoa powder, and milk.
  • In a large shallow bowl, whisk together cinnamon and sugar. Brush doughnuts with melted butter and toss in cinnamon sugar.

Air Fryer Donuts made from scratch with yeast dough taste like the real deal. Better than baked and less fat than deep-fried!

1 cup milk (lukewarm (about 100°F)°)
2 1/2 tsp active dry yeast (or instant yeast)
1/4 cup granulated sugar (plus 1 tsp)
1/2 tsp salt
1 egg
1/4 cup unsalted butter (melted)
3 cups all-purpose flour
Oil Spray (Coconut oil works best)
6 Tbsp unsalted butter
2 cups powdered sugar
2 tsp vanilla extract
4 Tbsp hot water (or as needed)

Steps:

  • In the bowl of a stand mixer fitted with the dough hook, gently stir together lukewarm milk, 1 tsp of sugar, and yeast. Let it sit for 10 minutes until foamy (If nothing happens your milk was too hot or the yeast is too old, so start over).
  • Add sugar, salt, egg, melted butter and 2 cups of flour to the milk mixture. Mix on low speed until combined, then with the mixer running add the remaining cup of flour slowly, until the dough no longer sticks to the bowl. Increase speed to medium-low and knead for 5 minutes, until the dough is elastic and smooth.
  • Place the dough into a greased bowl and cover it with plastic wrap. Let rise in a warm place until doubled. Dough is ready if you make a dent with your finger and the indention remains.
  • Turn the dough out onto a floured surface, punch it down and gently roll out to about 1/2 inch thickness. Cut out 10-12 donuts using a 3-inch round cutter and a 1-inch round cutter to remove center.
  • Transfer donuts and donut holes to lightly floured parchment paper and cover loosely with greased plastic wrap. Let donuts rise until doubled in volume, about 30 minutes. Preheat Air Fryer to 350F.
  • Spray Air Fryer basket with oil spray, carefully transfer donuts to Air Fryer basket in a single layer. Spray donuts with oil spray and cook at 350F until golden brown, about 4 minutes. Repeat with remaining donuts and holes.
  • While the donuts are in the Air Fryer, melt butter in a small saucepan over medium heat. Stir in powdered sugar and vanilla extract until smooth. Remove from heat and stir in hot water one tablespoon at a time until the icing is somewhat thin, but not watery. Set aside.
  • Dip hot donuts and donut holes in the glaze using to forks to submerge them. Place on a wire rack set over a rimmed baking sheet to allow excess glaze to drip off. Let sit until glaze hardens, about 10 minutes.

1 tube (16.3 ounces) large refrigerated buttermilk biscuits (8 count)
3/4 cup sugar
2 teaspoons ground cinnamon

  • Preheat air fryer to 375°. Separate biscuits. Cut out centers using a 1-inch cutter; save centers. In batches, place doughnuts in a single layer in greased air fryer. Cook until golden brown and puffed, turning once, about 5 minutes. In batches, cook doughnut holes until golden brown, 3-4 minutes., Meanwhile, in a shallow dish, combine sugar and cinnamon. 125ml milk, lukewarm
50g unsalted butter, melted and cooled to lukewarm
7g sachet dried fast-action yeast
60g caster sugar
1 tsp vanilla extract
275g plain flour, plus extra for dusting
½ tsp ground cinnamon (optional)
1 egg, beaten
125g icing sugar
3 tbsp milk
¼ tsp vanilla extract
flavourless oil, for proving

Steps:

  • Combine the milk, melted butter, yeast, 1 tsp of the sugar and the vanilla extract in the bowl of a stand mixer. Leave for 8-10 mins for the yeast to activate.
  • In a separate bowl, combine the remaining sugar, flour, ½ tsp salt and the cinnamon, if using. Mix the beaten egg into the milk mixture, then fold in the dry ingredients. Knead with a dough hook on a medium speed for 5-8 mins until the dough is smooth and elastic. You can also knead by hand for 10-12 mins, until smooth. It's a very sticky dough, so be patient with it.
  • Transfer to a lightly oiled bowl, cover with a clean tea towel and leave in a warm place for 1 hr 30 mins until the dough has doubled in size. Tip the dough out onto a lightly floured surface and roll out to around 1.5cm thick. Cut out your doughnuts using a doughnut cutter or two cutters (1 x 7.5cm and 1 x 2.5cm for the middle). Put the doughnuts on a lined baking sheet, along with the doughnut centres, if you like, and cover with a clean tea towel. Leave to rise for 40 mins or overnight in the fridge (the doughnuts will hold their shape better if proved in the fridge).
  • When ready to cook, place 2-3 doughnuts (and their centres, if keeping) in the air-fryer basket and cook at 180C for 5-6 mins, following manufacturer's instructions, until golden. (Bear in mind that some air fryers generate more intense heat, so keep checking to make sure the doughnuts don't burn.) Remove from the basket and leave to cool on a wire rack while you cook the remaining doughnuts. You can place a sheet of baking parchment at the bottom of your basket if you're worried about the doughnuts sticking and to prevent indents from the basket forming on the doughnuts.
  • While the final batch is cooking, sift the icing sugar into a bowl and stir in the milk and vanilla extract. When the doughnuts have cooled, dip the top of each one in the glaze. Leave on the wire rack for the glaze to set. Best eaten on the day but will keep for up to 24 hours in an airtight container.
