1 ½ cups white sugar
½ cup vegetable oil
2 eggs
1 ¾ cups sifted all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
⅓ cup water
1 cup cooked and mashed sweet potatoes
½ cup chopped pecans

Steps:

  • Combine sugar and oil; beat well. Add eggs and beat. Combine flour, baking soda, salt, cinnamon and nutmeg. Stir flour mixture into egg mixture alternately with water. Stir in sweet potatoes and chopped nuts.
  • Pour batter into greased 9x5 inch loaf pan (or 2 small loaf pans). Bake at 350 degrees F (175 degrees C) for about one hour.

Sweet Potato Bread with Caramel and Aleppo-Spiced Pecans image

Number Of Ingredients 17

1 pound sweet potatoes (about 1 large potato)
1/4 cup whole milk
2 large eggs
3/4 cup vegetable oil, such as canola
1 tablespoon vanilla extract
1 1/2 cups dark-brown sugar
1 3/4 cups cake flour
1/2 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
Butter, for greasing loaf pan
3 tablespoons store-bought caramel sauce or dulce de leche
1/4 teaspoon flaked sea salt, such as Maldon, for sprinkling
1 1/2 teaspoons Aleppo pepper flakes
1/4 cup chopped toasted pecans
Special equipment:
9" x 5" loaf pan

Steps:

  • Preheat oven to 400°F minutes. Butter a 9-by-5-inch loaf pan. Pierce sweet potato several times with a fork and place on a rimmed baking sheet lined with foil. Bake until soft and cooked through, 50 to 60 minutes. Scoop out flesh into a blender or food processor; discard skin. Add milk and purée until smooth. Scrape the potato mixture into a medium bowl and return 1 1/3 cups of the mixture to the blender. Add eggs, oil, vanilla, and dark brown sugar and purée until smooth. Scrape into a large bowl.
  • Lower the oven to 325°F. In a medium bowl, whisk the flour, salt, baking powder, and baking soda. Whisk the dry ingredients into the wet ingredients in three batches to avoid overworking the flour. Make sure batter is fully mixed.
  • Pour batter into prepared loaf pan and place on a rimmed baking sheet. Bake in oven, rotating once, until a toothpick inserted into center comes out clean, 60 to 75 minutes. Let cool in pan on a wire rack for 2 hours.
  • Run the dull side of a bread knife along the inner edges of the loaf pan. Unmold the bread and drizzle with caramel. Sprinkle with sea salt, Aleppo pepper, and pecans before serving.

1 cup all-purpose flour
1-1/2 teaspoons baking powder
1/4 teaspoon each ground cinnamon, nutmeg and allspice
1/8 teaspoon salt
1 large egg, room temperature
1/3 cup mashed sweet potato
1/3 cup honey
3 tablespoons canola oil
2 tablespoons molasses
1/3 cup chopped walnuts

Steps:

  • In a small bowl, combine the flour, baking powder, spices and salt. In another small bowl, whisk the egg, sweet potato, honey, oil and molasses. Stir into dry ingredients just until moistened. Fold in walnuts., Transfer to 2 greased 5-3/4x3x2-in. loaf pans. Bake at 325° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

A lot of sweet potato bread recipies on Zaar seem to have a lot of butter and sugar in, but this version is the type you'd make a cheese sandwich with!

350 g sweet potatoes
500 g strong plain white flour
2 teaspoons salt
1 (1/4 ounce) sachet easy-blend dried yeast
1 1/2 teaspoons caraway seeds
fresh ground black pepper
175 ml warm water

Steps:

  • Peel and dice the potatoes, then boil them for about 15 minutes or until tender. Drain, and then mash thoroughly. Leave to cool.
  • Sift the flour and salt into a bowl, then add the yeast, caraway seeds and black pepper.
  • Add the sweet potato and rub it in well.
  • Add enough water to make a soft dough, and knead until smooth and elastic.
  • Leave the dough in a warm place until doubled in size (1-2 hours).
  • Knock back the dough on a floured surface and knead again briefly. Place in a greased loaf tin and leave to rise again for another 30 minutes.
  • Preheat the oven to 200C/400F/ gas mark 6 and bake the loaf for 30-35 minutes until the bread is risen, golden brown and sounds hollow when tapped underneath.

LEMON-PEPPER SWEET POTATO CRISP

This is my new favorite sweet potato side dish. It's got incredible texture and amazing flavor with an irresistible bread crumb topping. You can serve it hot, but I think it might be better warm or at room temperature, which makes it a nice choice for Thanksgiving when it's hard to have everything ready at the same time. Great for a special holiday dinner or a random weeknight supper.

4 cups fresh bread crumbs
4 tablespoons butter, melted
salt to taste
1 pinch cayenne pepper, or more to taste
½ cup finely grated Parmigiano-Reggiano cheese
1 ¼ cups grated sharp white Cheddar cheese, divided
1 teaspoon chopped fresh chives, or to taste
2 ¾ pounds sweet potatoes, peeled and cut into 1 1/2-inch chunks
1 medium lemon, zested and juiced
1 teaspoon kosher salt, or to taste
1 teaspoon freshly ground black pepper
1 pinch cayenne pepper, or more to taste
4 tablespoons butter, melted

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with a silicone liner (such as Silpat®).
  • Place bread crumbs in a mixing bowl and pour melted butter over top. Add salt, cayenne, and Parmigiano-Reggiano cheese and mix until evenly coated. Transfer to the prepared baking sheet and arrange in an even layer. Sprinkle 1 cup Cheddar cheese over top.
  • Bake in the preheated oven until golden brown, 20 to 25 minutes. Remove from the oven and let cool. Leave the oven on.
  • Place sweet potatoes in a mixing bowl. Add lemon zest and juice, salt, pepper, cayenne, and melted butter; toss until evenly coated. Immediately transfer sweet potatoes into a buttered baking dish.
  • Bake in the center of the oven until potatoes are very tender, about 1 hour.
  • Break up the crispy, cheesy bread crumbs into very small pieces and scatter evenly over the potatoes. Gently press them into the potatoes and sprinkle remaining ¼ cup Cheddar over top.
  • Return to the oven and bake until browned, 15 to 20 more minutes.
  • Sprinkle with chives before serving.

Great bread idea! This sweet potato bread is baked using two types of Gold Medal® flour in less than an hour.

1 1/2 cups uncooked shredded sweet potato (about 1/2 potato)
1/2 cup sugar
1/3 cup vegetable oil
2 eggs
1 cup Gold Medal™ all-purpose flour
1/2 cup Gold Medal™ whole wheat flour
2 teaspoons instant minced onion
1 teaspoon dried rosemary leaves, crumbled
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1 tablespoon sesame seed

Steps:

  • Heat oven to 350°. Grease bottom only of round pan, 9x1 1/2 inches, with shortening.
  • Mix sweet potato, sugar, oil and eggs in large bowl. Stir in remaining ingredients except sesame seed. Spread in pan. Sprinkle sesame seed over batter.
  • Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Serve warm.
