2 1/2 cups flour (I'm using bread flour but you could use all-purpose)
1 tablespoon kosher salt
1 teaspoon instant yeast (see Cook's Note)
1/4 cup olive oil, plus more for the baking sheet
1 pound sliced lunch meat (I'm using pepperoni)
1 pound cheese (I'm taking mozzarella)
2 ounces Parmesan, grated

Steps:

  • For the dough: Combine the flour, salt and yeast in the bowl of a stand mixer fitted with a dough hook attachment. Stir to combine, then add 1 cup water. Mix on low speed until the dough comes together into a rough ball. Continue mixing at medium-low speed until the dough forms a smooth, silky ball, about 10 minutes. Form the dough into a tight ball, set in the bottom of the mixer bowl, cover tightly with plastic wrap and set aside in a warm place until the dough has roughly doubled in size, about an hour.
  • For the pepperoni roll: Preheat the oven to 375 degrees F. Lightly oil a rimmed baking sheet.
  • Roll the dough out into a rectangle 1/4 inch thick. If the dough isn't stretching well, cover and let rest at room temperature for 30 minutes, then stretch again.
  • Leaving a 1/2-inch border, cover the dough with the sliced pepperoni. Cover the pepperoni with the mozzarella. Fold over the outside edges of the dough and roll up lengthwise like a jelly roll.
  • Transfer the roll to the baking sheet, seam-side down. Make 6 shallow cuts on an angle on the top of the roll. Brush with the oil and sprinkle with the Parmesan. Bake until golden, 25 to 30 minutes.

Steps:

  • Unroll crescent dough; separate into 8 triangles. Place 8 pepperoni pieces on each. Place a piece of cheese on the short side of each triangle; sprinkle with 1/2 teaspoon Italian seasoning. Roll up each, starting with the short side; pinch seams to seal. Sprinkle with garlic salt and remaining Italian seasoning. , Place 2 in. apart on a greased baking sheet. Bake at 375° for 10-12 minutes or until golden brown. Serve warm.

1/2 pound bulk Italian sausage
1/2 pound sliced baby portobello mushrooms

1-1/2 teaspoons fennel seed, crushed
1/2 teaspoon dried tarragon
1-1/8 teaspoons salt, divided
1/8 teaspoon crushed red pepper flakes, optional
1 package (3-1/2 ounces) sliced pepperoni
2-1/2 cups shredded part-skim mozzarella cheese
2-1/2 cups part-skim ricotta cheese
2 cups grated Parmesan cheese, divided
2 large eggs, lightly beaten
6 tablespoons minced fresh parsley, divided
3 tablespoons minced fresh basil or 1 tablespoon dried basil
1/2 teaspoon pepper

  • Cook noodles according to package directions. , Meanwhile, in a Dutch oven, cook the sausage, mushrooms and onion over medium heat until meat is no longer pink; drain and transfer to a large bowl. Stir in the pasta sauce, brown sugar, fennel seed, tarragon, 1/8 teaspoon salt and pepper flakes if desired., In the same pan, cook pepperoni for 4-5 minutes or until lightly browned; remove to paper towels to drain., In another large bowl, combine the mozzarella, ricotta, 1 cup Parmesan, eggs, 4 tablespoons parsley, basil, pepper and remaining salt. , Drain noodles. Spread 1 cup meat sauce in a greased 13x9-in. baking dish. Spread 1/4 cup cheese mixture over each noodle; top with 3 or 4 pepperoni slices. Carefully roll up; place seam side down in prepared dish. One 9-ounce sheet frozen puff pastry, thawed
2 cups shredded part-skim mozzarella (8 ounces)
4 ounces thinly sliced salami, cut into bite-size pieces
2 ounces sliced pepperoni
1/4 cup grated Parmesan, plus more for sprinkling
5 tablespoons plain dry breadcrumbs
2 large eggs, beaten in separate small bowls
2 tablespoons drained banana peppers, coarsely chopped
1/2 teaspoon dried oregano, plus more for sprinkling
Kosher salt
Pinch of crushed red pepper flakes, plus more for sprinkling
All-purpose flour, for the work surface
1 cup prepared pizza sauce, for dipping

Steps:

  • Position an oven rack in the bottom position of the oven, put a baking stone or a baking sheet on it and preheat the oven to 375 degrees F. Line another baking sheet with parchment.
  • Toss and squeeze together the mozzarella, salami, pepperoni, Parmesan, 4 tablespoons of the breadcrumbs, 1 of the eggs, banana peppers, oregano, 1/4 teaspoon salt and red pepper flakes in a medium bowl; set aside.
  • Dust a work surface with flour, and unfold the puff pastry sheet onto it. Roll it out into a 9-by-15-inch rectangle. Transfer the pastry to the prepared baking sheet.
  • Sprinkle the remaining 1 tablespoon breadcrumbs lengthwise down the center of the pastry. Pile and pack the cheese mixture into a log on top of the breadcrumbs, leaving a 1-inch border on the 2 short ends and about a 3-inch border on the 2 long sides. Fold the 1-inch borders to overlap the filling. Use kitchen shears to snip inch-wide strips of dough along both long sides that stop 1/2 inch from the filling, like a kind of fringe.
  • Brush the pastry all over with some of the remaining beaten egg. Starting at 1 short end, alternate folding the strips, on a slight diagonal, over the filling to make a design that looks vaguely like a braid. The filling should be mostly covered, but some will peek out from the spaces between the strips. Holding both ends of the roll, bend it into a U shape. Brush the top and sides with more egg. Sprinkle oregano, red pepper flakes and Parmesan all over the top.
  • Put the baking sheet with the pizza roll on top of the preheated baking sheet, and bake until golden brown, 40 to 45 minutes.
  • Meanwhile, heat the pizza sauce. Use a serrated knife to slice the roll into pieces. Serve the pizza sauce on the side for dunking.

4 cheese sticks, halved
1 pkg (3-5 oz) sliced pepperoni
marinara or ranch dressing (for dipping but optional)

Steps:

  • 1. Preheat oven to 350 degrees. Take each triangle of crencent roll dough and place about 6 pepperoni on the bottom of the triangle. Place half of a cheese stick on top and roll up. Place seam side down on a cookie sheet and bake for 10-14 minutes or until golden brown. While rolls are cooking, combine the melted butter, Italian seasonings, garlic powder and Parmesan cheese in a small bowl. When rolls are done remove from the oven and brush with the garlic butter glaze. Serve with marinara or ranch for dipping.

12 lasagna noodles
70 pepperoni rounds
1/2 c shredded parmesan cheese
1 lb ground beef
4 clove garlic minced
salt and pepper
1/4 c dry red wine
24 oz spaghetti sauce
2 c shredded mozzarella cheese
fresh basil

Steps:

  • 1. Cook the lasagna noodles in salted boiling water for 10 minutes. Drain and lay out on parchment paper. Place 5 pepperoni pieces on each noodle. Sprinkle with shredded Parmesan cheese.
  • 2. Place the ground beef in a large skillet. Add the minced garlic and season with salt and pepper. Cook until beef is almost done. Add the wine and let most evaporate.
  • 3. Stir in the spaghetti sauce. Spoon some sauce in bottom of a 9x15 pan. With a slotted spoon, spoon meat sauce on each lasagna noodle.
  • 4. Roll up each lasagna noodle and place in pan. Pour the remaining spaghetti sauce over top. Place in a preheated 375 degree oven. Bake 15 minutes.
  • 5. Add the shredded Mozzarella and bake another 10 minutes. Garnish with the fresh basil

This is now a game day favorite at my household. It is also an easy dinner recipe for a busy mom who needs all the time she can get!!

1 pkg pillsbury pizza dough
1 pkg hormel sliced pepperoni (any brand will do)
2 c shredded mozzarella
garlic powder (with or w/o parsley)
garlic salt
your favorite margarine or butter(softened)
1 egg, whipped

Steps:

  • 1. Preheat oven to 425 degrees. Butter a cookie sheet. An 18 X 13 should do. Roll out Pillsbury Pizza dough. Roll it out to fit the size of the pan. lightly drizzle garlic powder over the area. (use lightly as to not over power with garlicky flavor)Grab a hand full of pepperoni and start to lay them out. I like to lay rows and columns from top to bottom to fill area of pizza dough. (This package of Pepperoni is enough for 2 rolls) Next sprinkle mozzarella over the entire area but leave a handful of shredded cheese for topping.
  • 2. Now the fun part...Take about an inch from the length and fold over. I usually go left to right. At this point begin creating your roll by rolling dough all the way to the end. Turn the roll now to fit lengthwise. Option: brush whipped egg over roll. This will add a crisp and pretty shinyness to your roll. Sprinkle with Garlic Salt now and add the leftover mozzarella to sprinkle over the top.
  • 3. Bake at 425 degree for about 17 min's or until golden/brown. Let it cool for about 5 min's and with a nice sharp knife start slicing at the end of the roll and make your way down. You can serve with a side salad and ranch or marinara sauce to dip your slices into. Yum!!!

1 pkg pepperoni
1 can(s) pizza sauce
1 pkg mozzarella cheese
1 lb italian sausage (optional)
1 lb hamburger (optional)

Steps:

  • 1. Roll out pizza crust on a greased cookie sheet
  • 2. spread pizza sauce on crust, leaving about 1 inch around the edge
  • 3. Layer pepperoni on sauce, I sometimes will also use hamburger and/or italian sausage on top the pepperoni. The nice thing is you can add whatever topping you like, its very versatile.
  • 4. Spread mozzarella cheese over the meat
  • 5. Begin rolling, roll up (like a cinnamon roll) and seal the edges. I usually tuck the ends under to keep the sauce from oozing out. I spinkle garlic salt on the crust before I bake it.
  • 6. Bake at 400 degrees for 20 min, then let rest for about 5 min. Slice in 1 inch slices and have pizza sauce for dipping.

DOUGH
2 c all-purpose flour
1 tsp baking powder
1 tsp salt
1 Tbsp garlic powder
1/4 c vegetable oil
2/3 c milk
FILLING
pepperoni
shredded mozzarella cheese
TOPPING
Parmesan cheese
olive oil

Steps:

  • 1. Preheat oven to 400 degrees. On a cookie sheet spray non-stick oil/butter.
  • 2. MIx all ingredients for the dough together until you get a nice firm ball.
  • 3. Roll out with a rolling pin. (I did not have to flour the surface or pin because of the oil in the dough).
  • 4. Put desired amount of cheese and pepperoni on top of dough.
  • 5. Roll up the dough.
  • 6. Pinch the ends.
  • 7. Brush with olive oil then top with Parmesan cheese.
  • 8. Bake for 45 minutes. Let cool then slice. *Optional: Serve with a side of marinara.

1 c basil pesto
1 pkg 8 count flour tortillas (8 to 10 inch)
1 pkg (3.5oz) sliced pepperoni
3 roma tomatoes seeded and chopped
1 yellow or onange bell pepper
1 small can chopped black olives(drained)
1 c shredded mozzarella cheese

Steps:

  • 1. Spread 2 tablespoons pesto evenly over each tortillas.Arrange some pepperoni slices over pesto on each tortillas.Sprinkle tomato,pepper,olives,and cheese.Evenly over the pepperoni to within a 1/2 inch of the tortillas.
  • 2. Roll up tortilla tightly.Then cut into slices .

If you like pepperoni pizza, you'll like this recipe. My mom made this often when I was growing up. Filling can be adjusted to suite your tastes. Cooking time includes rising time.

1 loaf frozen bread dough, thawed
1/4 lb pepperoni, thinly sliced
1 -2 cup shredded mozzarella cheese
1 1/2 cups pizza sauce

Steps:

  • Roll out dough to 8 x 15 inch rectangle.
  • Spread thin layer of pizza sauce (may not use all) over dough to within 1 inch of edges.
  • Top sauce with cheese and pepperoni.
  • Starting from long edge, roll up dough.
  • Pinch all seams and ends to seal.
  • Place on greased cookie sheet.
  • Cover with waxed paper.
  • Let rise 15 minutes.
  • Bake@400 degrees Farenheit for 18-22 minutes or until golden brown.
