A cheesy casserole with all of your favorite pizza toppings. I like to serve this with a salad and garlic bread. The leftovers are great. I have prepared this in advance and then taken it to potlucks in a slow cooker the next day.

1 pound ground beef
1 (8 ounce) package uncooked egg noodles
1 (16 ounce) jar spaghetti sauce, or as needed
1 (2.25 ounce) can sliced black olives, drained
1 (2.5 ounce) can sliced mushrooms, drained
1 (8 ounce) package sliced pepperoni, coarsely chopped
20 ounces shredded mozzarella cheese, divided

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Cook the ground beef in a skillet over medium heat until no longer pink, breaking the meat apart into crumbles as it cooks, about 10 minutes.
  • Bring a large pot of lightly salted water to a rolling boil. Cook the egg noodles in the boiling water until cooked through yet slightly firm, about 5 minutes; drain.
  • Mix the noodles with the cooked ground beef, spaghetti sauce, black olives, mushrooms, pepperoni, and 1/2 of the mozzarella cheese in a large mixing bowl. Spoon the mixture into a 9x13-inch baking dish and top with remaining cheese. Cover the dish with foil.
  • Bake in the preheated oven until the casserole is bubbling, 30 to 45 minutes.

1 package (16 ounces) egg noodles
2 pounds ground turkey
1/3 cup chopped onion
1 jar (24 ounces) meatless spaghetti sauce
1 can (10 ounces) diced tomatoes and green chilies
1 can (8 ounces) mushroom stems and pieces, drained
2 cups shredded part-skim mozzarella cheese
2 cups shredded cheddar cheese
1 cup shredded Parmesan cheese
3 ounces sliced turkey pepperoni

Steps:

  • In a Dutch oven, cook noodles according to package directions; drain., Meanwhile, in a large skillet, cook turkey and onion over medium heat until meat is no longer pink; drain. Stir in the spaghetti sauce and tomatoes. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Stir in noodles. , Transfer to two greased 13x9-in. baking dishes. 1 (16 1/3 ounce) package grands homestyle refrigerated reduced-fat buttermilk biscuits, separated and cut into fourths

Steps:

  • Preheat oven to 400 degrees and prepare baking dish (I use a 1.75qt oval baker).
  • Over medium heat, combine the ground beef, onion and garlic in a large skillet until beef is browned.
  • Add the mushrooms, olives, pepperoni and tomato sauce and heat through.
  • Pour mixture into prepared baking dish.
  • Sprinkle with mozzarella cheese.
  • Top randomly with biscuit pieces.

2 tablespoons chopped garlic
1 large onion, chopped
1 green bell pepper, chopped

seasoning salt (can use table salt)

2 cups favorite pizza sauce
1/4 lb pepperoni, chopped (can use more)
1/2-1 teaspoon Italian herb seasoning
1 cup canned mushroom, drained
1 cup milk
1 tablespoon oil
2 eggs
1 cup flour
1/4 teaspoon salt
1 pinch cayenne pepper
3 cups grated mozzarella cheese
1/2 cup grated parmesan cheese
8 slices cooked bacon, chopped

Steps:

  • Set oven to 400 degrees.
  • Grease a 13 x 9-inch baking dish.
  • In a large skillet cook ground beef with onion, garlic and green pepper until meat is no longer pink; drain fat.
  • Add in 3 tablespoons (or more) grated Parmesan cheese; stir to combine.
  • Add in pizza sauce, chopped pepperoni, herb seasoning and mushrooms; mix to combine and bring to a simmer for 15 minutes, stirring occasionally.

8 oz elbow macaroni, cooked al dente
1 lb ground beef
1 medium onion, chopped
1/2 c chopped green bell pepper
1 jar(s) (14 ounces) pizza sauce
1 can(s) (14.5 ounces) diced tomatoes, italian style, undrained
1 tsp granulated garlic
1 tsp italian seasoning
4 oz sliced pepperoni
12 oz grated mozzarella

Steps:

  • 1. Cook meat, onion and green pepper in a 4-5 quart Dutch oven over medium high heat, stirring often, until meat is crumbly and no longer pink (about 10-12 minutes).
  • 2. Add the pizza sauce, tomatoes, garlic and Italian seasoning and cooked macaroni. Mix well and cook another 4-5 minutes to heat through.
  • 3. Meanwhile, heat oven to 350 degrees F.
  • 4. Line the bottom of an 8" X 8" glass baking dish with a single layer of pepperoni slices. Spoon 1/2 of the macaroni mixture over the pepperoni. Spread evenly.

This makes a fabulous brunch! Plan ahead since this needs to be refrigerated for a minimum of 3-8 hours. Although the recipe calls for a chopped tomato, I usually use about 2 cups chunky salsa that has been drained through a small strainer for about 25 minutes instead. I like it much better than with the tomato, so that is an optional change.

1 large loaf Italian bread, cut into about 1/2-inch cubes (you might want to refrigerate before cutting, it makes slicing easier)

4 -5 ounces pepperoni, cut in half lengthwise and then thinly sliced crosswise (purchase the long thin packaged stick kind for this)
1 large tomatoes, seeds removed and diced (or use salsa, see heading above on recipe)

4 large eggs, slightly beaten
1 cup half-and-half cream

Steps:

  • Butter an 11 x 7-inch or a 12 x 7-inch baking pan.

How to make Paleo Pepperoni Pizza Casserole

1 pound grass-fed ground beef
8 ounces chopped pepperoni, divided (we like Applegate Farms w/ no nitrates and dairy free)
1 small onion, diced small
4 cloves garlic, minced
1 teaspoon sea salt(or more to taste)
1 teaspoon EACH oregano, basil, and thyme
4 cups roasted spaghetti squash noodles (approx)
2 cups favorite spaghetti sauce - we use my Homemade Blender Pasta Sauce (see recipe in JAP)
2 eggs
1/2 cup mozzarella cheese or pecorino romano, and few tablespoons extra for sprinkling, optional

Steps:

  • Preheat oven to 400 degrees.
  • In a large skillet over medium heat, saute the ground beef, ½ of the pepperoni, onion, and garlic.
  • As the ground meat cooks, sprinkle in the seasonings. Taste (when cooked!) and add more to your liking if necessary.
  • In a large bowl, mix the warm beef mixture, spaghetti sauce, squash threads, eggs, and cheese of choice.
  • Place into a greased casserole dish ( I used a 9 X 9).
  • Top with the remaining pepperoni and a sprinkling of cheese.
  • Bake for 30 minutes, or until golden and bubbly.
